HALIBUT WITH CITRUS AND CILANTRO
This delicious recipe for halibut with citrus and cilantro comes from chef Marco Pierre White.

Steps:
- Bring a large pot of water to a boil over high heat; prepare an ice-water bath. Add salt to boiling water; return to a boil. Add fennel and cook until just tender, about 3 minutes. Drain and immediately transfer to ice-water bath to cool; drain and set aside.
- Place lemon zest in a small saucepan and add enough water to cover. Place over medium high heat and bring to a boil; drain, return lemon zest to saucepan and repeat process twice more.
- Place vinegar and sugar in a medium saucepan. Bring to a boil over medium heat, stirring occasionally, until sugar is dissolved. Remove from heat and add lemon zest; let steep for at least 10 minutes.
- Slice the top and bottom of 2 oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the orange over a small saucepan, cut along both sides of each segment, staying close to the membrane, to release. Drizzle with olive oil and toss to combine; set aside.
- In a medium skillet, bring orange juice to a boil over medium-high heat. Cook until thickened, about 3 minutes. Transfer to a medium heatproof bowl and drizzle with olive oil; set sauce aside.
- Meanwhile, add just enough olive oil to coat bottom of nonstick skillet; place over high heat. When oil is hot, add fish and cook, turning once until opaque, about 7 minutes.
- Heat a large dry skillet over medium-high heat. Add coriander seeds and toast until fragrant, 4 minutes. Remove from pan and crack slightly with the back of a spoon. Add to saucepan with orange segments and place over medium-low heat to warm.
- Place fennel in a medium skillet; drizzle with olive oil. Add bay leaves and place over medium-low heat until warmed, about 2 minutes.
- Divide fish and fennel evenly between 4 plates. Top fish with orange segments and steeped lemon zest; spoon over sauce. Garnish with cilantro. Serve immediately.
CILANTRO-LIME HALIBUT

- Season halibut with salt and pepper one hour before cooking. Place in refrigerator.
- Lightly oil a non-stick pan with canola or vegetable oil. Over high heat, sear each side of the halibut filets for five seconds each.
- Searing the filets will cook a fine layer on the outside of the fish so that it will not stick to the barbecue. Because of the moistness and flakiness of halibut, this will prevent the halibut from sticking and falling through the grates of your barbecue grill. This is a great tip when barbecuing all types of fish, but works especially well with halibut.
- Remove halibut from pan and turn heat down to medium. Add olive oil and garlic to pan and cook for 2 minutes. Add wine or chicken stock, cilantro, lime juice , lime zest and olive oil to the sauté pan and heat until hot but not boiling.
- Remove sauce from heat and baste fish on both sides. Cook on barbecue grill for 3 minutes per side, basting constantly while cooking. Serve immediately.

PAN-SEARED HALIBUT WITH CITRUS SALSA

- Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
- In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

- Preheat grill to medium heat.
- Meanwhile to prepare pesto, place 1 1/2 cups cilantro, 3 tablespoons garlic, pine nuts, Parmesan cheese, 1/4 teaspoons salt and pepper in a food processor and blend.
- Add olive oil, slowly, in a steady stream at low speed until combined and set aside.
- Combine lemon juice, remaining 1/2 cup cilantro, minced garlic and remaining 1/4 teaspoons salt in a small bowl and pour over fish.
- Grill fish 6-8 minutes on each side or until fish flakes easily with fork.
- Serve fish with the cilantro pesto.

- To prepare the marinade: Combine soy sauce, sesame oil, ginger, garlic and pepper flakes.
- Place fish in a glass dish and add marinade.
- Marinate in refrigerator 2 hours, turning fish over after 1 hour.
- To prepare the sauce: In a medium saucepan combine the wine, stock or juice and vinegar.
- Boil until syrupy. You will have no more than a few tablespoons left.
- Set aside.
- In a food processor combine the garlic, ginger, cilantro, lime zest and juice, butter, red pepper flakes, salt and pepper; process until smooth.
- Set aside.
- Remove the fish from the marinade, scraping off the ginger and garlic and discarding any leftover marinade.
- Place in a baking pan or on a broiling pan and bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until done.
- To finish sauce: Reheat wine reduction over medium heat.
- Slowly add pieces of cilantro butter, whisking until sauce is lightly thickened. Do not boil.
- Pour the sauce over the fish and serve.

- In a pot of boiling salted water set over high heat, cook the haricots verts for 3 to 4 minutes, until tender. Drain and place them in the center of a large, warm serving platter. Cover and keep warm.
- Season the halibut on both sides with salt and pepper. In a 12-inch saute pan, heat the oil over medium-high heat. Cook the fish for about 3 minutes, until lightly browned. Turn, reduce the heat to medium, and cook about 4 minutes longer, until the fish is opaque in the center and browned on both sides. Put the fish on the platter with the beans and cover to keep warm.
- Pour off any oil in the pan and add the wine and lemon juice. Raise the heat to high and deglaze the pan by scraping up any browned bits with a wooden spoon. Cook until the sauce reduces by half, about 2 minutes. Reduce the heat and stir in the butter, a piece at a time, to enrich and flavor the sauce. Add the scallions, capers, and tomato. Season with salt and pepper, and pour over the fish on the platter. Serve immediately.

- Blend soy sauce into cornstarch in cup until smooth; stir in ginger.

- First, you’re going to need to segment that citrus. Using a sharp knife, carefully slice the top and bottom from the grapefruit. Remove the peel and white pith from all around the grapefruit. (Don’t worry if it’s not perfect people.)
- Working over a medium bowl, cut between the membranes to release the grapefruit segments into the bowl. Repeat the peeling and segmenting process with the orange. Remove grapefruit and orange segments from the bowl and slice them crosswise into ½-inch pieces. Return the citrus to the bowl and add the lime juice, red onion, jalapeño, cilantro and a pinch of salt. Gently stir to combine. Refrigerate until ready to use.
- Gently pat the halibut filets dry with paper towels. Season both sides of each filet generously with salt and pepper.
- Heat the olive oil in a large skillet or sauté pan over medium-high heat. When hot, add the filets and cook for 3-4 minutes until golden brown on one side. Turn the filets and cook for another 3 minutes until opaque.
