Number Of Ingredients 12

3/4 cup flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup butter
1/4 cup chocolate chips
1/4 cup cocoa
2 eggs, lightly beaten
1 cup sugar
2 -3 teaspoons vanilla extract
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)
chocolate chips, for garnish
chopped nuts (to garnish)

Steps:

  • Preheat oven to 350.
  • In a bowl combine flour, baking powder, and cinnamon.
  • Set aside.
  • In a small pot melt butter over low heat.
  • Add chocolate chips and cocoa while stirring constantly.
  • Remove from heat when chocolate chips are just about melted.
  • In a large bowl combine eggs, sugar, and vanilla.
  • Add in flour mixture and chocolate mixture alternately stirring just until blended.
  • DO NOT OVERMIX.
  • Spoon into well greased muffin tin or paper cups that have been lightly sprayed with oil.
  • (muffins tend to stick).
  • Sprinkle muffins with chocolate chips and chopped nuts.
  • Bake for 20 minutes or until a toothpick inserted comes out clean.

This recipe goes back to when my son was small and that is quite a while back, and I still make them, these are moist and rich no need for an electric mixer for this recipe it's all mixed with a wooden spoon, I have even added in chopped walnuts or mini chocolate chips, my recipe #89207 works great with these :)

3/4 cup good quality baking cocoa
1 teaspoon baking powder (heaping)
3/4 cup butter or 3/4 cup margarine, melted
1/2 cup boiling water
1 tablespoon vanilla
1 1/4 cups sugar (or to taste)
2 eggs
1 1/3 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mini chocolate chip (optional)
1/2 cup walnuts (optional)

Steps:

  • Set oven to 350°F.
  • Line 12 muffin tins with paper liners.
  • In a medium bowl combine cocoa and baking powder; mix to combine.
  • Add in boiling water; mix well with a wooden spoon to combine.
  • Add in the melted butter and vanilla; mix well.
  • Add in the sugar, mix well with a wooden spoon.
  • Stir in eggs with a wooden spoon; mix until combined.
  • Mix the flour with salt; add in the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
  • Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
  • Using an ice cream scoop fill each of the muffin tins almost to the top.
  • Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
  • Cool, drizzle glaze over or frost with buttercream frosting.

2 1/3 cups water
1 (20 ounce) package low-fat brownie mix
2 tablespoons baking powder (some are saying 2 tspns)

Steps:

  • Soak all bran in water for a couple of minutes.
  • Add baking powder to cereal and stir.
  • Add brownie mix and stir to combine.
  • Spoon mix into medium sized muffin tins lined with muffin liners or sprayed with nonstick cooking spray. Eacg muffin cup should be 3/4 full.
  • Bake in oven @ 350 for about 20-25 minutes.

Ultimate Brownie Muffins image

These are the ultimate brownie muffins-dark, rich, dense, and fudgy with a deep to-die-for chocolate flavor.

Number Of Ingredients 7

4 oz/113 g bittersweet or semisweet chocolate (, coarsely chopped)
½ cup (1 stick/113 g) unsalted butter, cut into small pieces
1/3 cup plus 1 tablespoon ((55 g/2 oz) all-purpose flour)
1/3 cup (35 g/1.2 oz) unsweetened cocoa powder (Dutch-processed)
1/8 teaspoon salt
2 large eggs
¾ cup (150 g/5.3 oz) granulated sugar

Steps:

  • Preheat oven to 350F/180C. Line 12 muffin cups with liners. Set aside.
  • To make the brownies: In a medium heatproof bowl, place chocolate and butter. Heat mixture in the microwave in 20-second intervals, stirring between each interval, until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally. Set aside.
  • In a small bowl sift flour, cocoa, and salt. Set aside.
  • Using a mixer fitted with the whisk attachment, whisk eggs and sugar on high speed until thick and pale, about 4 minutes. Reduce speed to low and slowly add in chocolate mixture. Stop the mixer. Add flour mixture and fold, using a rubber spatula, just until combined. Do not overmix.
  • Divide batter between liners, filling them about ¾ full. Bake for 13-16 minutes or until a toothpick inserted into the center of the muffins comes out with moist crumbs and not dry. Be careful not to overbake as this will make the brownies dry. Transfer to a wire rack and let cool for 10 minutes before removing from pan. Allow muffins to cool completely on a wire rack.
  • Store muffins in an airtight container at room temperature or in the refrigerator for up to 2 days. Allow to reach room temperature before serving.

For a special someone's quick fix or a group of friends, these are delicious!

8 ounces reduced-fat cream cheese
2 tablespoons sugar (or Splenda)
1 (20 ounce) box walnut brownie mix (moist kind with walnuts)
3 eggs
1/2 cup vegetable oil
1/4 cup water
1 cup chocolate frosting (or thick chocolate pudding)
powdered sugar

Steps:

  • In a small bowl, beat cream cheese and sugar until light and fluffy. Set aside. Spray a jumbo (6) muffin tin with bakers joy or non-stick cooking spray and also set aside.
  • Preheat oven to 350F (or according to the box directions). Make brownie mix according to the (moist cake-like version) recipe on the box using the eggs oil and water.
  • Spoon about 2 Tbsp of batter into each greased muffin tray. (Caution: Do not use muffin paper, they will stick to the paper).
  • Drop equal portions of cream cheese (about 2 tsp) mixture into the center of each muffin, then top with remaining brownie batter. Bake for 20-30 minutes, or as package directs.
  • Allow to cool, then spread chocolate frosting (or pudding) on top followed with a sprinkle of powdered sugar.

Longmeadow Farm is trying something new. I feel inspired to make a nice warm treat, one that is a little less caloric but still captures that down on the farm taste. This recipe was adapted from a blog "Culinary Adventures" and since I had some canned pumpkin in the old pantry, I considered, and pondered and thought what the heck! After all, I don't need to be looking like one of our beautiful cows, "Flossy" as she is about ready to calve. And besides, it would be nice to fit into a smaller size overalls for the farm chores. Please note, my oven bakes these in exactly 15 minutes. I also have a pizza stone that stays put in the oven all the time, and radiates the heat a bit more. However; you may have to adjust baking times up or down depending on the accuracy of your oven. Most people are stating the 18 minute mark. I use the toothpick method of sticking it in the middle of the muffin to check for doneness. If it comes out clean, then your in business. Also note: I make these now for my vegan son, using a cake mix that is only soy and wheat based and a special dark chocolate that does not contain any dairy or eggs as well. For fun and frolic, I give em' a boost of sprinkled powdered sugar on the top.

1 (15 ounce) can pumpkin (not pie filling)

  • I use my stand mixer and really mix it well.
  • It's important to remember this will be very thick and you may ponder about this, but really it's okay.
  • Scoop into sprayed muffin tins with a small iced tea spoon.
