ROASTED WILD TURKEY W/ RASPBERRY SAUCE

My Dad brought me a turkey that my Grandfather had shot. I'd never cooked a wild turkey before & was a little nervous that my husband would find it too "gamey". Through suggestions from Dad & some different recipes I looked at, I came up with this very easy recipe for when the great hunter brings home the goods. (I let them skin & clean the bird for me). The turkey comes out nice & moist, & the tangy raspberry sauce is the perfect compliment. Not gamey at all!! You can also throw some fresh raspberries into the sauce, if you don't mind the seeds.

1 wild turkey
3 -4 tablespoons bacon fat
6 -8 slices raw bacon
1 cup chopped onion
2 cups chopped celery
1 1/2 cups dry white wine
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups chicken broth
1 cup seedless raspberry jam
2 tablespoons orange juice
3 tablespoons white wine vinegar

Steps:

  • Wash & dry turkey.
  • Mix onion, celery, bacon fat, & 1 cup wine, & stuff bird with mixture.
  • Salt & pepper the bird.
  • Lay the bacon slices over the turkey breast.
  • Place bird in roasting bag & pour in broth & remaining wine.
  • Close bag & roast at 300 degrees for 20-25 minutes per pound.
  • Discard onion & celery before serving.
  • For sauce, combine in skillet the raspberry jam, orange juice, & vinegar (also the fresh raspberries, if you're using them).
  • Bring to a boil & cook 2-3 minutes, until sauce is reduced to desired consistency (it will thicken as it cools).
  • Spoon sauce in a pool on serving plate, & top with slices of the turkey breast.

2 1/2 cups plain fat free Greek yogurt
5 ounces frozen raspberries
1 (14 ounce) can diced mangoes, undrained (in juice)
1/2 cup Splenda granular, sugar substitute
1 teaspoon vanilla extract
1 teaspoon stevia powder
2 tablespoons lemon juice

Steps:

  • Place mango, raspberries, yogurt, Splenda, vanilla, lemon juice and Stevia in a food processor, and process until smooth.
  • Transfer the mixture to an ice cream maker and freeze according to manufacturer's directions.
  • NOTE: To enjoy this throughout the week, simply separate it into small airtight serving containers and freeze. Pull them out of the freezer to soften about 30 minutes before you are ready to serve, and enjoy!

Wonderful dessert that makes people think you have worked all day. Makes a great Christmas dish - very festive with fresh raspberries. Recipe from an old newspaper clipping that a friend's mother has made for many years.

Number Of Ingredients 12

1 (1/4 ounce) package unflavored gelatin
1/3 cup water
2 cups heavy cream
1 1/3 cups superfine sugar
1 1/3 cups sour cream
1 (8 ounce) package cream cheese (softened)
2 teaspoons vanilla
1 cup fresh raspberry
1 1/4 teaspoons cornstarch
2/3 cup water
2/3 cup sugar
3 tablespoons orange juice or 3 tablespoons red wine

Steps:

  • Sprinkle gelatin over the 1/3 cup water in a small cup; let stand 5 minutes to soften.
  • Pour 2 cups cream into small heavy saucepan. Bring to boiling. Remove from heat; add gelatin; stir to dissolve. Stir in 1-1/3 cups sugar. Transfer to medium-size bowl. Cool.
  • Add sour cream, cream cheese and vanilla to cooled cream mixture; beat until smooth. Pour into a service bowl or 12 individual dessert dishes. Refrigerate until firm, about 2 hours.
  • Prepare Red Raspberry Sauce: Place raspberries in blender. Combine cornstarch with 2/3 cup water in small bowl. Stir in the sugar. Add to blender. Whirl until puréed. Strain into small saucepan. Heat over low heat, stirring constrantly, until slightly thickened. Add liqueur (or red wine or orange juice). Chill.
  • To serve, spoon 1 tablespoon of the Red Raspberry sauce over each serving.
  • Prep time includes cooling.

This simple, three-ingredient sauce is very versatile. Right now I am enjoying it with freshly baked angel food cake, but I would love to try it with grilled peaches, and also with something chocolatey! I also think it would be nice with chicken or maybe a wheel of warm brie. It is a chunky sauce, with the texture determined by how much you crush the berries when you mix it. I more or less mashed mine, but I think leaving at least some of the berries whole would make a more elegant sauce. Add in a bit of your favorite liqueor or extract to vary the possibilities even more (I tried it with some Triple Sec - very good!). This recipe originates from The Complete Cooking Light Cookbook, and it makes approximately 1 1/2 cups.

2 1/2 cups fresh raspberries
1 tablespoon lemon juice
1/2 cup seedless raspberry jam

Steps:

  • Melt jam in a small saucepan over low heat (I did this in the microwave instead- put the jam in a small glass bowl and heat using medium power for 1-2 minutes).
  • Stir in lemon juice.
  • Remove from heat and place the jam mixture in a small glass bowl.
  • Stir in raspberries.
  • Serve warm or at room temperature.

Planning to try it as a mixed berry frozen yogurt next. Be aware that nonfat frozen confections are best eaten fresh or after freezing for just a few hours. After a day or two they tend to get a bit icy. The original was found on fooddownunder.com.

1/4 cup water
1 teaspoon unflavored gelatin
1 cup frozen unsweetened raspberries or 1 cup fresh raspberry
Equal sugar substitute (to taste)
1 cup plain nonfat yogurt, stirred
1 egg white
1/3 cup cold water
1/3 cup nonfat dry milk powder

Steps:

  • In a small saucepan, combine 1/4 cup water with gelatin allowing it to stand 1 minute. Cook over low heat and stir until gelatin dissolves. Set aside.
  • In blender or food processor fitted with metal blade (I used hand held blender) puree berries. Strain; discard seeds.
  • Combine pureed berries with Equal and dissolve gelatin. Stir in in yogurt.
  • In a small bowl, combine egg white with 1/3 cup water and dry milk. Beat until stiff but not dry.
  • Fold into raspberry mixture.
  • Freeze in ice cream maker according to directions.

12 -14 kiwi fruits, pureed
1 tablespoon honey
1 pint vanilla frozen yogurt, softened (low-fat or nonfat)
1 (10 ounce) package frozen raspberries in light syrup, thawed
2 tablespoons triple sec (or other orange liqueur)
2 teaspoons cornstarch
3 kiwi fruits, sliced lengthwise
fresh mint leaves
fresh raspberries (optional) or frozen raspberries (optional)

Steps:

  • Combine Kiwi fruit puree and honey. Place in freezer and freeze until slushy (about 45 minutes).
  • In a stainless steel bowl, quickly combine softened yogurt and kiwifruit mixture; refreeze in bowl.
  • With a small ice cream scoop form balls and place on a wax paper-lined tray; refreeze.
  • To make raspberry sauce, in food processor or blender puree thawed raspberries. over saucepan, strain berries, through a fine sieve, pressing with back of a spoon. discard seeds. Stir in orange liqueur and cornstarch. Bring to a boil, stirring constantly until slightly thickened. Cool; cover and chill.
  • To assemble; spoon sauce on dessert plates or shallow bowls.
  • Arrange Kiwi fruit slices and frozen yogurt balls on sauce and garnish with mint and whole raspberries.
