COFFEE MALLOW DESSERT

Steps:
- Combine cookie crumbs and butter; set aside 1 tablespoon for topping. Press remaining crumb mixture onto the bottom and up the sides of two lightly greased 10-oz. custard cups; set aside. , Place coffee and eight marshmallows in a blender; cover and process until smooth. Add the remaining marshmallows; cover and refrigerate in the blender for 2 hours or until cold. Process again until smooth; transfer to a bowl. , In a small bowl, beat cream until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form. Gently fold into coffee mixture. Spoon into prepared cups; sprinkle with reserved crumbs. Refrigerate for at least 1-2 hours before serving.

CHOCOLATE BAR TORTE
My mom made this dessert every Christmas for 50 years. Now it's one of my family's traditions since she passed on.

Steps:
- Pour both amounts of milk into a saucepan, place over medium heat, and bring milk almost to a simmer, stirring often. Add marshmallows and chocolate candy bars. Stir until marshmallows and chocolate melt and the mixture is smooth. Set aside to cool.
- Whip cream in a large bowl until fluffy and cream holds stiff peaks when beaters are lifted straight up, about 5 minutes. Gently fold cooled marshmallow mixture into whipped cream.
- Combine graham cracker crumbs, sugar, and butter until crust mixture is evenly moist. Press mixture into the bottom of a 9x13-inch dish. Spread marshmallow filling evenly over the crumb crust. Refrigerate until set, about 2 hours.

- In a heavy saucepan, bring water to a boil; stir in coffee until dissolved. Reduce heat; add marshmallows and butter. Cook and stir over low heat until marshmallows are melted and mixture is smooth., Set saucepan in ice and whisk mixture constantly until cooled. Fold in whipped cream; spoon into pastry shell. Sprinkle with nuts. Refrigerate for at least 3 hours before serving. Garnish with whipped cream and chocolate curls if desired.

- In a medium bowl combine cookie crumbs and butter.
- Press into the bottom and about 1 1/2 inches up the sides of a 9 inch springform pan.
- Set aside.
- In a small saucepan combine hot fudge topping and coffee crystals.
- Heat and stir until smooth.
- Cool slightly.
- Spread fudge topping over the crumb mix in the springform pan.
- In a large bowl fold marshmallow creme into cool-whip until combined.
- Set aside.
- In a chilled large bowl, stir ice cream with a wooden spoon until softened.
- Fold in whipped topping mixture.
- spoon into crust.
- Sprinkle with chopped pecans and half of the grated chocolate.
- Cover and freeze for 6 hours or until firm.
- Before serving, let stand at room temperature 10 minutes.
- Drizzle with caramel topping and sprinkle with remaining grated chocolate.
- If desired garnish with pecan halves.

COFFEE-TOFFEE CRUNCH TORTE
Steps:
- For crust:
- Preheat oven to 350°F. Grind nuts with ground cookies and toffee in processor. Add 5 tablespoons butter; blend until nuts are finely chopped. To moisten crumbs, if necessary, blend in 1 tablespoon butter. Using plastic wrap as aid, press mixture onto bottom an dup sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Freeze 15 minutes.
- Bake crust until golden, about 12 minutes. Freeze crust.
- For ganache:
- Bring cream and corn syrup to simmer in heavy medium saucepan. Remove from heat. Add chocolate; whisk until melted and smooth. Cool to room temperature.
- For mousse:
- Whisk sugar, yolks, 1/3 cup water and espresso powder in large metal bowl. Set bowl over saucepan of simmering water (do not allow bowl to touch water); whisk until candy thermometer registers 160°F, about 3 minutes. Remove bowl from over water. Add nutmeg. Using electric mixer, beat egg mixture until cool and thick, about 5 minutes.
- Beat 2 1/2 cups cream, liqueur and vanilla in another large bowl until stiff peaks form. Fold cream mixture and toffee into egg mixture. Spoon half of mousse into crust. Drizzle 1/4 cup ganache over. Using tip of knife, swirl mixtures together. Carefully spoon remaining mousse over; smooth top. Cover and freeze torte overnight. Cover remaining ganache; chill.
- Rewarm remaining ganache over low heat, whisking just until slightly softened but not melted. If necessary, let stand until firm enough to pipe. Spoon ganache into pastry bag fitted with star tip. Run sharp knife around torte pan sides. Release pan sides. Pipe ganache in lattice design atop torte. Pipe ganache in star shapes around border. Garnish with almonds. (Can be prepared 1 week ahead. Freeze until lattice sets, then cover and keep frozen.)
ENGLISH MUFFIN CASSEROLE BREAD
This is a recipe I found years ago in a Better Homes and Gardens magazine. My children were raised on it, I made it that often. I haven't made it for quite a while now and just came across the recipe again. Think I will make it tonight! It is really good.

Steps:
- In large mixing bowl combine 1 cup of the flour and the yeast.
- In a saucepan heat the water, sugar, and salt til warm, stirring to dissolve sugar.
- Add to dry mixture in bowl.
- Beat at low speed with mixer for about 30 seconds, scraping bowl.
- Beat 3 minutes at high speed.
- By hand stir in enough remaining flour to make a soft dough.
- Shape into ball.
- Place in lightly greased bowl; turn once to grease surface.
- Cover; let rise until double (about 1 hour).
- Punch down.
- Cover; let rest about 10 minutes.
- Grease a 1 quart casserole; sprinkle with cornmeal.
- Place dough in casserole; sprinkle top with cornmeal.
- Cover, let rise til double (30 to 45 minutes).
- Bake at 400 degrees for 40 to 45 minutes.
- Cover loosely with foil if top browns too quickly.
- Remove from casserole; cool.

SOURDOUGH COFFEE CAKE
This recipe was originally published in a November 1978 Better Homes and Gardens magazine. Depending on your sourdough starter the flour may need adjusting so suggest holding back 1/4 cup of the flour until determined if needed.

- Preheat oven to 350 degrees f.
- In mixing bowl stir together the 1 cup flour, sugar, baking powder and salt.
- Cut in the first 1/4 cup butter till mixture resembles course crumbs.
- Combine sourdough starter, egg and vanilla.
- Add to dry ingredients, stirring well, should resemble cake batter -- add additional 1/4 flour if needed.
- Spread in a greased square baking dish (original recipe calls for 11 x 8, but not sure they still make that size pan.
- Spoon pie filling over top.
- Combine the remaining 1/2 cup flour, brown sugar and cinnamon. Cut in the remaining butter till the mixture resembles course crumbs.
- Sprinkle over fruit.
- Bake at 350 degree oven for 45 to 50 minutes.

- Dissolve coffee in boiling water, then dissolve the marshmallows in the hot coffee. Refrigerate to cool.
- When cool, fold in Cool Whip.

QUICK DOBOS TORTE WITH COFFEE CREAM
My mother used to make the most delicious Hungarian "Dobos torte" which took so much time to bake, layer by layer. I make my own version with frozen pound cake which saves so much time and all Dobos torte lovers love it just the same.

- Carefully slice each thawed pound cake into 6 to 8 horizontal even layers.
- Combine water, sugar, vanilla extract, and instant coffee in a saucepan over medium-high heat. Stir and bring to a boil. Reduce heat to a soft, slow, consistent boil with small bubbles. Stir frequently and cook until mixture starts to have a foamy look, about 1 hour.
- When cream starts to rise, continue stirring gently. If foam continues and does not settle by stirring, sprinkle with flour while stirring constantly, and allow to cook for about 5 more minutes. Coffee mixture should be a little syrupy and slightly caramelized. Don't overcook at this point once you reach the slightly syrupy stage or it will revert to a liquidy gritty texture which is undesirable to the final result of a fluffy cream.
- Remove from heat. Stir butter pieces into the coffee mixture until melted. Transfer to the refrigerator to cool down.
- Once cream is cooled, beat with an electric mixer until stiff and fluffy. Gently fold in whipped topping. Refrigerate for 2 more hours.
- Set the first layer on a cake platter and spread coffee cream in a thin layer on top. Add the 2nd cake layer and frost. Continue putting the torte together, sticking the individual layers together with coffee cream. Frost torte on the top and on the sides as well.

- Line bottom and side of 9-inch springform pan with 36 of the split ladyfingers, overlapping ladyfingers slightly and trimming as needed to completely cover bottom of pan. Reserve remaining ladyfingers for another use.
- Add milk to dry pudding mixes in large bowl. Add milk. Beat with wire whisk 2 min. Gently stir in whipped topping; spread into prepared pan. Refrigerate at least 2 hours.
- Place marshmallows, cut-sides down, over pudding just before serving. Broil, 4 inches from heat source, 1 to 2 min. or until marshmallows are puffed and golden brown. Cut into 12 wedges. Serve warm.

I just got my Better Homes and Gardens magazine after not subscribing for several years. I'm kind of disappointed. Not very many recipes, lots of ads, especially perscription drug ads which I am on a personal crusade against! BUT, hold on to your hats! I wish you could see the picture of this! This was a $400 winner. I'm going to try to make it soon, but it will have to wait for a special occasion, since we are on a big fat diet after ZWT3! Cooking time is chilling time.
