1 broiler/fryer chicken (about 4 pounds), cut up
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder, divided
1 teaspoon salt, divided
1 teaspoon coarsely ground pepper, divided
1 cup dry bread crumbs
3/4 cup all-purpose flour
2 large eggs, beaten
1/4 cup canola oil
1/4 cup butter

Steps:

  • Preheat oven to 350°. Sprinkle chicken with cumin, oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper. In a shallow bowl, mix bread crumbs with remaining garlic powder, salt and pepper. Place flour and eggs in separate shallow bowls. Dip chicken pieces in flour to coat all sides; shake off excess. Dip in eggs, then in crumb mixture, patting to help coating adhere., In a large skillet, heat oil over medium heat. Stir in butter. Add chicken in batches; cook until golden brown, 2-3 minutes per side. Place chicken on a rack in a shallow roasting pan. Bake, uncovered, until chicken is no longer pink, 30-35 minutes.

1 tablespoon onion powder
1/4 teaspoon ground cumin
1 tablespoon dried oregano
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon paprika
Marinade, recipe follows
4 tablespoons extra-virgin olive oil
Mojito Glaze, recipe follows
1 cup orange juice
2 limes, juiced
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 tablespoon sliced garlic
1/4 cup dark rum
1/2 cup dark rum
1/2 cup chicken broth
1 tablespoon brown sugar
3 tablespoons cold water
1 tablespoon cornstarch
1/4 cup chopped mint leaves
Salt and freshly ground black pepper

Steps:

  • Remove backbone of chicken with poultry shears; flatten chicken out by pressing firmly on skin part of chicken so it will sit evenly in a pan.
  • Preheat oven to 300 degrees F.
  • Combine all the dry spices and rub chicken with spice mixture, especially under the skin. Put into a resealable plastic bag and refrigerate for 30 minutes.
  • In a large mixing bowl combine all the ingredients for the marinade, then add chicken to marinade and refrigerate for at least 1 hour.
  • Remove chicken from marinade and shake off excess marinade. In a large saute pan over medium to high heat, add 4 tablespoons of extra- virgin olive oil. When oil is hot, place chicken skin side down and sear.
  • When skin is golden brown flip chicken and add 1/2 cup of marinade into pan; place pan in oven and cook the chicken for 25 minutes or until chicken has internal temperature of 165 degrees F. on an instant-read thermometer.
  • Remove the chicken from oven and brush with Mojito Glaze. Place chicken under broiler for 5 minutes. Remove from broiler, cut and serve immediately with more glaze on the side.
  • Combine all ingredients in mixing bowl.
  • In medium sauce pot, place rum, chicken broth and brown sugar. Reduce by 1/3 over high heat. In a small mixing bowl, whisk together water and cornstarch. When rum mixture is reduced, add cornstarch mixture slowly to simmering liquid and whisk for 3 minutes, until 50 percent thicker. Keep in mind that you might not need all of it. When glaze is at desired thickness, add mint leaves and transfer to small bowl. Season with salt and pepper, to taste.

2 tablespoons lime zest
1/4 cup lime juice
1/4 cup orange juice
2 tablespoons of fresh mint, chopped
1 tablespoon honey
2 garlic cloves, minced
2 teaspoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
6 chicken breasts, skinned and boneless
1 lime, cut in wedges
6 mint sprigs

Steps:

  • Combine lime zest, lime juice, orange juice, honey, garlic, cumin, chopped mint, olive oil, and salt in a small bowl.
  • Transfer one half of mixture into a covered container and refrigerate.
  • Transfer the remaining the remainder of the mixture into a gallon size Zip Lock bag and add the chicken.
  • Squeeze out the air from bag and seal.
  • Let chicken marinade for at least 2 hours, or over night.
  • Preheat grill.
  • Remove the chicken from the bag and discard excess marinade.
  • Place chicken on grill and cook for 20-30 minutes, turning occasionally.
  • While chicken is cooking, pour reserved marinade into a small saucepan and bring to boil.
  • Transfer cooked chicken to a platter and spoon hot marinade on top.
  • Garnish with lime wedges and a sprig of mint and serve.

MAMA'S MOJITO CHICKEN

We have come to adore this chicken. Part of a meal I created for RSC 8 recipe#161348. Here is just the chicken for those who want a simpler recipe. We use boneless skinless chicken breasts but use whatever you like. This marinade is enough for one whole chicken cut up or 8 pieces. I have included the weight just to give you an idea. Of course, it will weigh more if the pieces have bones.

3 -4 lbs chicken or 2 -3 lbs boneless skinless chicken breasts
1/2 cup rum
1/2 cup mint, chopped
1/2 cup fresh lime juice
1 tablespoon lime zest (optional)
1/4 cup sugar
1 jalapeno pepper, seeded and minced
1 teaspoon cayenne
2 garlic cloves, minced
1/2 cup onion, diced
2 tablespoons cumin (We love cumin but if you are not cumin crazy, reduce it by half)
1/2 teaspoon cinnamon

Steps:

  • Combine ALL marinade ingredients together in a blender; blend until smooth.
  • Pour into a zipper seal bag.
  • Add chicken breasts and allow to marinade in refrigerator for 2-4 hours.
  • Discard marinade after that time.
  • At this point the chicken may either be roasted in the oven at 425 F or cooked on a grill.
  • Cook just until meat is no longer pink in middle, about 20 minutes; turn once during cooking.
  • Note: Feel free to adjust seasonings to your liking. Amount of hot pepper can be increased or omitted if you prefer.

Olive oil cooking spray
2 bunches asparagus (2 pounds)
Salt and fresh ground black pepper
1/4 cup slivered almonds
2 teaspoons olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 tablespoon sugar
1 pound cut-up skinless boneless chicken breasts
1/2 cup fresh lime juice
1/2 cup rum
1 teaspoon finely grated lime zest
1/4 cup chopped fresh mint leaves
1 cup couscous, cooked according to package directions

Steps:

  • Preheat oven to 400 degrees F
  • Coat a large baking sheet with cooking spray.
  • Arrange asparagus on baking sheet and spray with cooking spray. Season with salt and black pepper. Roast 10 minutes. Top the asparagus with almonds and roast 5 more minutes, until fork-tender and almonds are golden brown. Remove from the oven and set aside.
  • Meanwhile, heat oil in a large skillet over medium heat. Add onion, garlic and sugar and cook 3 minutes, until soft stirring with wooden spoon. Add chicken and saute 3 to 5 minutes, until golden brown on all sides. Add lime juice and carefully, off the heat, add the rum. Return to the heat and add lime zest, salt, pepper and bring to a simmer. Simmer for 3 minutes, until chicken is cooked through, about 12 to 15 minutes. Serve chicken, garnished with mint, over couscous with the almond topped asparagus on the side.

DINOSAUR BBQ MOJITO CHICKEN

1 tablespoon ground black pepper
1/2 cup onion, chopped
2 teaspoons cumin
2 cups fresh orange juice

1 tablespoon fresh cilantro, chopped
1/2 cup olive oil
8 pieces chicken
1 large onion, sliced into 1/2-inch rounds
2 tablespoons fresh Italian parsley, chopped

Steps:

  • To make the marinade:.
  • Mix the garlic, onions, orange and lime juices in a bowl.
  • Heat the olive oil in a large saucepan until just smoking.
  • Cover your arms and put on potholder mitts. Slide the contents of the bowl into the hot oil - be very careful because the liquid will spatter.
  • Simmer for 5 minutes.
  • Season the marinade with the rest of the ingredients.
  • Pour everything into a blender or food processor and pulse 3 times to combine. Pour into a plastic container and cool to room temp; then cover and refrigerate. Will keep for up to 2 weeks.
  • To make the chicken:.
  • Spread the chicken out in a baking dish and pour the marinade over it. Rub some of the marinade under the skin.
  • Marinate the chicken for 4 hours or overnight in the fridge.
  • Turn the oven onto 375.
  • Scatter the onion over the bottom of a roasting pan, and put the chicken on top, skin side up.
  • Pour the remaining marinade over the chicken and roast for 1 hour and 15 minutes, til the chicken is golden and cooked through.
  • Serve the chicken with pan juices and sprinkle with parsley to garnish. If desired, squeeze lime wedges over chicken.

1 lb boneless chicken breast
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper

7 minced fresh garlic cloves
1 lb shrimp, shelled and deveined
3/4 quart heavy cream
1/2 cup butter
2 cups parmesan cheese
1/4 cup sun-dried tomato (optional)
1 lb pasta

Steps:

  • Cook the chicken breast in pan with 2 tablespoons olive oil and sprinkle paprika, salt and pepper on while browning. Set on plate to cool when pink is gone. When cool, slice thinly and set aside.
  • Start a big pot water to boil pasta and cook as directed. Set aside.
  • Saute the garlic in one teaspoon olive oil until just brown. Then add shrimp and butter and cook until shrimp starts to turn pink, just a few minutes.
  • Add heavy cream, stirring constantly, and then slowly add the cheese until it all starts to thicken. Be careful to remove pan from heat when desired consistency is reached, then add chicken and sundried tomatoes and serve over pasta.

The Chicken
1 chicken (3 1/2 pounds), cut into 8 pieces
1 cup Mojito Marinade
1 large onion, sliced into 1/2-inch rounds
2 tablespoons chopped fresh Italian parsley or cilantro
The Garnish
Lime wedges
The Accoutrement
Rice

Steps:

  • Spread the chicken out in a baking dish, and pour the Mojito Marinade over it. Get personal with the pieces and rub some of the marinade right up under the skin. Marinate the chicken for 4 hours, or overnight, in the fridge.
  • Turn the oven on to 375°. Scatter the onion slices over the bottom of a roasting pan, and put the chicken on top, skin side up. Pour the remaining marinade over the chicken and onions, and pop the pan into the oven. Roast for 1 hour and 15 minutes, til the chicken is golden and cooked through.
  • Lift the chicken pieces out of the pan and arrange them on a platter. Stir up the pan juices, adding a bit of freshMojito Marinade (if you have it) to wake up the flavors. Spoon the onions and pan juices over the chicken. Sprinkle with parsley or cilantro and garnish the dish with lime wedges. Get everybody to squeeze some lime over their portion for added flavor. Serve with rice.

MAMA'S ROAST CHICKEN



Mama's Roast Chicken image

This is the best roast chicken recipe! It's adapted from "Roasting: A Simple Art" by Barbara Kafka. The rosemary sprigs under the skin add a lot of flavor, so be sure not to skip it unless you just can't get fresh rosemary. The high heat at which you roast the chicken may cause some smoking, particularly if you skip the potatoes & onions, so be forewarned. It's crucial to the recipe, though, so don't reduce the temperature. Open doors and windows if you need to; it also helps to clean your oven first if it's got splatters or drips in it. The only time I've had it smoke is when I've skipped the vegetables, though. Use a large roasting pan--if you have a really big one, you can do two chickens at once for a dinner party. Just place them side by side in the pan, on top of the veggies, and increase cooking time if needed. It's not really as fussy as it looks--and it's so delicious! And after all, aren't you and your family worth it? ;)

1 (4 -5 lb) roasting chickens, at room temperature
1 lemon
3 -4 garlic cloves
salt and pepper
8 -9 sprigs fresh rosemary
4 large potatoes, peeled if desired
1 large onion, peeled and ends cut off

Steps:

  • Remove all but one oven rack, and move remaining oven rack to the lowest level in the oven. Heat oven to 500°F.
  • Rinse and dry chicken, removing giblets and plucking any feather sheaths left in the skin. Place in a large roasting pan (do not use glass or ceramic unless oven safe to 500° F).
  • Quarter lemon lengthwise and place wedges into chicken cavity. Add garlic cloves and sprinkle a little salt and pepper on the inside.
  • Loosen skin over breasts and near cavity opening to thighs. Tuck 1-2 sprigs rosemary on each side of the cavity and 1 sprig over each breast.
  • Place remaining rosemary in cavity. Do not truss or tie legs.
  • Place chicken into oven, legs towards the back of the oven. Roast 10 minutes.
  • Meanwhile, cut potatoes into quarters lengthwise, then halve crosswise. Cut onion into 4-6 wedges.
  • Remove chicken from oven and wiggle around to prevent sticking. Add potatoes and onions. Toss around in any fat in the pan and sprinkle with salt and pepper to taste. Return to oven, legs to the back, and roast another 15 minutes.
  • Remove and stir around, wiggling chicken and tossing potatoes and onions in any fat that accumulates. Return to oven, legs to back, for another 15 minutes.
  • Repeat 1-2 more times, until chicken reaches 190° F internal temperature on a meat thermometer stuck into the thigh.
  • Remove chicken from pan and place on a platter. Remove lemon, garlic and rosemary from cavity and allow chicken to rest 10-15 minutes.
  • Meanwhile, toss potatoes and onions around in juices in pan and return to oven. Turn oven off and allow the potatoes and onions to sit in warm oven while chicken rests.
  • Carve chicken, removing rosemary sprigs from under the skin, and serve with potatoes and onions.
