LEMON-GINGER BREW
No it's not green juice. It's Lemon-Ginger Brew. Drink it whenever you feel a bout of a cold coming on.

- Pulse 8 ounces ginger, peeled and chopped, in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30-40 minutes. Strain into a large jar and mix in 1/2 cup lemon juice and 1/3 cup agave syrup or pure maple syrup; add more lemon juice or agave, if desired. Let cool; cover and chill.
- Do ahead: Brew can be made 2 weeks ahead. Keep chilled.

Steps:
- Grate 2 tablespoons each of lemon and orange zest.
- Squeeze 1/3 cup lemon juice from 3 of the lemons. Set aside.
- In a food processor, pulse the ginger, honey, and sugar until just combined. Add the orange and lemon juices and process.
- Transfer to a large lidded container. Add the orange and lemon zests and 2 cups of boiling water and stir until the sugar dissolves.
- Cool to room temperature. Cover and refrigerate for at least 24 hours and up to 5 days.
- To serve, strain the ginger-beer base into a pitcher. Thinly slice the remaining lemon and orange to form circles. Add the slices and mineral water to the pitcher and stir. Serve over ice.

- Prepare ginger bug: In a glass jar, add 1 cup filtered water and 1 tbsp each ginger and sugar and stir to combine. Cover jar with a sheet of paper towel or a clean cloth and secure with a rubber band. Let ferment in a warm place away from direct sunlight for 24 hours. After 24 hours, stir in another 1 Tbsp each grated ginger and sugar and let ferment for another 24 hours. Repeat again each day until your bug is bubbly when you stir it. The bubbles are an indicator of an active ferment. Depending on the temperature of your house, this can take 2-7 days. Once your ginger bug is bubbly, you’re ready to make ginger beer!
- To make ginger beer: Place pitted and chopped cherries in a bowl and stir in 1/3 cup sugar. Cover with a towel and set aside.
- Meanwhile, in a saucepan, bring 5 cups filtered water to a boil. Add 4 tbsp grated ginger and remove from heat. Stir in 2/3 cup sugar until dissolved. Cover and let steep for about 30 minutes. Then strain into a large bowl using a fine-mesh sieve and allow to cool to room temperature.
- Once the strained ginger is room temperature, proceed with cherries. Add them and 1 cup water to a blender or food processor and blend. Strain cherry mixture with fine-mesh sieve into the strained ginger bowl, pressing on solids with a spatula to extract as much liquid as possible. Add the fresh lemon juice.

- Preheat the oven to 375° and line a baking sheet with parchment paper. In a bowl, whisk the flour with the granulated sugar, baking powder, lemon zest and salt. Using a wooden spoon, stir in the cream and 2 tablespoons of the lemon juice; fold in the candied ginger.
- On a lightly floured work surface, gently knead the dough just until it comes together. Pat into a 9-inch round, a scant 1/2 inch thick. Cut the dough into 8 wedges and arrange them 1 inch apart on the prepared baking sheet. Bake the scones for 20 to 25 minutes, until slightly firm and lightly browned on the bottom, pale on top. Let cool for 5 minutes, then transfer to a rack to cool completely.
- In a medium bowl, whisk the confectioners’ sugar with the remaining 2 tablespoons plus 2 teaspoons of lemon juice until the glaze is smooth. Drizzle the lemon glaze over the scones and let stand for 15 minutes before serving.
