- Preheat oven to 425°. Place tomatoes in a foil-lined 15x10x1-in. baking pan. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Roast until tomatoes are softened, 10-15 minutes, stirring occasionally., Meanwhile, sprinkle fillets with salt and pepper. In a large cast-iron or other ovenproof skillet, heat oil over medium-high heat. Add fillets; cook 3 minutes on each side. Remove from pan., Add garlic to pan; cook and stir 1 minute. Add broth, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced by half, 1-2 minutes. Stir in roasted tomatoes; return salmon to pan. Bake until fish just begins to flake easily with a fork, 5-7 minutes.

- Preheat oven to 350 degrees. In a 9-by-13-inch baking dish, toss together oil, tomatoes, garlic, and 4 basil leaves. Season with salt. Bake until tomatoes are just wilted, about 20 minutes. Remove from oven and reduce heat to 275 degrees.
- Season salmon with salt and pepper; place, skin-side down, in dish with tomatoes. Spoon pan juices over fish and bake until just cooked through and a thermometer inserted into thickest part registers 120 degrees, about 15 minutes. Serve, sprinkled with remaining basil leaves.

- Preheat the oven to 450 degrees Fahrenheit.
- Heat the butter or oil in a skillet on medium heat. Add the onion and garlic, seasoning with salt and ground black pepper to taste. Sauté on medium heat until the onions and garlic are softened and cooked through, 5-7 minutes.
- In a large bowl, use a fork to mash the cooked salmon until it's flaky. (You can also used canned salmon or tuna, mash with a fork as well.) Add the cooked onions and garlic, the capers, mayonnaise, dijon mustard, lemon juice, fresh herbs, salt and ground black pepper. Mix until evenly combined.
- Place the sliced bread on a rimmed baking sheet. Toast the bread until it's lightly golden. Take out of the oven and use the sliced garlic cloves to rub all over the surface of each of the slices of bread. The garlic will rub right into the toasted bread (the crisp bread will sort of be a grating surface for the garlic). This gives the sandwiches a pleasant and mild garlic flavor without being too overpowering.
- Top the toasted bread with the salmon filling, spreading it out evenly over the bread. Place a slice of tomato and/or avocado on top of the salmon filling and then top with grated cheese.
- Bake in the oven for another 7-10 minutes, until the sandwiches are warmed through and the cheese is melted.
SALMON AND TOMATOES IN FOIL
Here is a simple recipe for salmon prepared en papillote (a fancy name for "in paper," though like most everyone else these days, you will use aluminum foil). Layer salmon, tomato and basil on lightly oiled foil and wrap it all up - you can even do it a night before cooking. When the time for dinner comes, you can steam, grill, roast or pan-grill the packages - though our testing shows roasting is easiest. You can substitute almost anything comparable for each of the ingredients: salmon can be replaced by any fish steak or fillet, or by boneless, skinless chicken breast. The herb and vegetable can also be varied at will, as long as the vegetable will finish cooking at the same time as the protein: if you were cooking broccoli, for example, you would have to cut it into small pieces; if carrots, you'd have to parboil them.

- For each of 4 packages, place one 12-inch-long sheet of aluminum foil on top of another. Smear top sheet with 1/2 tablespoon olive oil, and layer a fillet of salmon, 6 tomato halves, salt and pepper, 4 basil leaves and another half tablespoon oil. Seal package by folding foil onto itself and crimping edges tightly. Repeat to make other packages, and refrigerate until ready to cook, no more than 24 hours later.
- When you are ready to cook, heat oven to 500 degrees. Place packages in a roasting pan. (Or they can be cooked on top of the stove in 2 skillets over medium-high heat.) Cook 5 minutes (for medium-rare) to 8 minutes from the time the mixture starts to sizzle, or roughly 10 to 12 minutes total.
- Let packages rest a minute, and cut a slit along the top with a knife. Use a knife and fork to open the package. Spoon the salmon, garnish and juices onto a plate, and serve.

- In a medium sized frying pan, heat oil and saute onions, garlic& peppers over medium heat for about 10 minutes.
- Add remaining ingredients (except fish), bring to a boil, then lower heat& simmer for 5 minutes.
- Place the fish into a greased medium sized casserole dish.
- Pour the tomato mixture over the fish& bake, uncovered, in a preheated 350F oven for 30 minutes.
BAKED SALMON WITH ROASTED TOMATOES

- Prep salmon and oven: Thaw fish if frozen. Rinse the fish and pat dry with paper towels. Preheat the oven to 400°F. Grease a baking dish with cooking spray.
- Prep veggies and roast: In the prepared baking dish combine tomatoes, onions, oregano, oil, garlic, ¼ tsp of the salt, and ¼ tsp of the pepper. Toss to coat the tomatoes. Transfer the baking dish to the oven and bake for 15 minutes, uncovered.
- Bake salmon: Place fish, skin side down, on top of the tomatoes. Sprinkle fish with remaining ¼ tsp pepper and ¼ tsp salt. Bake, uncovered, for another 15 to 20 minutes or until the salmon is opaque and flakes easily. Salmon is done when the internal temperature reaches 145°F.
- Serve: Transfer the salmon from the baking dish with a spatula and top with roasted tomatoes and onions.

- Heat 3 tablespoons of the olive oil in a medium (10-inch) saute pan. Add the onion and saute over medium-low heat for 5 minutes, stirring occasionally, until very tender but not browned. Turn the salmon skin side down with a small metal spatula and transfer the pan to the oven for 8 minutes. (The salmon will not be completely cooked through.) - Reheat the tomatoes, season to taste, and serve hot, warm, or at room temperature along with the salmon.

- Season salmon fillets with salt and pepper and transfer to the skillet, skin-side up.
- Cook for about 7 to 8 minutes, or until browned and cooked about three quarters of the way through.
