BANANAS FOSTER COCKTAIL
The decadent New Orleans Bananas Foster Cocktail takes the enticing flavors of the classic dessert, and combines them into a divine adult beverage!

Steps:
- Rim a glass with caramel sauce, and then dip in turbinado sugar.
- Combine all the ingredients in a cocktail shaker.
- Shake the mixing tin for 20 seconds and strain into a caramel sugar rimmed glass filled with ice.
- Garnish with a slice of banana cut on the bias.

- Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
- Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
- Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
- Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

- Melt butter in a saucepan over medium heat.
- Add sliced bananas and stir for 2 minutes.
- Add brown sugar, vanilla, cinnamon, and salt.
- Lower heat and continue cooking, stirring constantly for 2 more minutes.
- Serve over a scoops of ice cream.
- Note: 1 oz of booze may be added during the last 2 minutes of cooking (Rum works well), add with the pan off of the heat- Beware of flaming.

- Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.
- Place bananas, cut-side down, in brown sugar mixture. Cook until just golden, about 30 seconds; flip and cook until golden on the other side, about 30 seconds.
- Remove from heat. Pour rum and banana liqueur into skillet; return skillet to high heat. Cook until alcohol ignites and flames, 1 to 3 minutes; add cinnamon. When flames die, remove skillet from heat.
- Scoop vanilla ice cream into 2 bowls. Divide bananas mixture between bowls and garnish with mint sprigs.

SPIKED BANANAS FOSTER NICE CREAM
This nice cream isn't just made from regular old frozen bananas. It's made from rum-soaked bananas foster, for a slushie, cream-free, rum-filled frozen treat.

- Cut bananas lengthwise, then cut each slice in half.
- Combine butter, sugar and cinnamon in a skillet. Cook over low heat, stirring until the sugar dissolves.
- Stir in banana liqueur, then place banana slices in the pan and cook until they start to brown.
- Add 2 ounces of dark rum and carefully tip pan to ignite.
- Wait until flames subside, then remove bananas from pan.
- Set two banana slices aside, then add remaining bananas to a blender and blend.
- Add up to 6 ounces dark rum and blend again. Make sure the consistency doesn't get too loose. Add 2-4 ounces of milk if using. Blend again.
- Pour the mix into freezer-safe tub and fold in a handful of nuts.
- Chill for at least an hour, or until set.
- Scoop into a bowl, garnish with reserved bananas and more nuts.

BANANAS FOSTER COFFEE PARFAITS
Steps:
- Combine yolks, 1/2 cup cream, 1/3 cup sugar, molasses, rum, liqueur and instant coffee in medium stainless steel bowl. Set bowl over saucepan of simmering water (do not let bottom of bowl touch water.) Using handheld electric mixer, beat yolk mixture until thick and thermometer registers 160°F, about 18 minutes. Remove from over water; continue beating until zabaglione is cool, about 4 minutes.
- Using same beaters, beat 1 cup cream and vanilla in medium bowl until medium-firm peaks form. Fold cream into zabaglione in 2 additions. Cover and chill until thickened, about 4 hours. (Can be made 1 day ahead. Keep chilled.)
- Preheat broiler. Place banana chunks on baking sheet. Push 1/3 cup brown sugar through sieve onto bananas, coating evenly. Place close to heat; broil until sugar melts and crisps on bananas.
- Spoon 1/4 cup zabaglione into each of six 1 1/4- to 1 1/2-cup goblets.
- Spoon bananas over, dividing equally. Sprinkle each with 1 rounded tablespoon crushed gingersnaps. Top each with 1/4 cup zabaglione. Garnish each with gingersnap, banana slice and mint, if desired.
