VEGAN SPINACH WRAP
This is an awesome, light, low-carbish meal that's great for lunch, dinner, a quick meal on-the-go, picnics, bag lunches, or road trips. Just roll them tightly in plastic wrap and you're ready to go!

Steps:
- Mix the first 6 ingredients in a bowl, cover and set aside in the fridge for at least 30 minutes. Overnight would be best to let the flavors meld.
- Lay one tortilla flat and spread on about 2 tbsp of the cream cheese, leaving at least 1/2 inch border around the tortilla. Add more cream cheese if you would like it creamier.
- Pile on the spinach leaves, tomato slices and sprouts as you like, but not too much or you won't be able to close it.
- Start rolling the tortilla from one side to the other, tucking in the ends when you get towards the middle. Use the cream cheese as glue on the edge to seal the wrap shut. It should look sort of like a burrito when you're done.
- Cut in half and serve cold, or wrap in plastic for later. This goes great with fresh fruit and a pasta or bean salad.

Steps:
- Dice tomato and slice green onions. Cut avocado in half lengthwise; remove seed and cut flesh away from skin. Mash avocado in a bowl. Stir in sour cream, lemon juice and salt.
- Top each tortilla with a level scoop of avocado mixture; spread. Cover with one or two lettuce leaves. Place one turkey slice over the lettuce. Top with 1/2 Celsius salad sprouts; sprinkle with 2 T. tomato and 1 T.each green onion and cheese.
- Roll up each tortilla tightly. Cut each wrap in half.
LOW CARB WRAPS
Low Carb Wraps that are Gluten Free. This recipe was suggested to me to try . I changed it a bit to suit ingredients I had in the kitchen. Baking the wraps worked great. I also tried to fry one in a cast iron pan - that did not work at all as they were not strong enough to lift and flip into a frying pan.

- Heat oven to 375 degrees.
- Wisk dry ingredients together in small bowl. Wisk wet ingredients together in another small bowl. With a fork mix the wet into the dry ingredients and stir well for at least 1 minutes. Let rest 1-2 minutes. Oil your hands and divide the dough in two. Roll into a ball. Spray large baking sheet with Pam and put dough ball in center of each half of the pan. Cover ball with plastic wrap and roll out into a thin circle. Repeat with other dough ball.
- Place in oven and bake for 7-8 minutes or until done. Store in plastic bag between paper towels. I tried frying these but they did not work - they fell apart. Works way better in the oven.
