I have made this dish for company, and every time they ask for the recipe! I hope everyone else likes it as much as we do!

3 tablespoons olive oil
2 tablespoons butter
1 pound Yukon Gold potatoes, diced
½ pound fresh shiitake mushrooms, diced
1 red bell pepper, diced
1 small acorn squash, diced
1 shallot, finely chopped
2 teaspoons garlic powder
1 pinch salt
1 pinch ground black pepper
1 cup chopped kale
4 sprigs fresh sage

Steps:

  • Place oil and butter in a large skillet over medium heat. Melt butter and mix in potatoes, mushrooms, pepper, squash, and shallot. Season with garlic powder, salt, and pepper. Cook 25 minutes, stirring occasionally, until potatoes are tender.
  • Mix kale and sage into skillet. Continue cooking 5 minutes, until kale is wilted. Serve and enjoy!

Butter for greasing dish
10 large eggs
1 cup whole milk
1 1/2 teaspoons salt
1/2 teaspoon black pepper
5 oz Swiss cheese, coarsely grated (1 1/2 cups)
10 oz cremini mushrooms, trimmed and coarsely chopped (1/4-inch pieces)
1 large sweet potato (8 to 10 oz), peeled and coarsely chopped (1/4-inch pieces)
1 large shallot, halved and thinly sliced
3 tablespoons olive oil

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 450°F. Butter a 2-quart shallow baking dish (about 2 inches deep).
  • Whisk together eggs, milk, 3/4 teaspoon salt, and 1/4 teaspoon pepper until smooth, then whisk in cheese. Pour into baking dish. Bake in upper third of oven until puffed, golden, and set, about 20 minutes.
  • Meanwhile, toss together mushrooms, sweet potato, shallot, oil, and remaining 3/4 teaspoon salt and 1/4 teaspoon pepper in a 17- by 13- by 1-inch baking pan. Spread vegetables in an even layer, then roast in lower third of oven while eggs are baking, stirring twice after 10 minutes, until tender and golden brown, about 18 minutes.
  • Serve eggs with roasted vegetables spooned on top.

This Roasted Potato Hash side dish goes beyond breakfast-you can serve these potatoes with just about anything.

1 pound russet or Yukon Gold potatoes, diced medium
1 medium white onion, diced medium
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
1 medium red bell pepper, seeded and diced medium
2 tablespoons finely chopped fresh chives

Steps:

  • Preheat oven to 500 degrees, with rack in lower third. On a rimmed baking sheet, toss together potatoes, onion, and olive oil. Season with salt and pepper. Arrange vegetables in a single layer and roast until onion begins to soften, about 10 minutes.
  • Add bell pepper to sheet. Toss and roast until potatoes are tender when pierced with a knife and pepper is soft, about 13 minutes. To serve, sprinkle vegetables with chives.

1 lb rutabaga, small-diced
1 lb parsnip, small-diced
1 lb turnip, small-diced
1 lb carrot, small-diced
1 onion, small-diced
1 lb bacon
1 tablespoon garlic, chopped
3 tablespoons parsley, chopped
salt and pepper, to taste

Steps:

  • In a large, non-stick saute pan, cook the bacon over low heat.
  • When crisp, remove from the fire and drain on paper towels.
  • With the bacon drippings still in the pan saute the onion and garlic until soft.
  • Add all of the vegetables and cook slowly until the vegetables are soft.
  • Season with salt and pepper.
  • Right before serving, add the parsley and cooked bacon.

1 tablespoon prepared horseradish
1/2 cup sour cream
1/4 teaspoon kosher salt
Pinch freshly ground pepper
4 tablespoons butter, diced
1 onion, sliced thinly, 1 cup (4 ounces)
2 springs fresh rosemary
3 garlic cloves, minced
1 pound Yukon gold or other waxy potatoes, skin on
1 large carrot (2 to 3 ounces)
1 large beet, peeled (4 ounces)
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the horseradish cream, whisk the horseradish into the sour cream and season with salt and pepper, to taste.
  • Heat 2 tablespoons of the butter in a large (10-inch) nonstick skillet over moderate heat. Add the onion and rosemary and cook, stirring occasionally until soft, about 10 minutes. Add the garlic to the onion and cook another minute.
  • Meanwhile, with the shredding blade of a food processor, or with a box grater, grate the potatoes into a colander. Rinse and pat very dry. (Giving them a turn in a salad spinner helps, too.)
  • Stir the potatoes into the vegetables in the skillet. Cook the potatoes, undisturbed until they get crusty on the bottom. Then, stir the crispy bottom into the tender potato, and continue to cook to re-crisp the bottom. Continue this browning and periodic stirring until the potatoes are almost cooked through, about 8 minutes. Meanwhile, shred the carrot and beet.
  • Remove the rosemary sprigs. Stir the carrot and beets into the potato hash, and cook until slightly soft, about 5 minutes. Press the hash into an even cake. Add the remaining 2 tablespoons of butter in bits along the sides of the skillet, and then brown the hash over high heat. Turn the hash in large sections with a spatula to brown the other sides, another minute.
  • Divide the vegetable hash among 4 plates and serve warm with the horseradish cream.

2 pounds russet potatoes, peeled and cut into 1/4-inch dice
1/2 pound leftover roast beef/epi:recipeLink, cut into 1/4-inch dice
1/4 pound thick-sliced bacon, cut into 1/4-inch dice
1 onion, chopped
1 each red and green bell pepper, seeded and cut into 1/4-inch dice
1/4 teaspoon nutmeg
Salt and pepper, to taste
1 tablespoon orange zest
4 tablespoons chopped parsley
6 poached eggs, for serving

Steps:

  • 1. Cook the potatoes in boiling salted water until tender, 8 minutes. Drain and place in a large bowl with the beef.
  • 2. Cook the bacon over medium heat to render the fat, 5 minutes. Add the onion and bell peppers; cook, stirring, for 5 minutes. Remove with a slotted spoon and add to the potatoes and roast beef, along with the nutmeg, salt, pepper, orange zest and 2 tablespoons of the parsley. Toss.
  • 3. Discard all but 2 tablespoons of the fat from the skillet, then spread the hash mixture evenly in the skillet and weight it down with something heavy, like a smaller skillet. Cook over medium-high heat until golden brown on the bottom, about 5 minutes. Turn the hash over with a spatula and cook until golden brown, 5 to 7 minutes. Spoon the hash onto six plates; top each with a poached egg and sprinkle with the remaining 2 tablespoons of parsley. Serve immediately.

Steps:

  • In a large non stick skillet over medium heat, melt margarine and cook onion until softened.
  • Add potatoes and cook until lightly browned.
  • Then add spam and veggies, sprinkle with garlic powder, salt and pepper.
  • Stir occasionally until meat is slightly browned.
  • Top with cheese if desired, and let set for 5 minutes.
