An "adjusted" recipe for muesli. Original recipe from The Big Bean Cookbook uses wheat flakes - I'm gluten intolerant so I substitute the wheat flakes with quinoa flakes. Works great. This combination of seeds, grain flakes, nuts and dried fruits works well, but you can alter the balance of ingredients or substitute others, to your taste. Try brown rice flakes, millet flakes, oat flakes or corn flakes.

1/2 cup roasted sunflower seeds
1/4 cup pepitas (roasted pumpkin seeds)
1 cup rolled oats
1 cup quinoa
1 cup barley or 1 cup brown rice, flakes
1 cup golden raisin (sultanas)
1 cup hazelnuts, chopped and roasted or 1 cup pecans, chopped and toasted
1/2 cup unsulphured dried apricot, chopped
2 cups dried apples, pieces
1/3 cup dried unsweetened coconut

Steps:

  • Mix all ingredients together and store in an airtight container.

1/3 cup quick-cooking oatmeal (recommended: McCann's)
1 1/2 tablespoons coarsely chopped toasted hazelnuts
2 tablespoons granola with raisins
Pinch kosher salt
1/3 cup hottest tap water
1 tablespoon honey
4 large ripe strawberries, hulled and sliced
6 to 8 fresh raspberries
2 teaspoons sugar
Greek yogurt (recommended: Fage Total, for serving

Steps:

  • Measure the oatmeal, hazelnuts, granola, and salt together in a cereal bowl. Pour the water and honey over the mixture, stir, and set aside to soak for 12 to 15 minutes.
  • Meanwhile, toss the strawberries, raspberries, and sugar together in another bowl and allow to macerate while the muesli is soaking. When ready to eat, divide the muesli between 2 bowls; divide the berries between the oat mixtures and stir in. Serve at room temperature with a dollop of yogurt on top.

1 1/2 cups old-fashioned rolled oats
1 cup barley flakes
1 cup rye flakes
1/2 cup flaxseed meal
1/2 cup shelled pumpkin seeds
1/2 cup chopped almonds
1/4 cup hazelnuts or pistachios, chopped
1/4 cup golden raisins
1/4 cup dried cherries or cranberries
1/4 cup chopped dried apricots or dates
Pinch of sea salt

Steps:

  • Preheat the oven to 325 degrees F. Spread the oats, barley flakes, rye flakes, flaxseed meal, pumpkin seeds, almonds and hazelnuts on a large rimmed baking sheet and bake, stirring once, until lightly golden brown, about 10 minutes. Remove from the oven and let cool.
  • Add the dried fruit and salt to the mixture on the baking sheet and stir to combine. Transfer to a container with a lid and store in a cool, dry place. The muesli will last for at least a month if stored properly.

6 pitted medjool dates , snipped into pieces

300g mixed berries , such as raspberries, strawberries and blueberries
generous sprinkling of ground cinnamon (optional)

Steps:

  • Tip the oats into a frying pan and heat gently, stirring frequently until they are just starting to toast. Add the pecans and seeds to warm briefly, then tip into a large bowl and toss so they cool quickly.
  • Add the dates and puffed wheat, mix well until thoroughly combined, then serve topped with the yogurt and fruit, and a sprinkling of cinnamon, if you like.

This is from a pamphlet by Sanitarium called "Eat to prevent cancer", thought it sounded yum! *LSA is a combination of ground linseeds, sunflower seed and almonds, available in the health food section of the supermarket. It's perfect sprinkled on cereal or yoghurt, and can be used in muffin and cake recipes. Store leftover LSA in a sealed container in the freezer.

2 cups other rolled grains such as: rye (barley, triticale, spelt flakes, and/or quinoa flakes (or another 2 cups rolled oats))

1 cup dried fruit such as: raisins

Steps:

  • Add all ingredients to a large bowl and stir to combine. Store at room temperature a large airtight container. Keeps for weeks or even months!
  • To serve, scoop out 1/2 cup and add to a bowl. Add yogurt or milk of choice and fresh fruit if desired. Eat right away, or let soak for about 30 minutes to soften. Or, if you prefer, you can soak it overnight in the refrigerator.
