- Heat oven to 350°F. Spray 9-inch tart pan with 1-inch rim and removable bottom with cooking spray.
- In large bowl, beat 3/4 cup softened butter and 1/4 cup sugar with spoon until well mixed. Stir in flour until blended (dough will be crumbly but can be pressed together). Pat and press dough very firmly on bottom and up sides of tart pan. Bake 14 to 18 minutes or until crust is set in center but still pale. Cool 15 minutes.
- In 2-quart saucepan, mix 1 cup sugar and the cornstarch. Gradually stir in water, lemon zest and lemon juice until smooth. Cook and stir over medium-high heat. Heat to boiling; boil 1 minute, stirring constantly, until mixture is bubbly and thickened. Remove from heat.
- In small bowl, beat egg yolks with whisk. Gradually beat about 1/2 cup hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture in saucepan. Cook over medium heat, stirring constantly, until mixture starts to gently boil. Cook 2 minutes longer, stirring constantly. Remove from heat; stir in 2 tablespoons butter. Pour over cooled baked crust. Cool at room temperature 15 minutes; refrigerate at least 3 hours until set.
- When ready to serve, sprinkle fresh berries on top. Serve with whipped cream. Store loosely covered in refrigerator.

MEYER LEMON CURD TART

- Preheat the oven to 425 degrees F.
- For the dough:
- Put the butter, sugar, flour, egg yolk and salt in a food processor and pulse for 30 to 60 seconds or until the mixture has a grainy consistency, or what I like to call the "Parmesan cheese" stage. Add half of the water and pulse the food processor 2 to 3 times. The dough should start to come together, add the remaining water if needed. Check the consistency of the dough by clenching a small handful in your fist. If the dough stays together it is the proper consistency. If not, pulse the dough with a little more water. When the dough has reached the proper consistency, dump it out on a clean work surface. Using the heel of your hand, schmear the dough straight forward and roll it back with your fingertips. Repeat this process 1 to 2 more times, dust with flour if needed. Form the dough into a disk, wrap in plastic wrap and refrigerate for at least 30 minutes.
- On a lightly floured work surface, roll the dough out to 1/8 to 1/4-inch in thickness. Lay the dough in the tart pan. Push the dough into the sides of the tart pan by rolling a small scrap of dough into a ball and pushing it into the dough. Roll over the top edge of the tart pan with the rolling pin to cut the extra dough from the pan and create a crisp edge. Cover the dough with aluminum foil and gently poke the foil into the side edges to fit the pan. This will help to keep the sides of the tart tall and straight as it cooks. Fill the tart shell with the dried beans and place in the preheated oven. Bake for 10 to 12 minutes, remove the foil and beans and bake for 2 to 3 minutes more. Remove the tart shell from the oven and cool. The dough should be golden and crisp.
- Preheat the oven to 300 degrees F.
- In a bowl, combine the lemon juice, zest, sugar, eggs and salt and whisk to a homogeneous consistency. Place in saucepan and bring to a medium heat. Cook, whisking, constantly until the mixture has thickened, about 12 to 15 minutes. Remove from heat and whisk in the butter, 2 pats at a time until it's incorporated and has a silky consistency.
- Pour the lemon curd into the prepared tart shell and bake in the preheated oven until the lemon curd has set, about 15 minutes. Let cool completely before cutting.
- To garnish: In a small bowl, mix together blueberries, sugar and lemon juice. Serve alongside tart slices.
FRESH RASPBERRY LEMON CURD TART

- Thaw puff pastry for 1 hour in room temperature, until defrosted, or in the refrigerator overnight.
- Prepare the Lemon Curd. Heat a small saucepan on medium-low heat. Add lemon juice, zest, sugar, and eggs and whisk together until sugar melts into the mix. Add butter and whisk regularly. The lemon curd should begin to thicken and small bubbles will begin to form on the surface, about 6-8 minutes. Remove from heat once the lemon curd is thick enough for the whisk to leave marks on the surface.
- Transfer the lemon curd into another bowl, cover with plastic wrap, and refrigerate for 1 hour, or until the lemon curd is cold.
- In the meantime, prepare the puff pastry. Roll out the puff pastry to about 10 inches by 14 inches.

- Mix the butter and sugar together in the bowl of an electric mixer fitted with a paddle attachment until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Press the dough into a 10-inch-round or 9-inch-square false-bottom tart pan, making sure that the finished edge is flat. Chill until firm.
- Meanwhile, preheat the oven to 350 degrees F.
- Butter 1 side of a square of aluminum foil to fit inside the chilled tart and place it, buttered side down, on the pastry. Fill with beans or rice. Bake for 20 minutes. Remove the foil and beans, prick the tart all over with the tines of a fork, and bake again for 20 to 25 minutes more, or until lightly browned. Allow to cool to room temperature.
- Remove the zest of the lemons with a vegetable peeler or zester, being careful to avoid the white pith. Squeeze the lemons to make 1/2 cup of juice and set the juice aside. Put the zest in a food processor fitted with a steel blade. Add the sugar and process for 2 to 3 minutes, until the zest is very finely minced. In the bowl of an electric mixer fitted with a paddle attachment, cream the butter with the sugar and lemon zest. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.
- Pour the mixture into a 2-quart saucepan and cook over low heat, stirring constantly, until thickened, about 10 minutes. The lemon curd will thicken at about 175 degrees F, or just below a simmer. Remove from the heat.
- Fill the tart shell with warm lemon curd and allow to set at room temperature.
LEMON TART
There are different ways to make a lemon tart. At Bouchon, the French Laundry, and Per Se, we use a sabayon method, in which the eggs are first cooked with the lemon juice and sugar over hot water, then the butter is gradually incorporated - an easy method that results in a consistently good lemon custard or curd. The crust is made with sweet and nutty pine nuts, which I think are the perfect balance for the rich, tart custard.

- For the crust:
- Preheat the oven to 350°F. Generously butter and flour a 9-inch fluted tart pan with a removable bottom and refrigerate it while the oven preheats.
- Remove the tart pan from the refrigerator. Use your fingertips to press the chilled pine nut dough evenly over the bottom and up the sides of the pan. Trim off any excess dough.
- Bake the crust for 10 to 15 minutes, then rotate it and bake for another 10 to 15 minutes, or until it is golden brown. Remove the crust from the oven and let it cool while you make the filling. (There may be some cracks in the crust; they will not affect the finished tart.)
- For the sabayon:
- Bring about 1 1/2 inches of water to a boil in a pot that is slightly smaller than the diameter of the bowl you will be using for the sabayon. Meanwhile, in a large metal bowl, whisk the eggs, yolks, and sugar for about 1 minute, or until the mixture is smooth.
- Set the bowl over the pot and, using a large whisk, whip the mixture while you turn the bowl (for even heating). After about 2 minutes, when the eggs are foamy and have thickened, add one-third of the lemon juice. Continue to whisk vigorously and, when the mixture thickens again, add another one-third of the lemon juice. Whisk until the mixture thickens again, then add the remaining lemon juice. Continue whisking vigorously, still turning the bowl, until the mixture is thickened and light in color and the whisk leaves a trail in the bottom of the bowl. The total cooking time should be 8 to 10 minutes.
- Turn off the heat and leave the bowl over the water. Whisk in the butter a piece at a time. The sabayon may loosen slightly, but it will thicken and set as it cools. Pour the warm sabayon into the tart crust and place the pan on a baking sheet.
- Preheat the broiler. While the sabayon is still warm, place the tart under the broiler. Leaving the door open, brown the top of the sabayon, rotating the tart if necessary for even color; this will take only a few seconds, so do not leave the oven. Remove the tart from the broiler and let it sit for at least 1 hour before serving. Serve at room temperature or cold.

- In the bowl of a stand mixer or mixing bowl with a spatula, cream the butter and sugar for just a minute. Add the vanilla extract, salt, and egg yolk - and combine well.Tip - we do not want to add too much air into our pastry so don't cream it too much.
- Next, fold the flour and combine well but don't overwork the dough. Make a disc and wrap it in plastic wrap. Chill in the fridge for at least two hours or overnight. Until firm enough to roll. Tip - overworking the dough will activate the gluten and make the pastry tough.
- Dust the work surface lightly with flour and roll the chilled dough to about 1/4 inch thickness. Tip - roll carefully from the center out turning as you go. This is a delicate pastry that breaks easily but is easy to patch up.
- Use your 9-inch tart pan as a guide to know how big you need to roll it. Transfer the dough to the tart pan.Tip - to transfer the dough easily, roll over the rolling pin and then unroll over the pan.
- Gently press the dough into the tart pan making sure to press down into the shape of the pan.Tip - this dough is delicate so if it breaks don't worry so much. Just patch it and do the best you can. It will be filled with curd so no one will see the patches ????
- Trim the excess dough at the edges with a rolling pin, or your thumb. Chill the tart shell for a minimum of 30 minutes.
- Preheat the oven at 375°F / 190°C / Gas Mark 5
- Line the chilled dough with parchment paper and fill it with baking beans or pie weights. Tip - the best way to line the pie with parchment is to scrunch the paper into a ball, open it, and line with the crumpled paper.
- Bake for 15 to 20 minutes until the edges are lightly starting to brown. Remove the parchment paper and weights.
- Continue to bake the empty shell for 10 to 15 minutes more until lightly golden. Cool on a cooling rack until completely coldTip - this is a fully baked tart shell and can be used to add any filling once cooled completely.
- Place a saucepan with 2-inches of water on medium heat. You will need a heat-proof bowl that can be set on the saucepan.
- In the bowl over the saucepan- add the egg yolks, egg, salt, cornstarch, and sugar. Don't place it over the saucepan yet.
- Whisk until light, and fluffy. The sugar should almost melt. Gradually, add the lemon juice and lemon zest.
- Place the bowl on the saucepan and continue to whisk as the mixture thickens. The mixture should cook gently with the steam from the water in the saucepan below.Tip - while you don't want the heat too high you also don't want it too low otherwise it will take too long to cook.
- Continue to stir and cook until it thickens enough to coats the back of your wooden spoon. About 10 to 15 minutes Depending on the heat it can take up to 20 minutes. Remove from heat. Tip - if the curd is too thin it will not set when chilled in the tart. so make sure the curd is thick and coats the back of the spoon thickly.
- Gradually add cubes of chilled butter one at a time. Make sure each piece is well incorporated. The mixture will continue to thicken as it cools.
- Once all the butter is incorporated, strain it through a mesh or a strainer. Tip - it is essential to strain the curd so you remove the zest as well as any cooked eggs. This way the tart will be smooth and creamy
- Wrap with plastic wrap making sure the plastic touches the top surface of the curd to prevent skin from forming. Tip- this lemon curd can be poured into a mason jar and used as a condiment over toast etc.
- Pour the lemon curd into the baked and cooled tart shell. Let chill in the fridge for a few hours.Tip - the tart will set in about 4 hours but it is best to leave overnight. A chilled tart tastes better and cuts nicer slices too.
- Dust with powdered sugar. Garnish with lemon slices.

These Lemon Curd Tartlets are a delicious and fancy little dessert to serve for a party or afternoon tea. Buttery, crunchy and oh so tangy, these Mini Lemon Tarts combine a homemade shortcrust pastry and creamy lemon curd into a delicious bite!

- Place the Flour, Icing Sugar and Salt in the bowl of your Food Processor and pulse to mix (see note 1 if making by hands). Add the cold Butter cut into small cubes, then mix to get very small crumbs.
- Whisk the egg in a separate bowl and add it to the food processor. Slowly pusle until a dough starts to come together (see note 2).
- Bring the dough together into a ball and roll between two sheets of baking paper to be about 3mm or 1/8inch thick. Place on a flat tray and leave in the fridge to chill and rest for at least 1 hour, or up to 24 hours.
- Remove the baking paper and cut out small rounds of pastry using a round or fluted cookie cutter (see note 3). Gently slide each piece of dough into a muffin pan, pressing on the bottom and the edges to remove any air bubbles that could be trapped under the pastry. Prick the bottom with a fork and place back in the fridge to rest and chill for at least 1 hour, or up to 24 hours.
- Preheat your oven on 160'C/325'F and place the muffin pan in the freezer while the oven is preheating.
- Line each tartlet shells with a small piece of baking paper and fill with baking beads, rice or beans. Bake for 15 minutes, then remove the weights and baking paper and bake for another 15 minutes, or until golden and dry to the touch. Set aside to cool down completely.
- Place the Egg Yolks, Sugar and Lemon Juice in a small pot. Whisk to combine then turn on very low to low heat. Whisk for a few minutes or until the liquid looks like it is starting to thicken - about 3 to 5 minutes.
- Cut the butter into small cubes and slowly add them to the pot. Whisk until melted and combined each time before adding more. Add the Lemon Zest
- Cook on low heat for 5 to 15 minutes or until the curd has thickened. Continuously whisk to avoid lumps (see note 4).
- To check if the curd is cooked, dip the back of a spoon into the curd then draw a line in the curd with your fingers (be careful, it will be hot). Tip the spoon down and check if any of the curd is dripping down over the clear line. If the line stays clear, the curd is ready. If the curd pours over the line, it needs to cook for longer.
- While still warm, pour the curd into the tartlet shells. Gently tap each tartlet against a hard surface to remove any air bubbles, then place in the fridge to set for at least 2 to 3 hours (see note 5).

- To make the lemon curd: In a medium heatproof bowl, place eggs, sugar, lemon zest, lemon juice, and heavy cream, if using, and whisk to combine. Place the bowl over a saucepan of simmering water (bain-marie). Cook on moderate heat, whisking constantly, until mixture becomes thick (mine was ready in 10 minutes, but it can take up to 20). If you have a thermometer, it should register 170°F/75°C; otherwise, it should coat the back of a wooden spoon and leave a clear pass if you run your finger through it. The curd will thicken more once cooled.
- Remove from heat and immediately strain mixture through a sieve. Add butter, a few cubes at a time, and whisk until completely melted and incorporated, and mixture is smooth. Take your time with it-the whisking makes for an airy and light texture. Allow to cool to room temperature before filling the tart. (Lemon curd can be kept in an airtight container in the fridge for up to a week, or can be frozen for up to 2 months. To thaw, place overnight in the fridge. Whisk the mixture to smoothen it before using.)
- Fill the tart shell with lemon curd, then refrigerate for at least 4 hours until chilled. Serve with berries and whipped cream if you like. The tart is rich, so cut your servings small.

- Preheat the oven to has 7, 220C, fan 200°C Line two baking sheets with nonstick baking paper.
- Unroll the puff pastry sheet, lay it on a work surface, then cut into 8 rectangles. Lightly score about 5mm (1/4 in) from the edges of each rectangle with a sharp knife, to give a narrow border. - In food processor, pulse the flour, sugar, butter and salt just until moist crumb come together.
- Transfer dough to a 9-inch round tart pan with a removable bottom; with floured fingers, press evenly into bottom and up side of pan.
- Prick the dough with a fork. Place in the freezer for 15 minutes (until firm). Freeze until firm, 10 to 15 minutes; prick all over with a fork. Place the pan on a backing sheet and bake for 25-30 minutes until golden. Bake until golden. If dough puffs while baking, gently press with a spoon back into the pan; cool completely.
- Let cool completely before adding the lemon curd.
- Using a vegetable peeler, remove the colored zest from the lemons, leaving the white pith and add the zest to your sauce pan.
- Combine the lemon zest, lemon juice, sugar, and eggs in a small saucepan on medium heat, whisking constantly.
- Bring the mixture to a simmer, whisking the entire time for at least 10 minutes.
- Place the diced butter in a medium bowl.
- Place the pan over medium heat and add in the butter (or vegan butter). Stir until the butter has melted. Keep stirring until the curd is thick enough to coat back of a wooden spoon. Take care not to boil and to whisk very quickly; 5-7 minutes.
- Spoon out the curd over a fine-mesh sieve into a glass bowl. Be sure to spoon it out a small portion at a time into the sieve. Place plastic wrap over the surface of the curd let the lemon curd cool slightly, then spread it in the prepared tart shell.
- Chill the tart for at least 1-2 hours, or until the filling is firm. Unmold before serving. Dust with confectioner's sugar.
LEMON CURD TARTS
These lemon curd tarts are a staple dessert at my tea parties. I can make them quickly without even measuring the ingredients using a pastry bag to fill the small shells. The crust remains crunchy for several hours, so I make them early the morning of the tea and then refrigerate them. I also serve these at wedding and baby showers. For variation, you can place 1/4 teaspoon raspberry spread underneath the lemon curd and garnish with a fresh raspberry, omitting the cinnamon. Another variation is to use lime curd instead of lemon, both of which can be found in the baking aisle of the grocery store.

- Wrap the dough in plastic wrap and refrigerate it for one hour.
- Once the dough is chilled, heat your oven to 350°F.
- Working on a floured surface, roll the dough to 1/8-inch thickness. Place your tart shell tins underneath the dough and press down on the crust (or roll over it with your rolling pin) to get a perfect cut for the shell.
- Use a fork to dock the crusts by poking them 2-3 times. Line the inside of the shells with dried beans or pie weights.
- In a small bowl, whisk together the egg yolk and 1 Tablespoon water; set aside.
- Bake at 350°F for 25 minutes then, remove the weights and foil and brush the crusts with the egg wash. Bake for another 15 minutes, or until the shells are golden brown and cooked through.
- Cool completely on a wire rack.
- Spoon 1 Tablespoon of lemon curd into each tart shell. Garnish with fresh berries, if desired.

- Preheat oven to moderately hot 210°C/190°C gas. Place flour, custard powder, sugar and butter in food processor. Using pulse action, press button for 30 seconds or until mixture is fine and crumbly. Add egg yolk and almost all the water, process for 20 seconds or until the mixture just comes together when squeezed, add more water if necessary. Turn onto a lightly floured board, knead gently to form a smooth dough. Cover with plastic wrap and refrigerate 20 minutes.
- Brush a shallow 20 cm round flan tin with melted butter or oil. Roll out pastry between two sheets of plastic wrap to cover base and sides of tin. Line tin with pastry; trim edges.
- Cut a sheet of greaseproof paper large enough to cover pastry-lined tin. Place over pastry and spread a layer of dried beans or rice evenly over paper. Bake for 10 minutes, remove from oven and discard paper and beans. Return to oven for 7 minutes or until pastry is golden. Cool.
- To make Filling: Reduce oven to moderate 180°C. Mix together eggs, lemon rind and juice, sugar, cream and butter. Spread into prepared tin. Bake 35 minutes or until set. Leave to cool to room temperature; refrigerate 2 hours or until firm. Serve cold.
