Steps:
- Layer lettuce, grapes and celery in large bowl.
- Mix mayo and dressing; toss with apples. Spoon over celery layer; spread over salad to seal. Refrigerate several hours.
- Top with cheese and nuts before serving.

WALDORF SALAD

Steps:
- Preheat the oven to 350 degrees F.
- Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
- Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
- Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
- When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

WALDORF SALAD
This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

Steps:
- Combine first six ingredients; sprinkle lemon juice on top.
- Combine gently--best to use your hands to mix.
- Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
- Dress the salad with this.
- Chill before serving.
- Can be prepared several hours ahead of time if necessary.

- Place apples, celery, and grapes in a medium bowl, and toss with juice of half the lemon. In another bowl, whisk together yogurt, mustard, honey, and juice of remaining half lemon. Pour half of the dressing over the apple mixture, tossing to combine. Serve over greens, drizzling remaining dressing over salad. Garnish the salad with chopped walnuts and snipped chives.

Steps:
- Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in small bowl to blend. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
- Line large bowl with large outer leaves of lettuce. Chop enough remaining leaves into bite-size pieces to measure 6 cups (reserve remaining lettuce for another use). Place chopped lettuce in another large bowl. Using small sharp knife, cut off peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, halved grapes and chopped dates. Add dressing to salad and toss to coat.
- Transfer salad to leaf-lined bowl. Sprinkle salad with pine nuts and serve.

- In a large bowl, sprinkle apples with 1 tablespoon lemon juice.
- Add celery, grapes, walnuts, and raisins.
- For dressing--------------.
- combine mayonnaise and 1/2 tsp lemon juice.
- Whip cream with sugar until fairly stiff.
- Fold whipped cream into the mayonnaise mixture.
- Mix with the apple mixture.
- Sprinkle with nutmeg.
- Chill at least one hour before serving.

- Make the dressing by combining the lemon zest and juice, yogurt, mustard, honey and extra virgin olive oil with salt and pepper. Shake vigorously until smooth and creamy.
- In a medium bowl layer, separate each of the chopped veggies / fruit. Start with a layer of the apples, celery, grapes and walnuts. Drizzle with half the dressing. Do not mix.
- Lay the chopped romaine lettuce on top of veggies. Finish with a decorative pattern of pomegranate seeds, whole inner core leaves of lettuce, walnuts and persimmon. Do not dress again. Cover well with plastic wrap and store in fridge overnight.
