This is another favorite from my favorite Waxahachie restaurant, The Dove's Nest. The recipe comes from their cookbook. This salad will keep in the refrigerator for several days.

1/2 cup vegetable oil
1/2 cup chopped onion
1/4 cup white wine vinegar
1/4 cup honey
2 teaspoons Tabasco sauce
salt and pepper
8 ounces smoked turkey, cubed
2/3 cup crumbled blue cheese
2/3 cup coarsely chopped pecans, toasted
1 cup red seedless grapes

Steps:

  • To make dressing, combine the oil, onion, wine vinegar, honey and Tabasco sauce in a blender container.
  • Process until smooth.
  • Season with salt and pepper.
  • To make salad, combine turkey, bleu cheese, pecans and grapes in a salad bowl and mix gently.
  • Add the dressing, tossing to coat.

This turkey salad with grapes makes a delicious luncheon salad, and it is wonderful in sandwiches. Add toasted pecans for extra flavor and crunch.

1 cup seedless red grapes (sliced)
1 cup celery (diced)
1/2 cup green onions (chopped)
Optional: 3/4 cup pecans (coarsely broken or chopped)
3 to 4 cups cooked turkey (diced)
Optional: 1 tablespoon fresh parsley (chopped)
1 teaspoon ​​lemon juice
3/4 to 1 cup ​ mayonnaise
1/8 teaspoon black pepper (freshly ground)
Salt, to taste

Steps:

  • Gather the ingredients.
  • In a bowl, combine the sliced grapes, celery, green onion, pecans (if using), turkey, and parsley (if using). Toss to blend ingredients.
  • In another bowl, combine the ​lemon juice, 3/4 cup of the mayonnaise, and pepper; blend well.
  • Stir the mayonnaise mixture into the turkey mixture until blended, adding more mayonnaise if needed. Add salt, to taste.
  • Serve in sandwiches or on greens or romaine lettuce leaves for a lighter lunch salad.

This is my favorite soup from a restaurant in Waxahachie, Texas called The Dove's Nest. The recipe comes from the restaurant's cookbook.

2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 1/2 cups chopped tomatoes or 2 (10 ounce) cans tomatoes and green chilies, chopped
6 tomatillos, chopped
1 medium jalapeno, seeded,minced
2 cups chicken stock
1 (7 ounce) can chopped green chilies
2 cups chopped cooked chicken
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 cup chopped cilantro
2 (19 ounce) cans cannellini or 2 (19 ounce) cans great northern beans
1 tablespoon fresh lime juice
salt and pepper
sour cream
shredded monterey jack cheese
fried corn tortilla strips

Steps:

  • Heat the olive oil in a large stockpot over medium-high heat.
  • Add the onion.
  • Saute for 3 to 5 minutes or until softened.
  • Add the garlic.
  • Cook for 1 to 2 minutes longer.
  • Do not brown.
  • Add the tomatoes, tomatillos and jalapeno.
  • Cook until the tomatillos are tender, stirring occasionally.
  • Add the chicken stock, green chilies, chicken, oregano, cumin, cilantro, beans and lime juice.
  • Cook until heated through, stirring frequently.
  • Season with salt and pepper.
  • Ladle the chili into serving bowls.
  • Serve garnished with a dollop of sour cream, shredded cheese and fried tortilla strips.

Here is a tasty summer salad. Crispy Iceburg Lettuce, Tomatoes, Green Onions topped with homemade Bleu Cheese Dressing. You could put any of your favorite salad toppings on this great summer salad. You will need a fork and a knife for this one.

1/2 head iceberg lettuce (cut into 2 wedges)
10 cherry tomatoes (quartered)
2 tablespoons sliced green onion tops
1/2 avocado (to garnish, sliced)

1/4 cup sour cream
3 tablespoons buttermilk
1 tablespoon lemon juice
1/3 cup blue cheese, crumbles
1/4 teaspoon kosher salt
fresh ground pepper (to taste)

Steps:

  • In a bowl, place all of the dressing ingredients and mix together.
  • Fold in the Bleu Cheese Crumbles at the end.
  • Place the Lettuce Wedges on a plate and pour some of the dressing over each wedge, top with tomatoes and Green Onion tops.

6 large nectarines, halved and pitted
canola oil
1/2 cup crumbled blue cheese
1/4 cup honey
fresh coarse ground black pepper

Steps:

  • Heat grill to high.
  • Brush the cut sides of nectarines with oil.
  • Grill cut side down until caramelized and brown, about 2 minutes.
  • Turn nectarines over and grill for 1 or 2 minutes more, until the flesh is almost soft.
  • Place the nectarines cut side up on a platter and divide the cheese among the cavities.
  • Drizzled with honey and grind fresh pepper over the top.
  • Serve immediately.
  • Yum!

2 pounds green grapes, halved
5-1/4 cups diced celery
1 to 1-1/2 cups chopped pecans, toasted
3 green onions, sliced
2 cups mayonnaise
1-1/2 cups chicken broth
3/4 cup vinaigrette
1 tablespoon prepared mustard

Steps:

  • In several large bowls, combine the turkey, grapes, celery, pecans and onions. In a large bowl, whisk the mayonnaise, broth, vinaigrette and mustard until smooth. Pour over turkey mixture and toss to coat. , Cover and chill for at least 4 hours before serving. Refrigerate leftovers.
