GRILLED PORK CHOPS WITH MAPLE BUTTER

- In a large saucepan, saute green onion in 1 tablespoon butter. Add apple juice; cook until reduced by half. Add the cream, syrup, salt and pepper; cook until reduced by half and mixture is caramel-like. Add remaining butter, 1 tablespoon at a time, stirring until melted. , In a large skillet, cook the apples, onion, butter and brown sugar over medium heat for 3 minutes or until onion is crisp-tender and apples are softened; set aside. , Sprinkle chops with pepper. Brush each side with oil. Grill, uncovered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. , Rewarm maple butter and glazed apples. Divide apples among four plates; top each with two chops and a fourth of the maple butter. Sprinkle with pecans.

GRILLED PORK CHOPS
Steps:
- For the grilled pork chops: Whisk together the olive oil, mustard, apple juice, parsley, lemon zest and juice, salt, pepper and garlic in a medium bowl.
- Put the pork chops in a baking dish or resealable gallon-sized bag. Pour the marinade over the meat. Marinate for at least 1 hour at room temperature and up to 8 hours refrigerated.
- For the apple-mango chutney: Meanwhile, heat a medium saucepan over medium-high heat. Add the olive oil and heat until hot and shimmering. Add the onion and cook until softened, 2 to 3 minutes. Add the mango, apple juice, lemon peel and juice, sugar, cumin, apples and cinnamon stick. Cook over medium heat, stirring often and allowing the mixture to bubble and reduce, 15 to 20 minutes. Remove the lemon peel and cinnamon stick before serving. The chutney can be stored in an airtight container for up to a week.
- Preheat an indoor grill pan to medium heat.
- Grill the pork chops until an instant-read thermometer inserted into the thickest part of the chops registers 145 degrees F, 4 to 5 minutes per side. Let the meat rest for 5 minutes before serving. Garnish with the chutney and chopped parsley.
GRILLED MAPLE-BRINED PORK CHOPS
Twelve hours is the optimal time for brining the chops, so plan on making the brine and marinating the chops the night before you intend to grill them. Once brined, they can be refrigerated for several days before cooking.

- 1. Mix all of the brine ingredients together in a nonreactive pot and bring to a boil. Turn off the heat and stir the brine to ensure that the salt, sugar, and maple syrup have dissolved. Let the brine cool, then put it in a large nonreactive container and add the pork chops. Cover and refrigerate for no more than 12 hours.
- 2. Remove the pork from the brine and pat dry (without rinsing).
- 3. Prepare a grill with hot and medium cooking areas. A grill is hot when you can't hold your hand near the grill surface for longer than 2 seconds without pulling it away; it's medium when you can't hold your hand there for longer than 4 seconds.
- 4. Season the chops with pepper (not salt - remember, the brining solution is salty) and brush with the oil. Sear the chops directly over the hottest part of the open grill for about 1 1/2 minutes on each side. Then move the chops to the medium area of the grill, cover the grill, and cook to the desired doneness. Use an instant-read digital thermometer to check the internal temperature of the chops. A reading of 145° to 150°F will give you a pink, moist chop, 160°F is well-done. Serve immediately, accompanied by the chutney, if using.

- In a small bowl, whisk syrup, vinegar, salt and pepper until blended. Pour 1/2 cup marinade into a shallow bowl. Add pork chops; turn to coat. Cover and refrigerate 1 hour. Reserve remaining marinade for basting., Drain pork chops, discarding marinade. On an oiled grill, cook pork chops, covered, over medium heat or broil 4 in. from heat 13-17 minutes or until a thermometer reads 145°, turning occasionally and basting with reserved marinade during the last 5 minutes. MAPLE MUSTARD BARBECUED PORK CHOPS

- Preheat grill pan or nonstick griddle pan over medium high heat. Preheat electric table top grills to high. Preheat oven to 350 degrees F.
- Combine maple syrup, mustard, cider, onion, allspice and cumin in a small saucepan and cook together over moderate heat for 5 minutes until sauce begins to thicken a bit.
- Coat chops lightly in oil and season with salt and pepper. Cook chops on hot grill pan or indoor grill 3 minutes on each side. Baste chops liberally with sauce, cook 2 or 3 minutes more. Transfer chops to a baking sheet. Baste again with sauce and transfer to a hot oven to finish cooking them. Bake 10 to 12 minutes, until your apples are ready to come off the grill pan.
- Wash apples but do not core or peel. Coat apple slices with a drizzle of oil. Season with grill seasoning or salt and pepper. Cover grill pan or indoor tabletop grill with as many pieces of apple as possible. As the apples get tender, pull them off and replace with more slices. Apples should cook 3 minutes on each side, you don't want them too soft, just tender.
- Platter chops with apples along side and serve.

- Mix all ingredients in a small bowl; set aside.
- FOR GLAZE:.
- Mix all 8 ingredients in a small saucepan.
- Bring to a boil over medium heat, whisking until smooth. Cool to room temperature.

- Saute onion in oil until tender, about 2 -3 minutes. Stir in syrup, vinegar, mustard, soy sauce and pepper. Let simmer gently for 10 minutes. Remove from heat and set aside.

- Pound meat to 1/4 inch thick. Season both sides with rubbed sage and pepper.
- Melt butter in heavy skillet, over medium high heat.
- Add pork and sauté until brown and cooked through, about 3 minutes per side. Transfer to plate.
- Add shallots to same skillet, and cook about 30 seconds.
- Mix in mustard and chicken broth, and simmer for about 5 minutes.
- Stir in maple syrup and vinegar. Simmer until mixture is reduced to sauce consistency, about 5 minutes.
- Add capers to sauce.
- Return pork and juices to skillet. Cook until just heated through, about 1 minute.
- Arrange pork on platter and spoon sauce over.
- Serve with steamed rice.
