225g softened salted butter, plus extra for the tins
125g golden caster sugar
100g light brown soft sugar
1 tsp vanilla extract
4 large eggs
225g self raising flour
2 tbsp milk
toffee, chocolate or caramel pieces, to decorate
200g softened salted butter
400g icing sugar (golden icing sugar if you can find it - it adds a golden colour and caramel flavour)
70g caramel sauce, dulce de leche or caramel spread, plus 3 tbsp to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter two 20cm springform tins and line the bases with baking parchment.
  • Beat the butter and both sugars in a bowl with an electric whisk for a few mins until lighter in colour and fluffy. Add the vanilla and the eggs, one at a time, adding a spoonful of flour and beating in between each egg. Add the remaining flour and milk. Divide between the cake tins and bake for 25-30 mins until they're golden, spring back when pressed, and a skewer comes out clean when inserted into the middle. Cool in the tins for a few mins, then tip out and leave to cool completely on a wire rack.
  • Meanwhile, for the icing, put the butter and icing sugar in a bowl and whisk for a few mins until light and airy. Whisk in the caramel briefly, adding 1 tbsp of boiling water to loosen, if needed. Set aside until the sponges are completely cool before assembling, or the icing will melt.
  • Use half the icing to sandwich the cakes together, then spread the remainder over the top, smoothing it out with a knife or the back of a spoon. Leave in a cool place until ready to serve. Drizzle with the 3 tbsp extra sauce (warm briefly in the microwave if it's a little stiff), allowing some to drip down the sides if you like, and scatter over the toffee, chocolate or caramel pieces to serve. Edible glitter, birthday candles or sparklers, optional.

This is a very moist cake. I have been requested to bring this to every pot luck we have at work. The cake is also very good without frosting, or sprinkled with powdered sugar.

1 cup margarine
2 cups sugar
2 large eggs
4 large very ripe bananas, mashed
1 cup milk
3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup margarine
1 cup brown sugar, well packed
1/4 cup hot milk
3 1/4 cups powdered sugar

Steps:

  • Cream margarine, sugar and eggs until fluffy.
  • Stir in mashed bananas and milk.
  • Combine flour, soda and salt.
  • Add dry ingredients to banana mixture and blend thoroughly.
  • Pour batter into greased and lightly floured 9X13 pan.
  • Bake at 350 degrees for 45 min or until done.
  • Cool and top with Penuche Caramel Frosting.
  • Penuche Caramel Frosting:.
  • Boil butter, brown sugar and milk over medium heat for 2 minutes.
  • Cool.
  • Beat in powdered sugar until you obtain the desired consistency.
  • Pour over cake and spread.

100g softened butter , plus extra for greasing
8 tbsp maple syrup
3 small ripe bananas and 1 very overripe banana
200g dark brown soft sugar
4 large eggs
2 tsp vanilla paste or extract
200g self-raising flour
100g pecan , broken into pieces
1 tsp bicarbonate of soda
1 tsp ground cinnamon
200g pot full-fat Greek yogurt , plus extra, or vanilla ice cream, to serve
100g whole pecan
100g salted butter , diced
100ml double cream
100ml maple syrup

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease a 20cm square cake tin and line the base with baking parchment. For the cake, pour in half the syrup, swirling to coat the bottom. Peel and halve the 3 ripe bananas lengthways and lay, cut-side down, in the tin.
  • Beat together the butter, sugar, eggs, vanilla and overripe banana with an electric whisk. Tip the flour and pecans into a food processor and pulse until finely ground together. Stir into the butter mixture with the bicarbonate of soda and cinnamon, then stir in the yogurt. Carefully spoon into the tin without dislodging the bananas. Bake the cake for 45 mins-1 hr until a skewer inserted into the centre comes out with only moist crumbs.
  • Meanwhile, make the sauce. Toast the pecans for 1-2 mins in a pan, add the remaining ingredients and cook until the butter has melted. Then bubble for 5 mins until it has thickened a little.
  • When the cake is cooked, poke it all over with the skewer - inserting it about halfway into the cake each time. Pour over the remaining maple syrup and allow it to soak in for a few mins, then turn the cake out of the tin, upside-down, onto a serving plate. Reheat the sauce, and serve with Greek yogurt or vanilla ice cream.

7 ounces granulated sugar
4 ounces light brown sugar
5 ounces unsalted butter
4 large eggs
1 ounce canola oil
1/2 cup buttermilk
1 1/2 teaspoons vanilla extract
11 ounces all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
3/4 teaspoon table salt
3/4 cup mashed, overripe bananas
3/4 cup pasteurized liquid egg whites
2 pounds confectioners' sugar
2 pounds unsalted butter, softened
1/2 cup Salted Caramel Sauce, recipe follows, or bottled prepared caramel sauce, salted to taste
1 tablespoon vanilla extract
1/2 teaspoon table salt
Toasted pecans, chopped, for sprinkling
Salted Caramel Sauce, recipe follows, or bottled prepared caramel sauce, salted to taste, for drizzling
1 cup granulated sugar
2 tablespoons corn syrup
2/3 cup heavy cream
3 tablespoons unsalted butter
2 teaspoons sea salt
1/2 teaspoon lemon juic

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Prepare three 8-inch cake pans with baking spray and parchment liners.
  • Using a stand mixer with a paddle attachment, cream together the granulated sugar, light brown sugar and butter on medium-high speed until light and fluffy. Slowly add the eggs, one at a time, mixing each fully before adding the next.
  • With the mixer on low, slowly trickle the oil into the mixture. Once added, increase the speed to medium-high and continue to mix until the mixture thickens and begins to look like mayonnaise. Using a silicone spatula, scrape down your bowl, making sure to get anything at the bottom of the bowl that has not been mixed well.
  • In a small bowl, combine the buttermilk and vanilla extract. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon and salt. Add a third of the flour mixture to the butter mixture and beat on medium high speed for 90 seconds. Bring the speed down to low and, alternately, add the buttermilk mixture and remaining flour mixture in 4 stages, beginning with the buttermilk mixture and ending with the flour mixture. Fold in the mashed bananas. Mix only enough to incorporate the ingredients after each addition.
  • Pour the batter into the prepared pans, filling two-thirds full. Bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes. The top of the cake should spring back slightly after a gentle tap with your finger. Allow to cool for 10 to 15 minutes before removing from the pans. Allow the cakes to cool completely before frosting.
  • For the salted caramel Swiss meringue buttercream: Using a stand mixer with a paddle attachment, beat the egg whites and confectioners' sugar on medium-high until the mixture thickens to fluffy white, 3 to 4 minutes. Reduce speed to medium and gradually add the softened butter. Increase the speed to medium-high and continue mixing for 5 to 7 minutes. Reduce the speed and add the prepared caramel sauce, vanilla and salt. Mix until combined.
  • To assemble the cake: Frost the top of 1 cake round with some salted caramel Swiss meringue buttercream. Drizzle with some prepared caramel sauce and sprinkle with some pecans. Add a second round and repeat with the buttercream, caramel sauce and pecans. Top with the remaining cake round and frost the entire cake with the buttercream.
  • Combine the sugar, corn syrup and 1/4 cup water in a saucepan, making sure the sugar is completely wet, but being careful not to let the sugar water coat the sides of the pan. Turn the heat to medium-high and cook for about 4 minutes. The cooking process is done when the sugar has reached a nice amber color. Do not stir during the cooking process. Quickly remove the sugar from the heat and add the heavy cream. The mixture will bubble. Stir to combine. Whisk in the butter, sea salt and lemon juice. Allow to cool completely before use.

150g light muscovado sugar
½ tsp vanilla bean paste
4 large bananas
240g plain flour
2 ½ tsp baking powder
1 tsp cinnamon
½ tsp ground ginger
300g golden caster sugar
120g unsalted butter , very soft
3 large eggs
150ml soured cream

Steps:

  • Heat oven to 180C/160C fan/gas 4 and lightly grease a deep 23cm round cake tin, lining the base with baking parchment.
  • To make the topping, put the butter and sugar in a small saucepan and cook over a medium heat until melted and combined. Add the vanilla and mix together. Pour the caramel into the cake tin and spread in an even layer. Cut the bananas in half lengthways and arrange on top of the caramel, cut-side down.
  • To make the batter, put all the ingredients in a large bowl with 1/4 tsp salt. Use an electric mixer to beat together on a low speed until the batter is smooth and evenly mixed. Pour the batter on top of the bananas and level out with a spatula. Bake in the oven for 55 mins-1 hr or until a skewer inserted in the middle comes out clean. If the cake begins to look too dark, cover with foil after 45 mins. Allow to cool in the tin for 10 mins before turning out onto a plate. Best served warm but also delicious at room temperature. Best eaten within 2 days.

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Sift flour, baking powder, and sea salt into medium bowl. Beat butter and 1 cup sugar in large bowl until well blended. Add 2 eggs; beat until blended. Add dry ingredients to butter mixture in 4 additions alternately with buttermilk in 3 additions. Beat remaining 4 eggs and remaining 1 1/2 cups sugar in medium bowl until mixture is thick and pale in color, about 4 minutes. Fold egg mixture into batter. Fold in bananas. Divide batter between prepared pans (about 3 1/2 cups for each).
  • Bake cakes until tester inserted into center comes out clean, about 35 minutes. Transfer to rack; cool 15 minutes. Invert cakes onto racks; cool completely. (Can be made 1 day ahead. Wrap in foil; store at room temperature.)
  • For banana-caramel cream:
  • Combine brown sugar, banana, and 3 tablespoons butter in processor; blend until smooth. Add 1 1/2 cups whipping cream; blend. Transfer to heavy medium saucepan. Whisk over medium heat until sugar dissolves and mixture boils. Attach candy thermometer to inside of pan; cook without stirring or swirling pan until temperature registers 218°F, about 10 minutes. Pour caramel into bowl. Cool to room temperature, whisking occasionally.
  • Whisk remaining 2 1/4 cups whipping cream in large bowl until cream mounds softly. Gradually fold in cool caramel mixture. Chill until cream is firm enough to spread, about 3 hours.
  • Cut each cake horizontally into 2 layers. Place 1 layer, cut side up, on platter. Drizzle 1 1/2 teaspoons lime juice and 1 1/2 teaspoons rum over. Spread 1 1/4 cups banana cream over. Top with second cake layer. Drizzle 1 1/2 teaspoons lime juice and 1 1/2 teaspoons rum over. Spread 1 1/2 cups cream over. Repeat with third cake layer, lime juice, rum, and cream. Top with fourth cake layer, cut side down; spread remaining cream over top.
  • Scatter roasted pecans over top of cake. (Can be made 1 day ahead. Cover with cake dome and refrigerate.)

1 tablespoon ground cinnamon
½ cup chopped pecans
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

2 eggs
1 tablespoon pure vanilla extract
½ cup sour cream
6 tablespoons butter
¾ cup packed dark brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Combine 1/4 cup sugar and cinnamon in a small bowl and mix in pecans. Sift flour, baking powder, baking soda, and salt together in another bowl.
  • Beat 1 cup sugar and shortening together with an electric mixer in a large bowl until light and fluffy. Beat in banana, eggs, and vanilla extract. Add sour cream and mix until just blended. Add flour mixture and beat until blended.
  • Sprinkle 2 tablespoons of sugar-nut mixture into the prepared cake pan. Top with 1/2 of the cake batter. Follow with remaining nut mixture and cake batter.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Cool for 5 minutes in the pan and then turn the cake out onto a wire rack to finish cooling.
  • Melt butter in a saucepan over low heat. Add brown sugar and milk. Bring to a boil; continue to boil for 1 to 2 minutes. Remove from heat and add vanilla extract; mix in powdered sugar gradually. Top the cooled cake with the frosting.

We have adapted this Caramel Banana Cake Roll recipe from Lady Behind the Curtain. This dessert has a moist banana-flavored cake filled with sweet, satiny cream cheese and topped with a luscious caramel topping that will make your tastebuds happy.

3/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
3 eggs
1/2 cup granulated sugar
1 1/2 tsp vanilla extract
1/2 cup mashed bananas (1 medium-sized banana)
1/2 cup powdered sugar (divided, for dusting)
4 oz cream cheese (softened)
1/3 cup light brown sugar (packed)
1 tsp vanilla extract
3/4 cup whipped topping
1 tbsp powdered sugar
3 tbsp caramel sundae topping

Steps:

  • Preheat the oven to 375°F.
  • Line a 15x10x1 jelly roll pan with parchment paper and spray with nonstick spray. Set it aside.
  • In a medium-sized mixing bowl whisk together the flour, baking soda, salt, and baking powder. Set it aside.
  • Using either a stand mixer or a medium-sized mixing bowl and a handheld mixer on high speed, beat the eggs, granulated sugar, and vanilla for 4 to 5 minutes until a frothy pale yellow.
  • Add in the mashed bananas and continue to mix on medium until well incorporated.
  • Fold in the flour mixture.
  • Using either a silicone spatula or an offset spatula to spread the cake batter evenly in the jelly roll pan.
  • Bake for 12 to 13 minutes.
  • Remove the cake from the oven. Run the tip of a sharp knife around the edges of the pan that were not covered by the parchment paper.
  • Heavily dust the tea towel with powdered sugar.
  • Immediately place the dusted tea towel powdered side down on top of the cake.
  • Lay the cutting board on top of the dusted tea towel. The cake pan will be hot, you will need to be careful to protect your hands. Quickly flip the cake pan over so that the cake is now on top of the dusted tea towel.
  • Carefully and slowly peel the parchment paper away from the cake.
  • Heavily dust the top of the cake with the remaining powdered sugar.
  • Flip one end of the tea towel over one of the short ends of the cake. Carefully begin to roll one end towards the other. Place the rolled cake on a cooling rack to cool completely.
  • Using a handheld mixer on medium-high and a medium-sized mixing bowl, beat together the softened cream cheese, light brown sugar, and vanilla until the brown sugar is completely incorporated.
  • Fold in the whipped topping. Set this aside.
  • Once the cake is completely cooled, carefully and slowly unroll the cake. If there are a few small cracks, it will be ok.
  • Using either a silicone spatula or an offset spatula, spread the filling over the top of the cake, avoiding the edges.
  • Slowly, and with gentle even pressure, carefully roll the cake back into a "roll". Tightly wrap the cake in plastic wrap to ensure the cake holds its shape.
  • Allow the cake to chill in the refrigerator for 1 hour to overnight.
  • Just before you are ready to serve the cake roll, dust the cake with 1 tablespoon of powdered sugar then drizzle the caramel sundae topping on top of the powdered sugar.
  • Slice the cake roll in 1/2 inch servings.

  • Dust with flour, tap out any excess, and set aside.
  • Over a surface covered with a large sheet of waxed or parchment paper, sift the flour, baking powder, baking soda, and salt. Into a medium bowl, resift the flour mixture and set aside.
  • In a large bowl, using a mixer set on medium-high speed, beat the butter until light -- about 1 minute.
  • Add the sugar and continue to beat for 2 more minutes.

  • PREPARE THE ICING:.
  • In a medium saucepan with a candy thermometer attached, stir sugar, heavy cream, and lemon juice together.
  • Cook the mixture, without stirring, over medium-high heat to soft-ball stage (238ºF).
  • Remove from heat and cool the caramel mixture to 140º F.
  • Place the butter on top of the cooled caramel mixture.
  • Remove the thermometer and, using a handheld mixer set on medium-high speed, beat the caramel until it thickens enough to hold its shape, lightens in color, and changes from translucent to opaque -- about 5 minutes.
  • ICE THE CAKE:.
  • Use a serrated knife to trim the mounded side of the cake layers, if necessary.
  • Line the edges of a cake plate with 3-inch-wide strips of waxed or parchment paper and place a cake layer, trimmed side down, on top.
  • Place 1 cup Caramel Icing on top of the layer and spread evenly.
  • Place the second layer, trimmed side down, on the first and cover the top and sides with the remaining icing.
  • Apply icing immediately.
  • ENJOY!

Steps:

  • Preheat oven to 350ºF.
  • Butter 2 9-inch round cake pans; line bottoms with parchment paper. Butter the parchment and dust with flour, tapping out the excess; set aside.
  • Into a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a small bowl, stir together mashed bananas, sour cream, and vanilla; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat 1 1/2 sticks butter and 1 2/3 cups sugar on medium-high speed until light and fluffy, 3-4 minute Scrape down the sides as needed.
  • Add the eggs, one at a time, beating well after each addition.
  • With the mixer on low speed, add the flour mixture in two parts, beating until well combined after both additions, 2-3 minute.
  • Using a rubber spatula, fold in the reserved mashed banana mixture, being careful not to overmix.
  • Divide the batter between the prepared pans and bake 30-35 min, or until golden and a tester inserted in the center comes out clean.
  • Transfer pans to a wire rack to cool for 20 minute.
  • Invert cakes onto the rack; peel off the parchment paper and reinvert cakes, and let them cool completely, top sides up.
  • Sprinkle 1/4 cup sugar into a large skillet; cook over high heat, shaking the pan occasionally, until sugar is caramelized.
  • Remove from heat and stir in 3 Tbs butter until melted.
  • Return pan to medium heat and add the sliced bananas. Cook until slices start to brown, 1-2 minute Gently turn the bananas, and cook over medium-high heat until browned, about 2 more minute.
  • Using a serrated knife, trim the tops of the layers to make them level.
  • Place one layer on a cake plate and arrange the caramelized banana slices on top. Make sure the entire top is covered.
  • Place the remaining layer on top and frost with mascarpone frosting.
  • To make the frosting:.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the mascarpone, cream and confectioners' sugar until medium-soft peaks form, about 1-2 minute Be careful not to overbeat, and use immediately.

*I highly recommend making your own caramel sauce for this recipe. It's simple and requires very few ingredients. I love this recipe for salted caramel sauce.

Steps:

  • Preheat the oven to 350 degrees. Thoroughly grease a large bundt pan with butter or shortening.
  • Whisk together flour, baking soda, and salt.
  • In the bowl of an electric mixer, beat butter until light and creamy. Add sugars and beat until smooth, about 3-4 minutes. Beat in the vanilla extract and bourbon.
  • Add eggs, one at a time, beating well after each addition.
  • Reduce mixer speed to low and beat in the bananas.
  • Reduce mixer speed to stir and add half the flour mixture, followed by all the buttermilk, and finally the rest of the flour. Once flour is incorporated, increase speed to medium and beat until smooth and well combined, about 1 minute.
  • Swirl in caramel sauce. Do not combine completely.
  • Pour in prepared pan and bake for 60-70 minutes or until toothpick or chopstick in center comes out clean. Check at 40 minutes to make sure the top of the cake isn't browning too quickly. If it is, top the cake loosely with aluminum foil.
  • Allow the cake to cool about 20 minutes then invert onto a cooling rack to cool completely. Try not to eat half the cake during this step. It's hard, I know.Store in an airtight container until ready to serve.
  • For serving, warm caramel sauce, then drizzle across the top of the cake. Enjoy waaaay too many slices of this...for breakfast.

1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove

3 ounces chocolate, broken into small pieces (I used a 65% chocolate)
3 ripe bananas, diced
1/2 cup firmly packed brown sugar
2 tablespoons milk
4 tablespoons unsalted butter, cut into pieces

Steps:

  • Butter and flour a tube pan or a bundt pan that can hold 12 cups.
  • Preheat the oven to 350 degrees F.
  • Sift together the dry ingredients (flour, cinnamon, nutmeg, cloves, salt and baking soda).
  • In the bowl of a stand mixer, combine the eggs, oil and sugar. With the paddle attachment, mix on medium speed for 2 to 3 minutes.
  • Scrape down the sides of the bowl to ensure that the sugar has been incorporated.
  • Add the vanilla extract and mix for another 30 seconds.
  • With the mixer on low speed, add the dry ingredients a bit at a time. Scrape down the sides of the bowl every now and then to ensure everything is incorporated.
  • Once the dry ingredients have been added, remove the bowl from the stand mixer and add the chocolate and bananas. Gently fold them in with a spatula or a wooden spoon. Don't over mix.
  • Spoon the batter into the prepared pan. Bake for 50 minutes and then test the cake to see if it's done by poking a toothpick or cake tester into the centre of the cake. If it comes out clean, it's done. If not, bake the cake for another 5 to 10 minutes. In my oven, this cake took 55 minutes.
  • About 5 to 10 minutes before the cake is done, make the caramel by combining all the ingredients in a small pan. Bring to the boil and stir occasionally to ensure that it doesn't burn. Let it boil for about 5 minutes and then turn off the heat.
  • Once the cake is out of the oven, poke holes all over the cake with a skewer. Immediately pour the caramel over the cake, stopping every now and then to let the caramel sink inches If the caramel pools in spots, poke more holes to allow it to sink inches.
  • Let the cake cool in the pan on a wire rack. Once it's cool, loosen the cake from the sides of the pan and then unmold it onto a plate.

3 tbsp cocoa powder
3 large ripe bananas
150ml full-fat milk , plus 1 tbsp for the icing
3 large eggs
1 tsp vanilla extract
350g self-raising flour
1 tsp bicarbonate of soda
350g soft light brown sugar
150g natural yogurt
100g dark chocolate chips or bar of chocolate, chopped into small chunks
80g salted peanuts , roughly chopped
100g dulce de leche caramel, from a can or jar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 2.5-litre bundt tin (ours was 26cm in diameter) with some melted butter, making sure you get in all the crevices. Mix the cocoa with 50ml kettle-hot water and set aside to cool.
  • Mash the bananas, then stir in the butter, milk, eggs and vanilla. In another bowl, combine the flour, bicarb, sugar and 1/2 tsp salt. Shake the bowl a few times to encourage any lumps of sugar to come to the surface, squeeze them through your fingers and mix again.
  • Stir the banana mixture into the dry ingredients, then transfer half the cake mixture to another bowl. Add the cocoa mix, 50g yogurt and the chocolate chips to one bowl, and the remaining 100g yogurt and 50g peanuts to the other.
  • Scrape the peanut mixture into the prepared tin, then spoon over the chocolate mixture. Swirl a skewer through the two cake mixtures to create a marbled effect. Bake on the middle shelf for 1 hr. Check the cake is cooked by inserting a skewer into the centre of the sponge - if it comes out coated in any wet mixture, return to the oven for 10 mins more, then check again. Cool for 15 mins in the tin, then transfer to a wire rack to cool completely.
  • Mix the caramel with 1 tbsp milk to create a drizzly icing. Once the cake is cool, drizzle over the icing and scatter with the remaining peanuts. Will keep in a tin for four days.

  • Put the mashed bananas in a bowl and leave out for half an hour to oxidize - this will make them browner and add to the colour. Or if you are in a rush, just mash the bananas and get to baking the loaf.

At the very first whisp of smoke from the caramel, remove from the heat. By now it should be very dark amber. (You are looking for a dark caramel here, because you will be adding cream, so don't flinch and take it off the heat when it's still just pale gold!)
  • While whisking continuously, immediately but slowly pour in 2 cups heavy cream. Be very careful — the caramel is going to steam and bubble up violently! Add the butter and 1/2 teaspoon fine or 1 teaspoon kosher salt and whisk smooth. Return to medium heat and simmer for 5 minutes to slightly reduce. Let cool completely before using.
