Just plain-old, extra good cheesecake like the ones from New York and Philly. You may cover the cake with a layer of strawberries, cherries, etc. but, in my opinion, this cake is very, very good and easily stands on its own. The fruit just distracts from its great flavor and texture.

1 ½ tablespoons butter
½ cup graham cracker crumbs
12 ounces cream cheese
¾ cup white sugar
4 eggs
2 tablespoons all-purpose flour
1 ½ teaspoons vanilla extract
½ teaspoon salt
2 cups heavy whipping cream

Steps:

  • Grease an 8 inch springform pan thickly with butter. Turn pan on its side, place a few graham cracker crumbs in pan and shake so crumbs stick to sides. Keep turning and add crumbs as needed until sides are well coated. Set pan upright and coat bottom of pan. Put pan into freezer for 30 minutes or refrigerator for 2 hours.
  • Preheat oven to 300 degrees F (150 degrees C).
  • With electric beater, mix cream cheese, sugar, egg yolks, flour, vanilla, and salt. Beat thoroughly and then turn mixer to slowest speed and slowly pour in the cream.
  • Beat the egg whites until stiff but not dry. Add to the above mixture and fold the whites in by hand, lightly but thoroughly. Pour mixture into the crumb-lined pan.
  • Set pan into shallow pan containing 1 inch hot water and bake at 300 degrees F (150 degrees C) for 1 1/2 hours. Refrigerate for at least 6 hours before serving.

This cheesecake lies in between - the filling is smooth and rich, but not heavy because it is baked and also due to the addition of sour cream. It's a truly beautiful cheesecake!

200 g / 7 oz Arnott's Marie crackers or other plain biscuit ((Aus) or 28 Graham Cracker squares (Note 1))
120 g / 8 tbsp unsalted butter (, melted)
1 lb / 500g cream cheese (, softened (Note 2))
2 tbsp plain flour ((all purpose flour))
1 tsp vanilla extract
1/2 cup / 125g sour cream ((full fat))
1 1/2 cups (330g) caster sugar (superfine sugar)
Zest of 1 lemon
3 eggs (, at room temperature)
Strawberries, blueberries, raspberries
Icing sugar / powdered sugar (, for dusting)

Steps:

  • Preheat oven to 160C/320F (standard) or 140C/295F (fan/convection).
  • Get a 20cm/8" springform cake tin. Turn the base UPSIDE DOWN (Note 4), butter lightly and place a square piece of parchment/baking paper on the base. Then clip into the springform pan - excess paper will stick out, see photos in post and video.
  • Butter and line the side of the pan.
  • Break up biscuits roughly by hand and place in a food processor.
  • Blitz until fine crumbs (Note 5). Add butter, briefly blitz until dispersed and it resembles wet sand.
  • Pour into the prepared cake tin. Use a spatula to roughly spread it out over the base and up the walls.
  • Use something with a flat base and vertical edges (I used a measuring cup) to press the crumbs up the wall almost to the top of the sides, and flatten the base.
  • Use a mixer or beater to beat the cream cheese until smooth - about 30 seconds on medium high,.
  • Add flour, beat until just combined (10 sec).
  • Add vanilla, sour cream, sugar and lemon zest. Beat until just combined (10 - 15 sec).
  • Add eggs one at a time, beat in between until just combined (10 sec each). Don't over beat, do not want to aerate the batter.
  • Pour into prepared crust.
  • Bake for 55 minutes. The top should be a very light golden brown, not cracked, and near perfectly flat. It should jiggle slightly when you gently shake the pan.
  • Cool the cake in the oven with the door open 20 cm / 8" (Note 6), then refrigerate for 4 hours+ in the pan.
  • Remove sides. Use overhang paper to slide cheesecake off the cake pan. Then slide the cheesecake off the paper.
  • Top with berries and dust with icing sugar!

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

Steps:

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
3 (8 ounce) packages cream cheese, softened
1 cup sugar
3 large eggs
1/2 cup sour cream
2 tablespoons lemon juice
1 tablespoon vanilla (or 2 teaspoons vanilla and 1 teaspoon almond extract which is what I use)
1 cup sour cream
3 tablespoons sugar
2 cups fresh berries (garnish)

Steps:

  • Combine graham cracker crumbs, sugar, and butter; press mixture into the bottom of a 10" springform pan; set aside.
  • Blend cream cheese and sugar together (in a food processor or with a medium-speed electric mixer) until smooth; add eggs one at a time, blending well after each addition; add sour cream, lemon juice, and vanilla; blend well; pour filling over the crust and spread evenly.
  • Lay a sheet of aluminum foil that has been bent up slightly to form a "foil tent" over the top of pan and not touching cheesecake (this is to prevent overbrowning) then bake at 350° for 1 hour and 15 minutes (remove foil tent after 50-55 minutes) or until top is set.
  • Combine sour cream and sugar; remove cheesecake from oven and immediately spread sour cream mixture over its top; return cheesecake to oven for 5 minutes to set topping; remove from oven.
  • Cool cheesecake on wire rack; cover and refrigerate to chill thoroughly.
  • Just before serving remove sides of springform pan and transfer cheesecake to serving platter; garnish cheesecake with berries (we like chilled cherry pie filling on top) and serve.
  • OPTIONAL: Just before pressing the graham crust into the bottom of the springform pan, spray the pan's inner sides with a little no-stick cooking spray, sprinkle a spoonful of combined graham cracker crumbs and sugar into the pan, then tilt and spread that mixture around so that it sticks to the coated sides and later adds to the visual appeal of your finished cheesecake.

FOR THE CRUST:
1 stick butter or margarine
2 c graham cracker crumbs
2 Tbsp white sugar
FOR THE FILLING
16 oz (2 blocks) philadelphia cream cheese
1/2 c white sugar
1/2 tsp vanilla extract
2 large eggs
A CAN OF CHERRY PIE FILLING OR OTHER FRUIT, IF DESIRED

Steps:

  • 1. Put the cream cheese into a large mixing bowl & set out for about an hour. (You don't really need a bowl this large, but the deeper, the better since the filling likes to fly around the kitchen when you mix it up.) When the time is up, preheat the oven to 350 degrees F.
  • 2. In a different microwave-proof medium-sized bowl, melt the butter for about 30 seconds. Add the graham cracker crumbs & sugar.
  • 3. Stir them together with a fork & put into a pie dish, savings a few bits of crumbs for decorating at Step #7. Using your fingers (or a spoon, if you want), press the crumbs up the side of the pie dish. Then flatten the bottom of the crust. Set aside.
  • 4. Going back to the bowl with the softened cream cheese, the recipe says to beat together the cream cheese, sugar, and vanilla, THEN add the eggs and beat again. (As you can see from the photo, I have a hard time following directions.)
  • 5. This is what it looks like when you do it as directed. =^..^=
  • 6. Whichever way you did it, beat the filling ingredients with a mixer until well-blended.
  • 7. Spoon into the prepared pie crust. If you remembered to hold back a few crumbs, sprinkle them on the top. (If you forgot, it's OK. The cheese cake will still be delicious. Promise!)
  • 8. Bake at 350 degrees F. for around 30-40 minutes, or until the center is almost set. Cool, then refrigerate for at least 3 hours.
  • 9. Top with fruit and/or whipped cream, if desired.
