This is a nice cold weather recipe. Originally found in the "More With Less" cookbook, I modified it a bit to make it a little healthier. You can add cooked potatoes if you would like a thicker soup, but we didn't feel it needed it. The original recipe called for fresh or frozen corn. I used frozen. I wouldn't attempt to use canned corn here, but my husband hates canned corn and won't eat anything that it is in. So take that on advisement!

1 -2 tablespoon olive oil
2 cups onions, sliced
2 garlic cloves, minced
4 cups corn, divided
4 cups vegetable broth or 4 cups chicken broth
1/4 teaspoon nutmeg
1/2 cup dry milk
1 1/2 cups cooked kidney beans
1/2 teaspoon salt

Steps:

  • In a large pot heat the oil.
  • Saute the onions and garlic.
  • Add 3 cups of corn, the stock, and the nutmeg.
  • Bring it to a boil and simmer until the corn is tender.
  • Meanwhile puree the additional 1 cup of corn in a blender or food processor.
  • When the corn and stock is tender add the pureed corn, the milk, the kidney beans, and the salt.
  • Bring it almost to a boil.
  • Lower the heat and let it simmer for about 5 minutes.

1 cup organic ketchup
2 tablespoons brown sugar
2 tablespoons dark amber maple syrup
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon coarse black pepper
2 cloves garlic, finely chopped
1 tablespoon EVOO
4 ounces smoky bacon, chopped, optional
5 to 6 baby Yukon gold potatoes, chopped
4 ears corn, cleaned and scraped, or 2 cups defrosted kernels
2 to 3 ribs celery, chopped
1 red onion, chopped
1 red bell pepper, seeded and chopped
1 red chile pepper, such as Fresno, sliced or chopped 4 cloves garlic, chopped
3 tablespoons fresh thyme leaves, chopped
1 round tablespoon seafood seasoning, such as Old Bay (a palmful)
1 bay leaf
One 12-ounce bottle warm lager beer
One 15-ounce can red kidney beans
Once 15-ounce can fire roasted tomatoes, stewed tomatoes or diced tomatoes with chiles
4 cups cooked chicken, chopped or shredded
4 cups chicken stock, homemade or store-bought
1 ripe avocado
1 lime, juiced
Tortilla chips

Steps:

  • For the sauce: Place the ketchup, brown sugar, syrup, vinegar, Worcestershire, pepper and garlic in a small pot. Bring to a low boil, reduce the heat to low and thicken 15 minutes. (This sauce stores well for weeks and makes a tasty sloppy Joe, burger baster and pork chop topper if you want to double the recipe. If using for a more all-purpose BBQ sauce, add 1/2 cup chicken stock and simmer for 20 minutes.) For the chowder: Heat the EVOO in a soup pot over medium-high heat and add the bacon, if using. Cook until crisp 2 to 3 minutes. Add the potatoes, corn, celery, onions, bell pepper, chile, garlic, thyme, seafood seasoning and bay leaf, and stir. Cook to soften, 8 to 10 minutes. Add the beer and cook the beer down by half, 1 to 2 minutes. Add the beans, tomatoes, shredded chicken, BBQ Sauce, stock and 2 cups of water. Simmer a few minutes to combine the flavors, cool and store for a make-ahead meal. Reheat over medium heat. When ready to serve, peel, pit and dice the avocado and dress it in the lime juice. Place diced avocado and some broken tortilla chips in each soup bowl, top with the hot chowder and serve.

CORN CHOWDER WITH RICE BEANS, CHAYOTE AND CRAB

1 cup rice beans or other very small white beans
1 onion, cut in half and stuck with 2 cloves
1 bay leaf
2 teaspoons salt
2 tablespoons olive oil
1 medium onion, diced
1/2 teaspoon freshly ground black pepper
3 garlic cloves, minced or pureed
12 jalapeno chiles, seeded and minced
2 cups corn kernels, from about 6 ears
2 quarts chicken stock, vegetable stock or water
2 chayote squash, diced
2 red bell peppers, roasted, peeled, seeded and diced
1/2 pound lump crabmeat, picked over
1/2 cup crema, creme fraiche or sour cream
Minced chives for garnish

Steps:

  • Soak rice beans in cold water 8 hours or overnight. Drain, rinse and drain again. Place soaked beans in a medium heavy pot with enough cold water to cover by an inch. Add onion and bay leaf. Bring to a simmer over medium heat, reduce heat to low, cover, and simmer very gently 30 minutes. Add 1 teaspoon salt, and cold water to just cover the beans if necessary. Cook an additional 2030 minutes until beans are creamy inside but still intact. Remove onion and bay leaf and reserve.
  • Heat olive oil in large kettle over high heat. When smoking, add onions, 1 teaspoon salt, and freshly ground pepper. Stir and cook 5 minutes until softened. Add garlic and chiles and cook one minute to release their aroma. Add corn kernels, stock or water, chayote, and rice beans with the cooking liquid. Bring to a boil, turn down heat and simmer 15 minutes. Stir in peppers, crab, and crema and warm through. Serve garnished with minced chives.

1 teaspoon corn oil
1/2 lb boneless skinless white meat chicken, cut into 1-inch pieces
1 medium onion, finely chopped
1 serrano chili, seeded and finely minced
2 cups fresh corn kernels (or frozen, defrosted corn kernels)
1 large potato, peeled and diced (such as Yellow Finn or Yukon Gold)
4 cups low-fat chicken stock, preferably homemade (Low-Fat Chicken Stock)
salt
fresh ground black pepper
2 cups fresh lima beans or 2 cups frozen lima beans, defrosted
2 tablespoons chopped fresh basil leaves

Steps:

  • Heat the oil in a 4-quart pot over med-high heat; add in chicken; cook/stir until the chicken has turned white and is just beginning to brown, about 5 minutes.
  • Remove the chicken from the pan; set aside.
  • Add the onion and chile to the pan; cook/stir until the onion begins to soften, 2-3 minutes.
  • Stir in the corn, potato, and chicken; add in the broth and bring to a boil.
  • Partially cover the pan, decrease heat to med-low and simmer until the potato is tender, about 15 minutes.
  • Season to taste w/ salt and pepper.
  • Stir the lima beans; cook until they are tender and heated through, about 5 minutes.
  • Stir in the basil and serve.

This is a wonderful, chunky, "meal in a bowl" chowder that gains rave reviews whenever i serve it. It is my own recipe, adapted from a roasted corn and sweet potato chowder recipe by Lucy Waverman. My dad, who can't STAND yams or sweet potatoes, always asks me to make my delicious "carrot" soup when he comes to visit (what he doesn't know won't hurt him!). Although this looks time consuming, if you prep and chop your ingredients before hand, you can throw this together quite quickly. Serving size is approximate - depending on if you eat this as a meal or a side dish. Enjoy!

2 cups frozen corn kernels
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red pepper, diced
2 large yams, peeled and diced
1 teaspoon chili powder
5 cups chicken stock or 5 cups vegetable stock (may need more)
1/2 teaspoon hot sauce (i use tobasco)
1 bay leaf
salt (to taste)
black pepper (to taste)
2 (19 ounce) cans kidney beans, drained and rinsed
1/2 cup sour cream
1/4 cup chopped cilantro

Steps:

  • Heat oil in a large pot over medium-high heat.
  • add onion and saute until soft and slightly browned.
  • Add garlic, red pepper, yams and chili powder.
  • Saute for 2-3 mins.
  • Add chicken stock and hot pepper sauce, bring to a boil and simmer for about 10 min.
  • Add corn, beans and bay leaf.
  • Add extra chicken stock to achieve desired cosistency.
  • Simmer for 5-10 minutes or until vegetables are fork tender (or to your liking) Remove bay leaf and season with salt and pepper.
  • Ladle soup into bowls and top with sour cream and fresh cilantro.
  • Serve with fresh, sliced, warm sourdough bread or crusty rolls.

SOUTHWESTERN BLACK BEAN AND CHICKEN CORN CHOWDER

A hearty stick-to-your-ribs soup that your family will enjoy. I like to use the meat from a grocery store rotisserie chicken to save time. If your kids don't like chunks of tomato in their soup (like mine) use a hand/stick blender to puree the diced tomatoes before adding.

2 cups chicken, cooked and diced (the meat from half of a rotisserie chicken works great)
2 teaspoons minced garlic
1/2 red bell pepper, diced
1/2 medium onion, diced
1 tablespoon butter or 1 tablespoon oil
1 (1 1/4 ounce) package taco seasoning
1 1/4 lbs potatoes, peeled and diced
2 cups frozen corn
1 (14 1/2 ounce) can diced tomatoes with onion and garlic
1 (12 ounce) can evaporated milk
1/2 cup half-and-half
1 cup shredded sharp cheddar cheese
1 (15 ounce) can black beans, rinsed and drained
3 cups low sodium chicken broth
thinly sliced green onion (to garnish)

Steps:

  • In a stockpot, saute garlic, onion and bell pepper in butter or oil until soft.
  • Add diced potatoes, chicken broth and taco seasoning.
  • Bring to boil then reduce heat to simmer until potatoes are soft.
  • Use a hand potato masher to mash the potatoes and thicken soup.
  • Add diced tomatoes (may puree first if desired) and corn.
  • Add evaporated milk, half and half, shredded cheese and beans.
  • Cook another 2-3 min, stirring until cheese is melted.
  • Serve topped with diced green onion.

CHORIZO, BLACK BEAN & CORN CHOWDER

canola oil or olive oil
1 onion, chopped
1 carrot, peeled and chopped
1 stalk celery, chopped
1 -2 link Italian sausage or 1/4 lb ground turkey
2 -3 green onions, chopped
2 -3 garlic cloves, crushed
1/2 teaspoon ground cumin
1 -2 cup corn (fresh, scraped off the cob, frozen, or canned)
1 cup black beans (cooked or 1/2 of a 19 oz can)
1 yukon gold potatoes (or a handful of baby new potatoes halved) or 1 red potatoes (or a handful of baby new potatoes halved)
4 cups chicken stock
1 cup half-and-half or 14 ounces coconut milk

Steps:

  • In a large saucepan set over medium-high heat, heat a drizzle of oil and saute the onion, carrot, and celery for about 5 minutes, until soft.
  • Add the chorizo sausage, squeezed out of it's casing, breaking it up with a spoon, until the meat is no longer pink.
  • Stir in the green onions, garlic, and cumin and cook for another minute or two.
  • Add the corn, beans, potato, and stock and bring to a simmer.
  • Reduce the heat, cover, and cook for about 20 minutes, until the potatoes are tender.
  • Simmer for a bit longer (uncovered) if you'd like to thicken up a bit, then stir in the cream or coconut milk and heat through.
  • Serve immediately.

1 small onion , finely chopped
1 small garlic clove , crushed
1 stick celery , chopped
1 small green pepper , deseeded and cubed
1 large potato , cubed
600ml semi-skimmed milk
300ml vegetable stock
300g can sweetcorn , drained and rinsed
few drops Tabasco sauce
2 tbsp chopped fresh chives , to serve
2 thick slices bread , crusts removed and cubed
2 garlic cloves , crushed
2 tbsp olive oil

Steps:

  • Heat butter in a pan, then cook onion, garlic, celery, pepper and potato for 5 mins. Stir in milk and stock, bring to the boil, then simmer for 15 mins. Stir in corn, cook for 3 mins, then add Tabasco and seasoning.
  • For the croûtons, place the bread in a bowl with the garlic, oil and some salt, toss well. Heat a non-stick pan, then gently cook cubes until golden and crisp. Serve the soup topped with the chives and croûtons.
