Steps:
- In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings. In the drippings, saute onion and carrots until tender. , Place bay leaf and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to saucepan. Stir in the potato, water and wine. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. , Add the haddock, dill, salt and pepper. Bring to a boil. Reduce heat; cook for 5-10 minutes or until fish flakes easily with a fork., Combine flour and cold water until smooth; gradually stir into chowder. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cream; heat through (do not boil). Discard spice bag. Stir in bacon. Garnish with parsley.

Steps:
- Melt butter in a large pot over medium heat.
- Add leeks, cover and allow leeks to sweat, stirring occasionally, until softened a bit, about 3 minutes.
- Add potatoes, stirring about 1 minute.
- Add clam juice and thyme and bring to a boil.
- Cover pot, reduce heat to medium low and allow to just simmer about 6 minutes.
- Add cream, return the mixture to a simmer.
- Add fish and simmer uncovered until potatoes are tender and fish is opaque in the center, approx 5 minutes.
- Sprinkle bacon over each bowl.
- Season well to taste with salt and pepper.

- Wrap the rosemary, thyme, bay leaves, and peppercorns in the cheesecloth and secure with the kitchen string. Set aside.
- In a medium saucepan over moderate heat, melt the butter. Add the leeks and fennel and sauté, stirring occasionally, until softened, 8 to 10 minutes. Add the heavy cream and bring to a boil. Reduce heat to low, add the herb package, and simmer until the soup is reduced by about one third, 20 to 25 minutes. Add haddock, cover, and simmer an additional 5 minutes. Season to taste. Divide soup among 8 bowls, making sure to evenly distribute the fish and vegetables. Sprinkle each dish with dill and serve immediately.

- Preheat oven to 350 degrees.
- Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
- Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
- Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
- Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
- Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).
- Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.

- Melt butter in heavy large saucepan over medium heat. Add leeks. Cover and cook until leeks begin to soften, stirring occasionally, about 3 minutes. Add potatoes; stir 1 minute. Add clam juice and thyme; bring to boil. Cover pan, reduce heat to medium-low and simmer 6 minutes. Add cream; return to simmer. SILKY CELERIAC SOUP WITH SMOKED HADDOCK
A twist on celery soup. Leave out the haddock if you like (it's just flaked over the top)

Steps:
- Heat the 50g of butter in a large saucepan until foaming, then lower the heat a little. Sweat the onion and leek with the clove of garlic, a few sprigs of thyme and 2 bay leaves. Add the celeriac and the 2 potatoes and cook for 10 mins more, stirring frequently so the vegetables don't stick to the pan. Pour over the litre of stock to just about cover, bring to the boil, then simmer gently for 20 mins.
- Meanwhile, in a deep frying pan bring the 500ml of milk and remaining bay leaves to the boil. Lower to a very gentle simmer, slide in the 2 haddock fillets and cover with baking paper. Cook for 3-4 mins until the fish flakes easily. Remove the fish from the milk and flake into a bowl; cover to keep warm.
- When the celeriac is tender, pour in the 500ml of cream, bring back to the boil and remove from the heat. Remove the garlic and herb stalks, then blitz until silky smooth using a stick blender. If you want to freeze the soup, stir through the fish at this point. Serve scattered with the flaked haddock and thyme leaves.

- Blend the herbs, lemon zest, juice, garlic and cumin with 1 tsp olive oil, seasoning and water.
- Heat 1 tsp olive oil in a shallow non-stick frying pan, season the haddock and place in the pan, skin side down.
- Cook for 4 minutes over a high heat, until golden. Turn and cook same as other side.
- Remove the pan from the heat and leave the fish in pan for 5 min, until flesh is cooked through.
- Place the fish on a bed of watercress and pour the lemon sauce over.
- You can serve with couscous or rice.

- Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
- In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.
