This made for a very enjoyable lunch, and kept warm in a slow cooker, could also work very nicely for a Super Bowl party. It tastes enough like a traditional beef Sloppy Joe to provide that satisfying comfort food fix, yet seems much lighter.

2 tablespoons butter
1 onion, diced
salt and ground black pepper to taste
1 ¼ pounds ground turkey
½ cup cold water
¾ cup ketchup
1 ½ tablespoons brown sugar
½ teaspoon cayenne pepper, or to taste
½ teaspoon Worcestershire sauce
½ teaspoon unsweetened cocoa powder
1 cup water, or as needed
6 hamburger buns, split
⅓ cup chopped green onions
½ cup shredded white Cheddar cheese

Steps:

  • Melt butter in a heavy skillet over medium heat. Add onion; cook and stir until onion starts to brown, about 5 minutes. Season with salt and black.
  • Mix ground turkey and 1/2 cup cold water into onions. Cook and stir, breaking up the meat, until it begins to brown, about 2 minutes. Add ketchup, brown sugar, cayenne pepper, salt, and black pepper. Cook and stir until liquid is reduced, about 5 minutes. Stir in Worcestershire sauce and cocoa powder. Cook, stirring frequently and adding up to 1 cup water if needed, until meat is cooked through and liquid is reduced and thick, 20 to 30 minutes.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast hamburger buns until golden, 2 to 3 minutes.
  • Remove turkey mixture from the heat and mix in green onions and Cheddar cheese. Serve on toasted hamburger buns.

Number Of Ingredients 12

8 ounces portobello mushrooms, very roughly chopped
2 tablespoons olive oil
1 medium onion, chopped
1 small red bell pepper, chopped
Kosher salt and freshly ground black pepper
1 pound ground turkey (85% lean)
One 13- to 15-ounce carton crushed tomatoes
1 1/2 teaspoons chili powder
1 teaspoon coconut aminos
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
4 buns, for serving

Steps:

  • Pulse the mushrooms in a food processor until finely chopped.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the onion, bell pepper and 1/2 teaspoon each salt and pepper and cook, stirring occasionally, until slightly softened, about 4 minutes. Add the mushrooms and an additional 1/2 teaspoon salt and cook for 3 minutes. Add the ground turkey, 1 teaspoon salt and some pepper and cook, stirring and breaking up any clumps with a wooden spoon, until the mushrooms have released their liquid and the meat is browned, about 8 minutes. Add the crushed tomatoes, chili powder, coconut aminos, Worcestershire and apple cider vinegar. Bring to a simmer and cook, stirring occasionally, until slightly thickened, about 5 minutes. Serve on buns.

Note: This recipe method is written for children to follow, too. Adult helpers are referred to as GHs, or Grown Helpers.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 package, 1 1/3 pounds, ground turkey breast or lean ground turkey
1/2 red onion
1/2 red bell pepper
1 tablespoon grill seasoning blend (recommended: McCormick Montreal Grill Seasoning or Mrs. Dash seasoning for poultry)
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 cup tomato sauce,( 8- ounce) can
4 crusty sandwich rolls, split
12 celery sticks, available in produce department or Grown Helper can chop
12 carrot sticks, also available in produce department or grown helper can chop
Cheese Fries, recipe follows

Steps:

  • Have a GH (grown helper) place a big skillet over medium high heat for you. Use some kitchen scissors to cut the turkey package open. Add some extra-virgin olive oil, 2 turns of the pan in a nice, slow stream. Have the GH add the ground turkey to the pan, in case it spatters. Break the turkey up with a big wooden spoon as it starts to cook. If anyone touches the raw turkey, they should go wash their hands.
  • If you are a really good chopper, using a small, sharp knife chop up some red onion. Remember when you are chopping to keep the fingers that are not holding the knife all tucked in and curled under. Have a GH help you. You need half a red onion chopped up small. Pull the seeds and white membrane and the top out of a half red bell pepper and chop that up small too. Add the veggies to the cooking meat and stir it all together.
  • Next, mix in a small bowl: grill seasoning blend, brown sugar, Worcestershire sauce and the tomato sauce. This will make your special sauce. When all the ingredients are combined, pour the sauce evenly over the meat and stir everything together really well. Turn the heat down to simmer and cook the sloppy mixture for 10 minutes. Blow on a spoonful until cool and taste it to see if you need to adjust the seasoning.
  • Have the GH help you serve. Place a bun bottom on a plate. Use a big ice cream scoop to get a pile of sloppy meat onto the bun. Put bun top in place and serve with vegetable sticks on the side and Cheese Fries.
  • 1 sack frozen French fries, any brand or shape - crinkle cut, thin cut, steak cut, waffle fries - prepared to package directions
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 2 1/2 cups, (10-ounce) sack shredded yellow Cheddar
  • 3 squirts ketchup, about 1/4 cup
  • Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
  • Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
  • Yield: 4 to 6 servings

CINCINNATI TURKEY CHILI

Cincinnati chili was created by immigrants from Macedonia at a restaurant in Ohio. More like a Greek-spiced meat sauce than American chili, what sets this dish apart is that it is ladled over spaghetti and diners choose the various toppings. A simple 2-way is just chili and spaghetti and the full 5-way adds cheese, raw onion and beans. This take on a classic swaps turkey for beef and stops at 4-ways.

2 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
1 1/4 pounds ground turkey
1 tablespoon chili powder
1 teaspoon ground cinnamon
1 teaspoon unsweetened cocoa powder
1 tablespoon Worcestershire sauce
1 28-ounce can crushed tomatoes
8 ounces spaghetti
1 cup finely shredded sharp cheddar cheese (about 4 ounces)

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil in a large wide pot or dutch oven over medium-high heat. Reserve 1/3 cup chopped onion, then add the rest of the onion and the garlic to the pot; season with salt and pepper. Cook, stirring, until softened, 3 to 5 minutes. Add the turkey and cook, breaking it up into small pieces, until cooked through, about 3 more minutes. Add the chili powder, cinnamon, cocoa powder, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the spices are lightly toasted, about 1 minute. Stir in the Worcestershire sauce, then add the tomatoes and 1 cup water.
  • Bring the chili to a simmer. Cook, stirring occasionally and adjusting the heat as needed to maintain a steady simmer, until the sauce reduces slightly, about 20 minutes.
  • Meanwhile, salt the boiling water, add the spaghetti and cook as the label directs for al dente; drain.
  • Season the chili with salt and pepper. Divide the spaghetti among shallow bowls and top with the chili. Sprinkle with the reserved chopped onion and the cheese.

3/4 cup onion (diced)
1/2 cup celery (diced)
1/4 cup carrot (finely diced)
2 tablespoons garlic (diced)
1/2 teaspoon sage
1/2 teaspoon thyme
1/4 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon red pepper flakes
gravy mix (one packet of your favorite brown gravy)

Steps:

  • In a skillet combine 1 tsp olive oil, garlic, onion, celery, and carrot sauté till tender. Add ground turkey and brown.
  • Add spices including salt and pepper. Add one packaged turkey gravy mix of your choice - including water as directed on the package.
  • Cook for 15 more minutes. Serve over roll, rice or potatoes.

½ cup chopped onion
½ cup chopped green bell pepper

7 tablespoons barbeque sauce

  • Heat oil in large skillet over MED-HIGH heat. Add turkey, onion and bell pepper and cook, breaking apart into crumbles as it cooks, about 5 minutes, or until turkey is cooked through and vegetables are beginning to soften. Transfer to colander to drain.
  • Add chili powder, garlic powder, salt, pepper, mustard, ketchup, barbecue sauce, tomato paste, sugar, vinegar, Worcestershire sauce and water and stir well to combine.
