BETTER BASIC BEANS
The payoff of preparing dried beans-as opposed to using canned-boils down to tenderness and taste, plus the full-bodied, fragrant (and freezable!) herb-infused broth, aka pot liquor, that results after you simmer them. (If you have a pressure cooker, even better; they're done in a fraction of the time.)

Steps:
- Cover beans with 2 inches water; soak overnight in the refrigerator. Drain and transfer to a large pot or Dutch oven; cover again with 2 inches water.
- Add onion, garlic, bay leaf, and 2 teaspoons salt. Bring to a boil, then reduce heat to a simmer; skim and discard foam. Cook, adding more hot water as needed to keep beans fully submerged, until tender and cooked through, about 1 to 1 1/2 hours, depending on type and freshness.
- Season to taste toward end of cooking. Remove and discard aromatics. Let beans cool in cooking liquid, then refrigerate in cooking liquid in an airtight container up to 5 days or freeze up to 3 months.
COOKING DRIED BEANS - CROCK POT
Buying dried beans is so much less expensive than canned. Cook the beans in the crock pot and then freeze - inexpensive and easy. Found this recipe on a blog - thanks whoever wrote it. Preparation time is initial soaking time.

Steps:
- Rinse beans.
- Pour beans into crock pot and add enough water to cover beans an additional 2 inches.
- Let beans soak for 6 hours or overnight. DO NOT turn crock pot on.
- Drain and rinse beans. Return to crock pot and cover with fresh water as above.
- Cook on low for 8 hours.
- When beans are cool you can package them in zip lock bags. 1 2/3 cups equals about a can's worth.
- These freeze beautifully.

Cook time does not include the overnight soak.

BASIC DRIED BEANS
There are two steps to cooking beans: soaking and cooking. Soaking allows dried beans to absorb water; which makes them start to dissolve the gaseous starches that can cause discomfort. Cooking beans makes them tender and digestible. And rinsing them after soaking and draining any water after cooking will further help to reduce the gas-producing starches.

- Note: Lentils, split peas and black-eyed peas do not need to be soaked.
- Pick through the beans, discarding any discolored or shriveled beans or any foreign matter.
- Rinse well.
- Traditional Slow Soak: In a 5-quart saucepan, cover 1 pound dried beans with 10 cups water.
- Cover tightly and refrigerate 6-8 hours or overnight.
- Drain and rinse the beans.
- Hot Soak: In a 5-quart saucepan, bring 10 cups water to a boil.
- Add 1 pound dried beans and return to a boil.
- Remove from the heat; cover tightly and set aside at room temperature 2-3 hours.
- Drain and rinse the beans.
- Quick Soak: In a 5-quart saucepan, bring 10 cups water to a boil.
- Add 1 pound dried beans and return to a boil; let boil 2-3 minutes.
- Cover tightly and set aside at room temperature 1 hour.
- Drain and rinse the beans.
- Gas-Free Soak: (The best method for gas-free beans, developed by the California Dry Bean Advisory Board.) In a 5-quart sauce- pan, place 1 pound of beans in 10 or more cups of boiling water; boil for 2-3 minutes, cover and set aside overnight.
- By morning, 75 to 90 percent of the indigestible sugars will have dissolved into the soaking water.
- Drain, then rinse the beans thoroughly before cooking them.
- COOKING BEANS: When cooking beans, do not add salt or acidic ingredients, like vinegar, tomatoes or juice- which slow the cooking substantially; add these ingredients when the beans are just tender.
- Cooking times vary with the types of beans used but also may vary with their age.
- Beans are done when they can be easily mashed between two fingers or with a fork.
- Always test a few beans in case they have not cooked evenly.
- Return the soaked, rinsed beans to the 5-quart saucepan.
- Cover the beans with 3 times their volume of water.
- Add herbs or spices (not salt), as desired.
- Bring to a boil; reduce the heat and simmer gently, uncovered, stirring occasionally, until tender (the time will depend on the type of bean, but start checking after 45-60 minutes).
- Do not boil them since this will break the skins.
- Check the level of the water and add more if it gets low.
- When the beans are tender, drain and use in recipes; or for later use, immerse them in cold water until cool, then drain well and freeze in 1- to 2-cup packages.
- One pound of dried beans will yield about 5 or 6 cups cooked beans.
- PRESSURE COOKING: This is one of the quickest ways to cook beans.
- After you've soaked 1/2 pound of beans, place them in a 4-quart pressure cooker with 4 cups water.
- Cook at 15 pounds pressure following the manufacturer's directions for the type of legume you are cooking.

SLOW-COOKED HOMEMADE BAKED BEANS
I like making baked beans from dried beans because they are not as mushy as canned baked beans. I found this recipe on a package of Publix dried navy beans. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

- QUICK SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups of water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).

- TO COOK BEANS: Add 6 cups fresh water to the beans after soaking. Cover and bring just to boiling on medium-high heat. Reduce heat to low and simmer gently with lid tilted, about 1 1/2 hours, stirring occasionally, or until desired tenderness. Stir gently and very little to prevent breaking of skins; add water, if needed, during cook time. Makes about 6 cups of cooked beans.
- TO MAKE BAKED BEANS: Cut bacon into 1-inch pieces. Combine with remaining ingredients in slow cooker. Cover and cook on low 8-10 hours. Stir occasionally, if possible. Makes about 10 cups of baked beans. Note: the number of servings below depends on how many other side dishes there are.

EASY, QUICK AND TASTY BASIC BEANS (CROCKPOT)
This is the easiest, fastest, tastiest way to prepare beans. I grew up in a Mexican family and needless to say, beans are a staple of our diet. My stepmom has been making us beans like this for years. This can be done with pinto or black beans & is the perfect thing to have on hand for quick, easy and inexpensive weeknight meals. These beans are healthy and loaded with tons of protein and fiber. You can easily refry these by mashing these in a pan with a little heated oil. I usually prepare a crockpot of beans on Monday and then have them all week in burritos, on tostadas, in bean bowls with chicken or beef....there are so many things that can be done with them. I know that the amount of salt sounds like a lot but if you use less, the beans wont have any flavor...I learned this through experience!
