TRIPLE CITRUS CHICKEN MARINADE

A bright and flavorful chicken marinade made with a trio of fresh citrus! Because why just use one when you can use three? It's made with orange, lemon and lime which is perfect for creating a vibrant grilled chicken marinade! This is easy to make and perfect for summer.

1/2 cup fresh navel orange juice
2 tsp fresh orange zest
2 Tbsp fresh lemon juice
1 tsp lemon zest
2 Tbsp fresh lime juice
1/2 tsp lime zest
1/4 cup olive oil
3 Tbsp chopped shallot or red onion
1 Tbsp minced fresh garlic
1 Tbsp chopped fresh rosemary ((or 1 tsp dried))
2 tsp dijon mustard
2 tsp honey
1 1/2 tsp salt, (or to taste)
1/2 tsp freshly ground black pepper.
4 - 5 (6 oz) boneless skinless chicken breasts or thighs

Steps:

  • In a mixing bowl whisk together all ingredients except chicken until well combined.
  • Place chicken in a gallon size resealable bag or dish.
  • Pour marinade over chicken. Transfer to refrigerator and let rest at least 1 hour and up to 6 hours.
  • Preheat a grill over medium-high heat. Remove chicken from marinade and cook on grill until center registers 165 degrees in center of thickest portion, turning once halfway through cooking (reduce grill temperature as needed if chicken is browning too quickly).
  • Let chicken rest 5 minutes before serving. Garnish with chopped fresh parsley if desired.

3 lbs Boneless Skinless Chicken Breasts
1 Lemon (Zested and Juiced)
1 Lime (Juiced)
½ cup Canola or Avocado Oil
2 tsp Garlic Powder
1 1/2 tsp dried Cilantro
1 tsp Sea Salt

Steps:

  • In small mixing bowl, combine all ingredients, except chicken, and stir well.
  • Add mixture and chicken to Freezer Ziploc Bag.
  • Place in the refrigerator to marinate for several hours or overnight, turning and flipping several times.
  • When ready for dinner, remove the chicken from the bag, toss the marinade out, and get ready to grill!
  • Grill your pre-marinated chicken on the grill outside {8 minutes on each side at 400 degrees or until internal temperature of your chicken is 165 degrees}, or on a grill pan inside.
  • If you're not ready to cook it yet... after adding the chicken and marinade to the bag, place directly in the freezer for some pre-marinated chicken later! {just pull out of the freezer, and defrost in the fridge... letting all of the yummy flavors soak into the chicken} prior to cooking.

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

Steps:

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.

2 1/2 - 3 pounds chicken (cut up or 1 whole chicken, spatchcocked (see instructions below))
1/4 cup lime juice
1/4 cup lemon juice
1/3 cup dry white wine ( or orange juice)
1 clove garlic (minced)
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon thyme
3 tablespoons butter

Steps:

  • Place the chicken in a bowl. Combine the lime and lemon juices, wine, garlic, salt, pepper and thyme. Pour over the chicken, turn to coat well and let stand for 30 minutes, covered.
  • Preheat oven to 425°F.
  • Arrange the chicken in a single layer in a well-greased 13 inch x 9 inch baking pan. Dot the chicken pieces with the butter. Add a bit of the marinade to the baking dish but discard the rest. Bake uncovered at 425°F for 40 - 50 minutes or until the chicken is fork tender. Turn as needed to cook evenly.

1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons each lemon juice and lime juice

4 garlic cloves, peeled
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/4 cup lime juice, fresh is best

Steps:

  • Combine all ingredients except for the steaks in a food processor or blender. Process until the mixture is a smooth liquid paste.
  • On a plate or in a zip top bag, combine 1/2 of the marinade with the steaks, making sure the meat is well coated. Let sit in the refrigerator for 1/2 hour. Reserve the remaining marinade.
  • Grill the steaks over high heat, 2-3 minutes per side, basting if desired with the remaining marinade.

Steps:

  • Combine ingrediets for your marinade and pour over meat or veggies. Refrigerate for 1 hour or overnight.
  • Heat small saucepan over medium. Add olive oil, garlic, and chili powder. Saute for about one minute. Add remaining ingrediets and combine. Simmer until your desired consistancy is reached.
  • It is up to you how you bring the marinated ingredients and BBQ sauce together. You can use the grill, oven, or stove-top. I personally like to brown my country ribs on all sides then add the finished BBQ sauce to the ribs. I simmer with a lid on until the ribs are done.
