6 ounces multi-grain spaghetti
1/4 cup multi-grain croutons, crushed
1/4 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons grated lemon zest
1 tablespoon olive oil
1 shallot, thinly sliced
1 garlic clove, minced
1/4 teaspoon crushed red pepper
3/4 pound large shrimp, shelled and deveined (about 16 large shrimp, 21 to 25 count)
1/4 teaspoon salt
1/4 cup low-sodium chicken broth
1/4 dry white wine
1 tablespoon lemon juice
6 black pitted and chopped olives such as Kalamata (about 1 tablespoon)

Steps:

  • Cook the spaghetti according to package directions. Drain; set aside.
  • Meanwhile, combine the croutons, 1/2 tablespoon of the parsley, and 1 tablespoon of the zest in a small bowl; set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the shallot, garlic, and red pepper. Cook, stirring until the shallots are soft, about 1 minute. Add the shrimp and the salt, and cook, over medium-high heat, turning occasionally, until the shrimp are opaque, 1 to 2 minutes. Stir in the broth, wine, lemon juice, and olives. Bring to a boil and cook for 1 minute, then reduce the heat to medium. Stir in the spaghetti, the remaining 3 tablespoons parsley, and the remaining 1/2 tablespoon zest, tossing to coat well; remove from the heat.
  • Transfer to a large bowl. Sprinkle with the crouton mixture. Serve at once.

16 large shrimp, peeled and deveined
1 tablespoon butter
2 tablespoons minced garlic
1 tablespoon minced shallot
1 teaspoon olive oil
¼ cup chicken stock
2 tablespoons freshly squeezed lemon juice
¼ teaspoon red pepper flakes
⅛ teaspoon ground paprika
salt and ground black pepper to taste
¼ cup crushed garlic croutons
3 cups frozen riced cauliflower (such as Green Giant®)
3 tablespoons chopped fresh parsley
4 lemon wedges

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place shrimp in a shallow baking dish.
  • Melt butter in a small saucepan over medium heat. Add garlic, shallot, and olive oil and cook until fragrant, about 1 minute. Stir in chicken stock, lemon juice, red pepper flakes, paprika, salt, and pepper. Pour this mixture over shrimp and sprinkle with crushed croutons.
  • Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, 9 to 11 minutes; do not overcook.
  • While shrimp is cooking, place riced cauliflower in a large nonstick skillet. Cook over medium heat, stirring occasionally, until hot, about 5 minutes.
  • Serve shrimp over riced cauliflower. Garnish with chopped parsley and lemon wedges.

28 large shrimp, peeled and deveined (about 1 1/2 pounds)
3 cloves garlic, minced
1/3 cup dry white wine (Sauvignon Blanc)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup fresh flat-leaf parsley, chopped
1 tablespoon fresh lemon juice

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp, saute 1 minute.
  • Add garlic, saute 1 minute.
  • Stir in wine, salt, and pepper, bring mixture to a boil.
  • Reduce heat to medium, cook 30 seconds.
  • Add parsley and lemon juice, toss well to coat.
  • Cook 1 minute or until shrimp are done.

3 tablespoons margarine
1 cup red bell pepper, chopped
8 garlic cloves, crushed
1/2 cup dry white wine
1/4 cup fresh parsley
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
paprika
6 cups angel hair pasta, cooked (about 3/4 pound uncooked)

Steps:

  • Peel shrimp, leaving tails intact. Starting at tail end, butterly underside of each shrimp, cutting to, but not through, back of shrimp. Arrange 8 shrimp, cut sides up, in each of 6 gratin dishes; set aside.
  • Melt margarine in a small skillet over medium heat. Add bell pepper and garlic; saute 2 minutes. Remove from heat; stir in wine, parsley, lemon juice, salt and pepper. Spoon wine mixture evenly over each serving; sprinkle paprika over shrimp, and broil 6 minutes or until shrimp is done. Serve with angel hair pasta.
  • Yield: 6 servings (8 shrimp and 1 cup pasta each).

8 ounces uncooked multigrain angel hair pasta
1 tablespoon butter
1 tablespoon olive oil
2 green onions, thinly sliced
4 garlic cloves, minced
1/2 cup reduced-sodium chicken broth
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup minced fresh parsley
Grated Parmesan cheese, optional

Steps:

  • Peel and devein shrimp, removing tails. Cut each shrimp lengthwise in half. Cook pasta according to package directions. , In a large nonstick skillet, heat butter and oil over medium-high heat. Add shrimp, green onions and garlic; cook and stir until shrimp turn pink, 2-3 minutes. (From Everyday Food) Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread.

1 tablespoon olive oil
