LAYERED SALMON COBB SALAD

Steps:
- Combine buttermilk, mayonnaise, white wine vinegar, and garlic in a jar. Seal and shake well. Stir in dill, salt, and pepper. Refrigerate dressing.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 4 to 5 minutes. Drain and let cool.
- Preheat grill for medium heat and lightly oil the grate. Brush salmon with vegetable oil; season with salt and pepper.
- Cook salmon on the preheated grill until flesh flakes easily with a fork, 6 to 8 minutes per side.
- Layer lettuce, tomatoes, corn, cucumbers, green beans, and hard-boiled eggs in a large glass trifle bowl. Place salmon on top. Garnish with bacon and spring onions. Serve dressing alongside.

- In small bowl, beat dressing ingredients with wire whisk until well blended. Refrigerate until ready to serve.

- Make dressing:
- Whisk together all dressing ingredients except oil in a bowl, then add oil in a slow stream, whisking until emulsified.
- Make salad:
- Bring 5 cups water to a simmer in a 2-quart saucepan, then simmer chicken, uncovered, 6 minutes. Remove pan from heat and cover, then let stand until chicken is cooked through, about 15 minutes. Transfer chicken to a cutting board and cool completely. Cut into 1/2-inch cubes.
- Halve, pit, and peel avocados, then cut into 1/2-inch cubes.
- Spread romaine over bottom of a 6- to 8-quart glass bowl and top with an even layer of chicken. Sprinkle bacon over chicken, then continue layering with tomatoes, cheese (to taste), avocados, watercress, eggs, and chives.
- Just before serving, pour dressing over salad and toss.

- Preheat the oven to 400°. Set a wire rack in a rimmed baking sheet. Arrange the bacon slices in a single layer on the rack and bake, turning the baking sheet from front to back once during cooking, for 20 to 25 minutes, until the bacon is browned and crisp. Let cool slightly and coarsely chop.
- In a medium ovenproof skillet, heat the vegetable oil until shimmering. Season the chicken generously with salt and pepper. Cook, turning once, until golden brown on both sides, about 6 minutes. Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the thickest part reads 155°, about 12 minutes. Using tongs, transfer the chicken to a plate and tent with foil. Let rest at room temperature for 10 minutes. Transfer the chicken to a cutting board and coarsely chop.
- Fill a medium bowl with ice water. In a small saucepan, cover the eggs with 1 inch of cold water. Bring to a boil over moderately high heat. Remove the saucepan from the heat and let stand for 8 minutes. Using a slotted spoon, transfer the eggs to the ice water. Let cool slightly. Peel and coarsely chop.
- In a food processor, combine 1 1/4 cups of the blue cheese with the mayonnaise, olive oil and vinegar. Process until smooth. Scrape into a medium bowl and fold in the remaining 3/4 cup of blue cheese. Season the blue cheese dressing with salt and pepper.

- Cobb. This is one of my personal favorite recipes. I make it throughout the spring and summer and frequently change up the ingredients depending on what we have on hand.
- BLT. Turning this classic recipe into a salad is a great idea. The recipe suggests making your own croutons ahead of time. It calls for Thousand Island dressing, but you can switch this up for another creamy dressing, such as Ranch, or just use the mayo by itself.
- Summer. It doesn't get much more classic than this for summer with fresh tomatoes and basil. You can use frozen peas like the recipe suggests, but using fresh peas will intensify the fresh summer flavor even more.
- Caribbean. If you're never tried a lime Caribbean dressing before, you don't know what you're missing. It pairs perfectly with the chicken and mango. Don't skimp on the cashews.
- Mediterranean. An updated version of a classic recipe, the combination of spinach and whole wheat tortellini makes this both filling and packed with nutrition.
- Southwestern/Taco. One of my favorite aspects of making tacos is that I get to use some of the leftovers to make taco salad the next day. I have included a few different variations of this recipe idea.
- Cornbread. I've never had a cornbread salad before, but now I'm intrigued to try it. Keep it simple with cornbread mix or wow everyone at dinner with your favorite cornbread recipe.
- Italian. You'll get a full mix of flavor, nutrition, and color with this mix of green and red veggies, mayo, creamy Italian dressing, and Asiago cheese.
- Pasta. It doesn't seem fitting to write a summer salad article without a pasta salad. If you're looking for a change from one of the traditional pasta salad options, a layered salad is a great choice.
- Fruit. It also doesn't seem fitting to write a summer salad article without including at least one fruit salad recipe. Don't feel limited by the fruit choices here.
