1 tablespoon raw sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 to 2 tablespoons lemon juice
1/2 cup water
Topping:
1 cup oats
1/3 cup whole wheat flour
3/4 cup raw sugar
1 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons of Earth Balance, melted

Steps:

  • Preheat oven to 375°F.
  • Place fruit slices in the bottom of a greased 9-inch dish. Drizzle with lemon juice.
  • Sprinkle one tablespoon of sugar, ground cinnamon, ground nutmeg, and water on the fruit.
  • In a separate bowl, combine the dry ingredients. Add melted Earth Balance and mix until crumbly.
  • Spread the crumb mixture evenly on top of the fruit.
  • Bake for 50 to 60 minutes, so the top is lightly brown and the fruit is bubbly.
  • Serve warm or cold with vanilla ice cream, vanilla yogurt, or enjoy by itself.

1 cup old-fashioned oatmeal

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

  • Substitute peaches or pears when they are in season. Microwave method: Place apples in a microwave baking pan and sprinkle with lemon juice, maple syrup, and cornstarch, and toss to combine.   • Preheat oven to 350 degrees.
  • Peel and core pears and apples.
  • In a mixing bowl combine pears, apples, cranberries, orange zest, lemon juice, apple pie spice, and granulated sugar.
  • In the bowl of a stand mixer, fitted with a whisk attachment, add rolled whole oats, all-purpose flour, sea salt, light brown sugar, granulated sugar, and 2 sticks of grated unsalted butter. Mix on low until ingredients combine and start to form into pea shapes.

Very easily converted into vegan by substituting margarine for butter.
