NEELY'S BBQ SAUCE

2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

6 tablespoons olive oil, divided
1 medium onion, sliced 1/4-inch thick
1 medium green pepper, seeded and sliced in 1/2-inch strips
2 medium garlic cloves, smashed
Salt and freshly ground black pepper
Store-bought pizza dough, divided into 4 pieces
Flour, for rolling
1/4 cup BBQ sauce (recommended: Neely's BBQ Sauce, recipe follows)
2 cups cooked pulled pork, optional
8 ounces shredded mozzarella
1/4 cup grated Parmesan
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Place a large saute pan with 2 tablespoons oil over medium heat. Add the onions, peppers, garlic, and salt and pepper, to taste. Saute until vegetables are softened, about 2 to 3 minutes.
  • Preheat grill to medium-high.
  • On a floured surface, roll each piece of dough into a 6-inch circle. Brush both sides of dough with oil and place directly onto grill. Close grill top for 1 to 2 minutes, then flip and cook the other side. Remove from the grill.
  • Brush BBQ sauce evenly over each pizza. Place sauteed vegetables and pork on top. Sprinkle with mozzarella and Parmesan cheese and place back onto the grill. Close the lid for 2 to 3 minutes or until the cheese melts.
  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

CHICKEN ALFREDO PIZZA

1 (3/4 pound) boneless skinless chicken breast
Kosher salt and freshly ground black pepper
2 tablespoons butter
1 clove garlic, minced
1 teaspoon red pepper flakes
1 tablespoon all-purpose flour, plus more for work surface
1 cup heavy cream
1/4 cup grated Parmesan
1 (16-ounce) ball pizza dough, store-bought
2 cups baby spinach, well washed and dried
1 cup grape tomatoes, red and yellow
1 cup grated mozzarella
Olive oil, for brushing crust

Steps:

  • Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.
  • Preheat a grill pan over medium heat.
  • Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.
  • Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.
  • Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.

NEELY'S BARBECUE SAUCE

2 cups ketchup
1 cup water
1/4 cup light-brown sugar
1/4 cup granulated sugar
1 1/2 teaspoons freshly ground black pepper
1 1/2 teaspoons onion powder
1 1/2 teaspoons dry mustard powder
2 tablespoons fresh lemon juice
2 tablespoons Worcestershire sauce
1/2 cup apple-cider vinegar
2 tablespoons light corn syrup
1 tablespoon Neely's Barbecue Seasoning

Steps:

  • Combine all of the ingredients in a large pot or a Dutch oven. Bring to a boil over high heat, stirring frequently to prevent sticking. Reduce the temperature to very low and simmer, uncovered, for at least 2 hours, stirring occasionally. Remove from the heat, cool, and use as needed. Stored in a tightly sealed container, this sauce will keep in the fridge for up to 2 months.
