JESSICA B. HARRIS' MIXED GREENS

Jessica B. Harris' Mixed Greens image

These leafy vegetables are as much a staple around the world as they are in the South.

Provided by Jessica B. Harris

Time 2h55m

Number Of Ingredients 5

4 pounds mixed fresh collard, mustard, and/or turnip greens
8 bacon slices, chopped
1 ½ teaspoons kosher salt
½ teaspoon black pepper
Toppings: hot sauce; chopped onions; additional chopped, cooked bacon; and Spicy Vinegar

Steps:

  • Wash mixed fresh greens well, picking them over to remove any brown spots or blemishes. Drain well. Discard any discolored outer leaves, and remove and discard thick ribs. Tear greens into 3- to 4-inch pieces.
  • Place chopped bacon in a large Dutch oven. Cook over medium, stirring often, until translucent and bottom of Dutch oven is coated with rendered bacon fat, about 8 minutes. Add greens and 6 cups water, and bring to a boil over medium. Reduce heat to low. Cook, uncovered, stirring occasionally, until greens are tender, about 2 hours. Stir in salt and pepper. Add desired toppings.

Mixed Greens with Dried Cranberries and Toasted Pecans image

Provided by Food Network

Categories     side-dish

Time 17m

Yield 4 servings

Number Of Ingredients 13

1/2 cup pecans
4 cups romaine lettuce, torn into small pieces
4 cups mesclun (mixed baby greens), washed and spun dry
1/2 cup slivered red onion
About 1/3 cup Lemon-Soy Dressing, recipe follows
4 tablespoons dried cranberries
1 large garlic clove, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 1/2 teaspoons tamari soy sauce
1/8 teaspoon salt
Generous seasoning freshly ground pepper
1/2 cup mild-flavored olive oil

Steps:

  • Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
  • Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
  • Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.

Provided by Martina McBride

Categories     side-dish

Time 30m

Yield 5 to 6 servings

Number Of Ingredients 11

1 1/2 pounds green beans, trimmed
1/4 pound smoked bacon, chopped (about 3 slices)
1/4 cup chopped shallots (about 2 shallots)
1 garlic clove, chopped
2 tablespoons sherry wine vinegar
1 1/2 tablespoons Dijon mustard
1/2 teaspoon dry mustard
1/4 cup extra-virgin olive oil
Kosher salt

1/4 cup dried sweetened cranberries

Steps:

  • Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain. Pat dry. Place the beans in a large bowl.
  • Cook the bacon in a skillet, and transfer to drain, reserving the drippings in the skillet. Add the shallots and garlic to the drippings. Saute over medium, 1 minute or just until soft. Add the vinegar, Dijon and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Remove from the heat and slowly whisk in the olive oil.
  • Toss the beans with the warm dressing. Season with salt. Arrange on a serving platter. Sprinkle with the reserved bacon, goat cheese and dried cranberries. Serve immediately.
