4 large apples, Granny Smith or any tart apple, cored and cut into medium dice
1/2 cup light brown sugar
1/4 cup orange juice
6 plain matzohs
8 eggs
1 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups sugar
1/2 cup (8 tablespoons) butter or margarine, melted
1 cup golden raisins
1 cup dried apricots, medium, chopped
4 tablespoons butter or margarine, cut into small pieces, for casserole topping

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Toss the apples with the brown sugar and orange juice, set aside in a medium bowl.
  • 3. Break the matzoh into 2- to 3-inch pieces and soak in 1 cup of warm water until soft but not mushy. Set aside.
  • 4. While the matzoh soaks, beat the eggs with a wire whisk in a large bowl until blended. Add the salt, sugar, cinnamon, melted butter, raisins, and apricots.
  • 5. Squeeze the liquid from the softened matzoh and add the matzoh to the egg mixture with the apples. Stir the kugel well and pour into a lightly greased 2 1/2-quart casserole dish or a 10x14-inch pan. Dot the top of the kugel with the 4 tablespoons of butter.
  • 6. Bake the kugel for 1 hour. Cover the top with foil if the top begins to become too brown early in the baking. Remove the kugel from the oven and cool to room temperature.

4 regular-flavored sheets of matzoh
3 eggs, beaten well
½ teaspoon salt
½ cup sugar
¼ cup vegetable oil
1 teaspoon ground cinnamon, ½ teaspoon all spice
2 apples peeled, cored and cubed
½ cup raisins

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease an 8×8 inch baking dish. Break the matzoh sheets into many pieces and soak in a bowl of water until soft. Drain in a colander, mashing to squeeze the water out.
  • In a separate bowl, mix together the eggs, salt, sugar, oil and cinnamon and all spice. Add the soaked matzo and mix well.
  • Fold in the apples and raisins. Spoon into the prepared baking dish, and spread evenly.
  • Bake for 45 minutes in the preheated oven, until nicely browned and apples are tender.
  • Sprinkle more cinnamon sugar on top and let cool before cutting.

¼ cup white sugar
1 teaspoon salt, divided
½ teaspoon lemon juice
⅓ cup applesauce
3 Granny Smith apples - cored, peeled and chopped
½ cup dried cranberries
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the crumbled matzos in a medium bowl, and add enough water to cover. Let stand for 2 minutes, then drain off excess water. Do not squeeze.
  • To the bowl of matzo, add eggs, 1/4 cup sugar, salt, lemon juice and applesauce. Stir to combine. Mix in the apples and dried cranberries. Spread the mixture evenly into a 2 quart casserole dish. Mix together the remaining 1/4 cup of sugar, and cinnamon; sprinkle over the top.
  • Bake for 45 minutes in the preheated oven, or until the top is golden, and the apples are soft.

This comforting kugel tastes much richer than it is, and it is certainly lighter than a traditional kugel (though it is not a low-calorie dessert). I've made this with Golden Delicious apples and with tarter varieties like Pink Lady; I liked it both ways.

2 tablespoons unsalted butter
4 apples, cored and cut in small (1/4- to 1/2-inch) dice
6 ounces flat egg noodles, preferably whole-grain
Salt to taste
1/4 cup raisins, plumped for 5 minutes in warm water and drained (optional)
4 eggs
1/4 cup raw brown sugar or dark brown sugar
1 cup drained yogurt
1 teaspoon vanilla extract
2 tablespoons rum
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees. Butter a 2-quart baking dish. Begin heating a large pot of water.
  • Melt 1 tablespoon of the butter over medium-high heat in a large, heavy skillet and add the apples. Cook, stirring or tossing in the pan, until they begin to color and are slightly tender, about 5 minutes. Remove from the heat.
  • When the water comes to a boil, add salt to taste and the noodles. Cook al dente, a little firmer than you would want them if you were eating them right away. Drain through a colander and add to the pan with the apples (if using long flat noodles, cut them first with a scissors into shorter lengths). Add the remaining tablespoon of butter and toss together until the butter melts. Stir in the optional raisins. Set aside.
  • Beat the eggs in a large bowl. Add the sugar and beat together until the mixture is thick. Beat in the yogurt, vanilla, rum, nutmeg and about 1/4 teaspoon salt, or to taste. Add the noodles and apples and fold everything together. Scrape into the prepared baking dish. Push the pasta down into the egg and yogurt mixture (it will not be completely submerged, but try to cover as much as you can). Place in the oven and bake 40 to 45 minutes, until the kugel is set and the sides are browned. There will always be some noodles on top that brown and become quite hard. You can remove these from the baked dish if you wish. Allow to sit for at least 10 minutes before serving. Serve hot, warm or at room temperature.

2 Granny Smith apples (about 1 pound), peeled, cored and thinly sliced
1 3/4 cup unsweetened apple juice, divided
1/4 cup lemon juice
3 plain matzoh crackers
4 large eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1/4 teaspoon fine sea salt
1/2 cup dried apricots, thinly sliced

Steps:

  • Preheat the oven to 350°F. Lightly coat a 9-inch-square baking dish with spray oil.
  • In a medium bowl, combine apples, 1/4 cup of the apple juice and lemon juice, and set aside.
  • Break matzoh into bite-size pieces and place in a separate bowl with remaining apple juice; let soak just until softened, about 5 minutes.
  • Drain matzoh and discard remaining juice.
  • In a medium bowl, whisk eggs, cinnamon, nutmeg and salt together until blended.
  • Fold in apricots and drained, softened matzoh.
  • Layer 1/3 of the apples and juices in the prepared baking dish.
  • Add 1/2 of the egg mixture.
  • Repeat with remaining apples and egg mixture; ending with a thin layer of apples on top.
  • Bake until apples are golden brown on top and tender throughout, about 50 minutes.
  • Let cool slightly before serving or cool completely.

12 oz Bag No Yolks Broad Noodles
3 Granny Smith Apples (peeled and cubed)
1 Onion (chopped)
3 tablespoons Water
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
2 tablespoons Sugar
1/2 cup Golden Raisins (or more if you'd like)
2 teaspoons Vegetable (oil)
4 Eggs
Salt (to taste)

Steps:

  • Preheat oven to 350 degrees Fahrenheit
  • Spray a 9x13 baking pan with non-stick spray
  • Cook the noodles according to the package directions. Drain and set aside
  • While the noodles cook, heat a skillet over medium heat and add the vegetable oil
  • Add the onions and apples. Season with salt and cook until they start to soften and caramelize. About 6-7 minutes
  • When onions caramelize add the sugar, raisins, cinnamon, nutmeg, and water. Cook for 2 minutes more
  • Remove from heat and place it in a bowl with the noodles. Let it cool for a bit before adding the eggs
  • When the mixture cools, add the egg and mix rapidly until combined
  • Pour the kugel mixture into the baking pan and bake for 45 minutes to an hour or until the top browns
  • Remove from the oven and enjoy!

1/2 cup oil
3/4 cup flour
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350.
  • Placed sliced apples in an 8X8 oven safe dish.
  • Sprinkle with sugar and cinnamon.
  • Mix the remaining ingredients and spread over the top.
  • Bake for 1 hour.

My grandmother made this dish for every family gathering. My Jewish grandfather insisted it tasted just like how his mother use to make it. Not only was it good as a side dish, but it's excellent as a morning treat or dessert.

1 (8 ounce) package egg noodles
3 eggs
⅓ cup white sugar
2 apples - peeled, cored and finely chopped
½ cup sour cream
½ cup cottage cheese
1 teaspoon ground cinnamon
½ teaspoon salt
⅓ cup raisins
2 tablespoons brown sugar
2 tablespoons chopped walnuts
2 tablespoons butter

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Grease an 8-inch square microwave-safe glass baking dish. Beat the eggs together in a mixing bowl. Stir in the cooked noodles, white sugar, chopped apples, sour cream, cottage cheese, cinnamon, salt, and raisins; mix until combined. Pour the mixture into the prepared dish.
  • Microwave on medium high (70% power) for 7 minutes.
  • Combine the brown sugar and chopped walnuts in a bowl, and cut in the butter to form a crumbly topping. Sprinkle the topping over the pudding. Return the pudding to the microwave and cook on medium high (70% power) until the pudding is firm in the center, 7 to 9 minutes.
