2 (3-oz) boxes lime Jell-O
1 cup evaporated milk
1 (20-oz) can crushed pineapple, juice reserved
1 cup water
½ cup chopped walnuts
1 cup mayonnaise
1 cup small curd cottage cheese
whipped cream for serving

Steps:

  • Drain pineapple in a colander over a large measuring cup to save juice. Add enough water to make 2 cups total liquid. Heat juice/water mixture over medium high heat and bring just to a boil. Add jello mixes and stir until completely dissolved. Remove from heat and allow to cool slightly, about 10 minutes. In a large bowl, whisk together evaporated milk and mayo until smooth. Slowly add jello mixture to mayo mixture, stirring to incorporate. Fold in crushed pineapple, cottage cheese and nuts. Transfer to a glass 8x8 baking dish. Cover and chill in fridge overnight before serving. To serve, cut into squares and top with whipped cream, if desired.

3/4 cup packed fresh parsley
1/4 cup roughly chopped fresh chervil (or more parsley)
1/4 cup roughly chopped fresh tarragon
3 tablespoons roughly chopped fresh chives
2 teaspoons capers
2 anchovy fillets
1 small clove garlic
2 scallions, chopped
Pinch of sugar
2 tablespoons fresh lemon juice
4 teaspoons white wine vinegar
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
2/3 cup mayonnaise
1/2 ripe avocado
Kosher salt and freshly ground pepper
3 strips thick-cut bacon
1 1/2 heads iceberg lettuce, cut into 6 wedges
Kosher salt and freshly ground pepper
1/2 ripe avocado, diced
1/4 cup small chervil sprigs
2 tablespoons finely chopped chives
1 scallion very thinly sliced

Steps:

  • Make the dressing: Combine the watercress, parsley, chervil, tarragon, chives, capers, anchovies, garlic, scallions and sugar in a blender or food processor.
  • Add the lemon juice, vinegar, mustard, Worcestershire sauce, mayonnaise and avocado and puree until pale green and very smooth; if too thick, thin with water 1 teaspoon at a time. Season with salt and pepper as needed.
  • Make the salad: Cook the bacon in a medium nonstick skillet over medium heat until browned and crisp, turning, about 5 minutes. Drain on a paper towel-lined plate, then crumble.
  • Arrange the iceberg lettuce wedges on a platter and season with salt and pepper. Spoon some dressing over the lettuce. Top with the diced avocado, bacon, chervil, chives and scallions.

This is a refreshing jello salad that is a staple of our family get togethers. This is a recipe from my Grandmother. We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

2 1/4 cups water
3 (3 ounce) boxes lime gelatin
1 (20 ounce) can crushed pineapple
8 ounces brick cream cheese, softened
1/2 cup milk
1 cup chopped pecans

Steps:

  • Dissolve gelatin in 2 1/4 cup boiling water.
  • Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
  • Add pineapple to gelatin.
  • Pour into 9 x 13 glass casserole and refrigerate until soft set.
  • Mix the softened cream cheese and milk together until combined.
  • Add the nuts to cheese/milk mixture.
  • Mix the jello mixture and cream cheese mixture together.
  • Refrigerate overnight and cut into squares to serve.
