This is a very tasty and easy recipe. I've even served this to people who swear they don't like rice and they love it. Have to make a double recipe to keep my husband from eating everyone's share! It makes an especially good side dish for chicken.

½ pound sausage
1 (6 ounce) package uncooked long grain and wild rice
1 (4.5 ounce) can sliced mushrooms

Steps:

  • Place sausage in a medium skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • Meanwhile, in a saucepan bring water to a boil. Add rice and stir in mushrooms and sausage. Reduce heat, cover and simmer for 20 minutes.

3 tablespoons unsalted butter, divided
1/2 cup chopped yellow onion
Kosher salt
2 cups pure wild rice (10 to 12 ounces)
1/4 cup finely chopped scallions, white and green parts (2 scallions)
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan, add the onion, and cook over low heat for 5 to 10 minutes, until translucent. Add 5 cups of water, 2 teaspoons of salt, and the wild rice. Bring to a boil, reduce the heat to very low, and simmer, covered, for 50 minutes to 1 hour, until the rice is tender. Drain well.
  • Place the drained rice in a bowl, add the remaining tablespoon of butter, the scallions, 1 1/2 teaspoons salt, and the pepper. Taste for seasonings and serve hot.

1 chicken bouillon cube
1 big onion, finely chopped

Steps:

  • Rinse the rice under water about 2 or 3 times.
  • Add the oil to the pot and add the onion.
  • When starting to get a light brown color add the rice.
  • Add water to just cover the top of the rice.
  • Add chicken cube and pepper.
  • The pot is covered and is left on medium heat for 30 minutes.
  • The rice should be checked on to insure the water has not boiled off.
  • If the water is low, add more.
  • After 30 minutes, the rice should be done.
  • If there is too much water , leave the cover off and leave on heat for a few more minutes to allow the water to boil off.

2 cups chicken broth

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
  • Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
  • Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

2 cloves of garlic (minced)
2 cups of wild rice blend (rinsed)
3 cups of vegetable stock (chicken stock would also work)
1 teaspoon kosher salt
½ teaspoon black pepper
½ cup chopped fresh parsley

Steps:

  • Heat oil in a large heavy bottomed pot over medium-high heat. Add in onion, carrots, and celery and saute until softened, 4-5 minutes.
  • Stir in mushrooms and cook, stirring frequently, for about 5-7 minutes. Add in garlic and saute for 30 seconds.
  • Stir in wild rice blend, vegetable stock, salt and pepper. Put the lid on and bring it to a boil. As soon as it comes to a boil, turn the heat down to low and simmer for 45-50 minutes or until the liquid is mostly absorbed and wild rice blend is cooked through.
  • Once it is cooked, let it rest for 5 minutes. Garnish with parsley and serve.

4 garlic cloves (minced)
1 tsp dry Italian seasoning

  • Cook rice according to package instructions, using the broth instead of water.   • Heat the olive oil in a small saucepan over medium heat. Add the pine nuts, garlic, zest, and thyme, swirl the pan until the nuts and garlic are beginning to brown, about 2 minutes.
