VODKA MOJITO

Steps:
- In a pitcher, combine the Simple Syrup, vodka, lime juice, and club soda. Pour into ice-filled glasses and garnish with mint sprigs.
- In a small saucepan, over medium heat, combine the sugar, water, and mint leaves. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using, pressing on the mint leaves to extract as much syrup as possible.
BLUEBERRY MOJITO
Steps:
- Muddle together the mint and sugar in a cocktail shaker. Add the blueberries and lightly muddle. Add the rum, lime juice and some ice to the shaker and shake vigorously. Fill two tall glasses with ice, then pour 3 ounces club soda into each. Divide the rum mixture evenly between the glasses and stir gently. Garnish with a lime wedge, a few blueberries and a sprig of mint, and serve.
MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

- Peel the banana and break into pieces, placing it in a blender with the rum, lime juice, sugar, chopped mint and ice. Blend until smooth and creamy.

SPICY MOJITOS

- For the jalapeno simple syrup: Add the sugar, jalapeno and 1 cup water to a saucepan. Bring to a boil, stirring to dissolve the sugar. When the sugar is dissolved, remove from the heat and let cool for 1 hour. Remove the jalapeno before using.
- For the mojitos: Divide the mint leaves between two pitchers, and muddle. Squeeze the juice of 1 lime into each pitcher, then add the simple syrup, evenly divided. Fill the pitchers with ice and top off with club soda. Add the rum to one of the pitchers. Stir and serve.
BEER MOJITO
A refreshing beverage and not only for beer lovers. I know, that this is not a true Mojito, but it is in the style of it. Peppermint leaves have a more intense flavour than other mint varieties and also have some bitter notes. This goes well together with the different malty and bitter flavours of many German beer varieties. If you prefer a non-alcoholic Mojito, look out for a alcohol reduced or non-alcoholic beer. Non-alcoholic beer is getting more and more prominent in Germany.

- Cut peppermint leaves into smaller pieces and put into a mortar. Add sugar and lemon juice.
- Grind to crush the the peppermint leaves and the sugar is dissolved.
- Strain through a sieve into a small glass or bowl.
- VARIATION I: put 2 teaspoons of Mojito mixture into a glass and cold add beer. Be careful, because the beer has the tendency to produce a lot of foam.
- VARIATION II: put 2 teaspoons of Mojito mixture into a glass and add ice cold water and then cold beer.
- Garnish with peppermint sprigs and lemon wedges.
- NOTE: should make 3 (or 4) glasses.
- NOTE: I used a German beer with an alcohol content of 4.8%. It is not too bitter and has some sweet notes. It is light in colour. Drinking temperature: German beer is often served with a temperature of 7 C (45 F).

- Start with the simple syrup. Mix sugar and water in a sauce pan and bring to a boil. Stir until sugar gets dissolved. Remove from heat and store in the fridge until ready to use.

- Muddle with the handle of a wooden spoon for 30 seconds.
- Add simple syrup and white rum.
- Fill glass with ice and top off with club soda.
- Shake or stir gently.
- TO MAKE SIMPLE SYRUP:.
- In a small saucepan, combine 2 parts sugar to 1 part water.
- Heat until sugar is dissolved.
- Cool before using (this keeps in the refrigerator for 1-2 weeks).
- For a fruity twist to your mojito, use flavored rum, such as mango, banana, or pineapple.
- NOTE: Muddle means to simply bruise or gently pound the limes and mint leaves to release their juices and essence. You can buy a muddler, which looks like a tiny baseball bat or billy club, at any good restaurant store.
