The payoff of preparing dried beans-as opposed to using canned-boils down to tenderness and taste, plus the full-bodied, fragrant (and freezable!) herb-infused broth, aka pot liquor, that results after you simmer them. (If you have a pressure cooker, even better; they're done in a fraction of the time.)

1 pound dried beans, such as borlotti, scarlet runner, white, black, kidney, or pinto
1 small onion, peeled and halved through root end
4 cloves garlic, peeled
1 dried bay leaf
Kosher salt

Steps:

  • Cover beans with 2 inches water; soak overnight in the refrigerator. Drain and transfer to a large pot or Dutch oven; cover again with 2 inches water.
  • Add onion, garlic, bay leaf, and 2 teaspoons salt. Bring to a boil, then reduce heat to a simmer; skim and discard foam. Cook, adding more hot water as needed to keep beans fully submerged, until tender and cooked through, about 1 to 1 1/2 hours, depending on type and freshness.
  • Season to taste toward end of cooking. Remove and discard aromatics. Let beans cool in cooking liquid, then refrigerate in cooking liquid in an airtight container up to 5 days or freeze up to 3 months.

Steps:

  • Rinse beans.
  • Pour beans into crock pot and add enough water to cover beans an additional 2 inches.
  • Let beans soak for 6 hours or overnight. DO NOT turn crock pot on.
  • Drain and rinse beans. Return to crock pot and cover with fresh water as above.
  • Cook on low for 8 hours.
  • When beans are cool you can package them in zip lock bags. 1 2/3 cups equals about a can's worth.
  • These freeze beautifully.

  • Return the soaked, rinsed beans to the 5-quart saucepan.
  • Cover the beans with 3 times their volume of water.
  • Add herbs or spices (not salt), as desired.
  • Bring to a boil; reduce the heat and simmer gently, uncovered, stirring occasionally, until tender (the time will depend on the type of bean, but start checking after 45-60 minutes).
  • Do not boil them since this will break the skins.
  • Check the level of the water and add more if it gets low.
  • When the beans are tender, drain and use in recipes; or for later use, immerse them in cold water until cool, then drain well and freeze in 1- to 2-cup packages.
  • One pound of dried beans will yield about 5 or 6 cups cooked beans.
  • PRESSURE COOKING: This is one of the quickest ways to cook beans.
  • After you've soaked 1/2 pound of beans, place them in a 4-quart pressure cooker with 4 cups water.
  • Cook at 15 pounds pressure following the manufacturer's directions for the type of legume you are cooking.

I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

16 ounces dried navy beans
1 1/2 cups ketchup
1 1/2 cups water
1/4 cup molasses

This is the easiest, fastest, tastiest way to prepare beans. I grew up in a Mexican family and needless to say, beans are a staple of our diet. My stepmom has been making us beans like this for years. This can be done with pinto or black beans & is the perfect thing to have on hand for quick, easy and inexpensive weeknight meals. These beans are healthy and loaded with tons of protein and fiber. You can easily refry these by mashing these in a pan with a little heated oil. I usually prepare a crockpot of beans on Monday and then have them all week in burritos, on tostadas, in bean bowls with chicken or beef....there are so many things that can be done with them. I know that the amount of salt sounds like a lot but if you use less, the beans wont have any flavor...I learned this through experience!
