OVEN-BAKED MAPLE BARBECUED RIBS
I love cooking and baking with maple syrup and have collected many different recipes using maple syrup over the years, if you have any maple syrup around then this is a rib recipe you should not pass up! The sauce recipe may be easily doubled. Prep time includes the first baking of the ribs.

Steps:
- Set oven to 350 degrees.
- Place ribs meat side down on a shallow baking pan.
- Bake for 40 minutes.
- Drain and cool slightly.
- Meanwhile, in a saucepan, combine remaining ingredients; cook, and stir over medium heat until mixture comes to a boil.
- Cut ribs into serving-size pieces; return to pan (meat side up).
- Pour the sauce over ribs.
- Bake uncovered for 1 hour or until the ribs are tender, basting occasionally.
- Note: If desired the sauce recipe may be doubled and also, prepared a day ahead, and refrigerated until ready to use.

MAPLE GLAZED RIBS
Steps:
- Preheat oven to 350 degrees F.
- Place ribs in a roasting pan and sprinkle with salt. Bake for approximately 25 minutes. After the ribs are golden brown, remove from the oven and baste with pure maple syrup.
- Lower the oven temperature to 250 degrees F. Tightly wrap the ribs with a foil tent, making sure not to put any holes in the foil in order to maintain moisture and flavor. Return to the oven for approximately 10 hours. When you open the foil to check the ribs (carefully avoiding the steam), you should be able to place a fork into the meat and it should immediately break off the bone. If there is any resistance or hardness, continue cooking in the oven for up to 2 hours longer.
- After cooking is complete, coat with another layer of maple syrup. If not serving immediately, wrap in plastic to keep moist until ready to use. To serve, cut each rack in half.

MAPLE APPLE RIBS
A nice change from BBQ ribs, these are sweet and succulent. You could cut the ribs up and make appetizers from this recipe, also!

Steps:
- Heat oven to 450 F degrees.
- Place ribs, meaty side down, on large shallow pan and cover tightly with foil.
- Bake for 30 minutes.
- Meanwhile, combine syrup, jelly, soy sauce, chives, and dry mustard in a small saucepan and cook over low heat about 10 minutes until hot, stirring occasionally.
- Remove sauce from heat.
- Reduce oven temp to 350 F degrees and remove ribs from oven.
- Drain liquid from ribs, turn them meaty side up, and brush syrup mixture onto them.
- Continue baking uncovered for about 30 minutes.
- Brush the ribs with more syrup mixture, and bake an additional 15 to 20 minutes until ribs are tender and glaze is set.
MAPLE GLAZED RIBS
Basted with a savory sweet sauce, these ribs are definitely finger-licking good!

- Place ribs in a large pot, and cover with water. Cover, and simmer for 1 hour, or until meat is tender. Drain, and transfer ribs to a shallow dish.
- In a small saucepan, stir together the maple syrup, brown sugar, ketchup, vinegar, Worcestershire sauce, salt, and mustard powder. Bring to a low boil, and cook for 5 minutes, stirring frequently. Cool slightly, then pour over ribs, and marinate in the refrigerator for 2 hours.
- Prepare grill for cooking with indirect heat. Remove ribs from marinade. Transfer marinade to a small saucepan, and boil for several minutes.
- Lightly oil grate. Cook for about 20 minutes, basting with the cooked marinade frequently, until nicely glazed.

MAPLE BARBECUED CARIBOU RIBS

Steps:
- In large non-metal bowl, combine all the ingredients except the ribs and pepper.
- Blend well and put in the ribs to marinade overnight.
- Preheat the oven to 325.
- Remove the ribs from the marinade, drain and pat dry with paper towels.
- Sprinkle ribs with pepper.
- Place in 5 qt.
- roasting pan in a double layer.
- Roast 1 hour.
- Pour sauce over ribs.
- Increase heat to 350 degrees and bake until ribs just begin to char on top, about 1 1/2 hours.
- Turn ribs over cover pan and bake about 30 minutes longer, until ribs are tender and sauce is thick.
- To serve, place ribs on serving platter.
- Serve the sauce in a gravy boat on the side.

MAPLE CHIPOTLE BARBECUE BRAISED RIBS
A friend made these, and I asked her for the recipe. She had found it on Pinterest. I made some adjustments when I made them. They technically are not braised since they are not seared in the beginning, I think I might try that next time, but this is written the way that she and I made them. They are definitely a labor of love. Whenever I make ribs, I am reminded why they are $15-$25 dollars a plate in the restaurant!

Steps:
- Place ribs in a single layer in a large covered roasting pan or on a cookie sheet that you have covered with aluminum foil.
- Rub all over the surface of the ribs with rub. You can do this step the day before and let the ribs marinate in the spices overnight to infuse the flavor into the meat.
- Cover the ribs with foil and bake in a 300 degree oven for 1.5 hours.
- Make the barbecue sauce: In a small sauce pan, cook the onions and garlic in the olive oil until well softened and beginning to caramelize.
- Add the other ingredients and simmer slowly for about 20-30 minutes or until reduced by .25 the initial volume, stirring often.
- When cool, puree in a blender or food processor until smooth.
- After the ribs have dry cooked for ~1.5 hours, let them cool to be able to cut the meat into individual ribs and place in a covered roasting pan.
- Combine the braise ingredients and add the braise to the pan, cover, and return to the oven for 1.5 - 2 hours or until they are very tender with the meat falling off the bones.
