EASY KID-FRIENDLY CHICKEN ENCHILADAS
If you're craving Mexican food but your kids are picky eaters, Easy Kid-Friendly Chicken Enchiladas is the perfect "meet-in-the-middle" recipe! This simple baked meal with red sauce and just a few other ingredients makes a quick weeknight dinner.

- Step One
- Begin by preheating your oven to 350 degrees Fahrenheit.
- Next, place the cream cheese and salsa in a large saucepan and heat over medium heat, stirring until the cream cheese is melted and it's blended with the salsa.
- Next, stir the chicken and green chilis into the cream cheese mixture and remove the pan from heat.
- Step Two
- Pour 1/2 a cup of the enchilada sauce into a 13×9-inch baking pan and swirl the pan around until the entire bottom is covered with sauce.
- Next, spoon approximately 1/3 a cup of the chicken mixture onto a tortilla, roll it up, and place it seam side down in the sauce covered pan. Continue to do this until you've filled all 8 tortillas.
- Next, cover with the remaining enchilada sauce and sprinkle with cheese.
- Step Three
- Finally, cover the pan with aluminum foil and bake for 20 minutes or until the cheese is melted and the enchiladas are heated throughout.
- Take out of the oven and serve!
SIMPLE PERFECT ENCHILADAS

- In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
- While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
- In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
- Preheat the oven to 350 degrees F.
- Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
- Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
- Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.
KID-FRIENDLY ENCHILADAS
To warm her kids up to spicy foods, Shirley Bomgaars diluted salsa with tomato soup to use in quick and easy enchiladas. Now, for fuller flavor, she's upped the salsa ratio and uses tomato sauce instead of soup. For a hearty variation, add cooked ground beef or turkey to the filling.

- Cook bean and rice mix according to package directions.
- Meanwhile, combine salsa and tomato sauce and pour 1 cup of the mixture into a 9- by 13-inch casserole.
- In a microwave oven on full power (100 percent), warm 2 or 3 tortillas at a time between paper towels, 20 to 30 seconds.
- As tortillas are heated, spoon 1/4 cup bean mixture and 1 tablespoon cheese down center of each, roll to enclose, and place, seam down, in casserole.
- Pour remaining salsa mixture over enchiladas and sprinkle with remaining cheese.
- Bake in a 400° oven until enchiladas are hot in center, 20 to 25 minutes. Garnish the casserole with sour cream and olives.

- boil chicken and spices in water until cooked.
- when cool, chop chicken and mix with sour cream and half the cheddar-jack mix (shredded cheese).
- put the chicken broth in a smaller ramekin (I used a 7" x 3").
- place a tortilla on the bottom, you can slice it to fit better.
- add chicken mixture.
- add another tortilla on top.
- top with remaining cheese.
- cook at 350, covered if you prefer, for 20-30 minutes until interior is 160f.
- let cool and serve.
