To roast the salmon, I preheat the oven at 450 degrees Fahrenheit. Yes, 450. (you reading correct). If you want the real roasted flavor, this the best temperature to roast. I only request to make sure: 1) Oven is pre-heat at 450 degrees before cooking 2) Check the salmon at 7 minutes if it is done. don't let it overcook.While oven preheats. I mix the Garlic Butter. Actually it is a garlic and herb butter. Markets are so full of fresh herbs this season. I bet you will have plenty in refrigerator. If not, don't worry. Just use dried herbs. To make Garlic Butter, I mix following ingredients:Butter (at room temperature)GarlicHerbs - Thyme, Parsley, OreganoLemon Juice. (If you don't have lemon. Replace with 1 tsp lemon-pepper seasoning. Skip salt and pepper)Salt and Pepper.Once Butter is ready. I season asparagus and salmon with salt and pepper. Spread asparagus on sheet pan. Rub garlic butter on salmon fillets. (Preferably both sides to get more robust roasted butter flavor.) Place salmon fillets in between asparagus as shown in the pictures.Roast at 450 degrees Fahrenheit pre-heated oven for just 8 minutes.Salmon fillets are perfectly roasted, cooked-to-perfection in 8 minutes. 2 tbsp Unsalted Butter, at room temperature
1 tsp Oregano, dried
5-6 Sprigs Thyme, fresh thyme
1 tbsp Parsley, fresh leaves, fine chopped
1 tbsp Garlic, 4-5 cloves, minced
1 Lemon, to get 1 tsp juice, rest cut into wedges for serving
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Chili Flakes
1.5 lbs Salmon, 3-4 salmon fillets, skinless
1 lbs Asparagus
1 tbsp Olive Oil
Salt and Black Pepper

Steps:

  • Preheat oven at 450 degrees Fahrenheit. Line a large rimmed baking sheet with aluminum foil. Set aside.
  • Make Garlic Herb Butter - In a small bowl, add all ingredients of garlic butter - room temperature butter, minced garlic, herbs, chili flakes, 1 tsp lemon juice, salt, and black pepper. Mix with back of fork until everything is well mixed into the butter. Set aside.
  • Prepare Asparagus: Remove hard stems of asparagus (about 2 inch from the bottom). Place asparagus on baking sheet. Drizzle 1 tbsp olive oil on top. Sprinkle 1/4 tsp of salt and 1/4 tsp of black pepper. Massage to coat asparagus in oil and seasoning. Spread evenly on the baking sheet. Set aside.
  • Prepare Salmon - Pat it dry salmon fillets with clean paper towel. Sprinkle with 1/4 teaspoon of each salt and pepper on both sides. Spread herb butter on both sides of salmon. Start from bottom side, then on top side run fingers on salmon fillets to evenly cover with herb butter. Place salmon on the sheet pan between the asparagus.
  • Roast Salmon and Asparagus: Roast in 450 degrees preheated oven for 8 minutes or until just cooked through. Take out, let rest for 5 minutes. Divide into plates. Serve with lemon wedges on the side. Enjoy!

2 tbsp olive oil
8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets, about 140g/5oz each
handful basil leaves

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

1 1/2 to 2 lb salmon filet
2 bunches (2 lbs asparagus)
Salt and Black Pepper
1 Tbsp Olive Oil (to drizzle asparagus)
1/2 large lemon (sliced into rings for garnish)
6 Tbsp 85 grams* unsalted butter, softened (**see quick softening tip)
2 Tbsp fresh lemon juice (from 1/2 large lemon)
2 garlic cloves (pressed)
2 Tbsp fresh parsley (finely chopped, plus more to garnish)
1 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 450˚F with oven rack in top third of oven. Line a large rimmed baking sheet with parchment paper and trim paper so edges to fit the pan, otherwise it can char in the oven, especially when broiling.
  • In a small bowl, mash together all flavored butter ingredients, mashing and stirring until lemon juice is incorporated into butter then set aside. It takes a couple minutes but it will come together.
  • Place salmon filet skin-side-dow in the center of your baking pan. Rinse asparagus and break off fibrous ends by holding the base end and breaking it wherever it snaps. Arrange asparagus around salmon, drizzle asparagus lightly with olive oil. Roll asparagus to coat lightly in oil and sprinkle both asparagus and salmon with salt and pepper.
  • Spoon and spread 3/4 of butter mixture over salmon. Dot asparagus with remaining herb butter. Scatter with slices of lemon and bake at 450˚F for 10-12 mins (smaller 1 1/2 lb thinner fillet will take 10 min and a larger 2 lb fillet will take 12 min), then turn the oven to Broil on High and broil 2-3 minutes to give the salmon a golden glow. Bake until salmon is flaky and cooked through.

1 pound baby Yukon Gold potatoes, halved
2 tablespoons extra-virgin olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
12 ounces asparagus, trimmed

1 tablespoon lemon juice
2 cloves garlic, minced
1 ¼ pounds salmon fillet, skinned and cut into 4 portions

Steps:

  • Preheat oven to 400 degrees F. Toss potatoes, 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a medium bowl. Spread in an even layer on a large rimmed baking sheet. Roast until starting to soften and brown, about 15 minutes.

Use pre-washed unless using arugula from your own garden (can't get fresher than that!) Pre-washed is quick to use. If washing yourself, please invest in a Salad Spinner. It saves ton of time and delicate leaves are never bruised. I have a basic manual spinner, nothing fancy, which I bought from Ikea for $10. I use it all the time for washing greens. In my opinion, its a best investment for salad lovers. Hard Boiled Eggs - Hard boiled eggs are good filling addition to salad. Of-course, also a usual suspect of Niçoise Salad. If making salad ahead of time then boil and peel eggs and keep refrigerated. Slice for salad just before serving.To hard boil eggs, put eggs in sauce pan and fill with cold water so that eggs are dipped in water. Boil rapidly for 12 minutes. For perfect hard boiled eggs, set aside in hot water for additional 10 minutes.Artichokes, Roasted Red Bell Peppers and Olives - The Three-flavor-bombs of Nicoise Salad as I like to call these. Use water packed artichokes for clean artichoke flavor. Oil packed are fine too. Only get rid of extra oil as sometimes it muddles with flavor of dressing or increase oil in the salad. Same goes with roasted red bell peppers and olives. In short, especially for salads, water or brine packed are better than oil packed.Cherry Tomatoes - Go for ripe sweet cherry or grape tomatoes. The fresh ripe seasonal tomatoes work perfect too.Tip:Make ahead this Salad by making the dressing; boil eggs, chop and pack other ingredients in a container. Salmon and asparagus are best when cooked fresh, up-to an hour or just before serving.4. AssemblyFor good presentation, assemble salad in layers on a large oval or round platter. For weeknights, you can go easy and serve any way you prefer. For Niçoise, I love to drizzle dressing on salad just before serving. Ingredients in this salad already pack a big punch of flavor. However, the tangy mustard-lemon Caper dressing brings out the flavor even more. You will love the combination of dressing with hard boiled eggs (pure yum!)That said, assembly is really easy! 1 Bunch Asparagus
2 Roasted Red Bell Peppers, thin sliced

Steps:

  • Trim ends of asparagus. Season with 1 tablespoon of olive oil and generous pinch of salt and black pepper. Set aside.
  • To prepare Salmon for Niçoise Salad, take salmon out on a wide plate. Wipe extra moisture with clean paper towel. Season fish with 1 tablespoon olive oil, and generous pinch of salt and black pepper on both sides.
  • Preheat grill or indoor grill pan. Spray or brush with light coat of oil. Place Salmon skin side down and place asparagus on the side. Salmon is ready to flip when skin gets good grill marks (about 2-3 minutes on a hot grill). Flip Salmon, also toss the asparagus once so that all pieces pickup some char and flavor. (another 2-3 minutes.) Once cooked, take both out of grill. Reserve grilled asparagus on the side. Flake salmon gently using two forks.
  • To prepare Niçoise Salad Dressing, in a small bowl add all salad dressing ingredients (except capers) with 1/4 tsp of salt. Whisk well to emulsify. Mix in chopped capers. Set aside.

1/2 teaspoon salt

Ready in just 15 minutes, this fast dinner combines silky salmon with a vibrant green medley of asparagus and peas. While the fish roasts, the vegetables and sauce come together in one pan on the stovetop. Thinly slicing the asparagus is the trick to maintaining a crisp texture that complements the tender salmon, while bright lemon juice and zingy capers balance the nutty brown butter sauce. Parsley is used here to finish, but dill or tarragon would also be lovely. Leftover vegetables make a fantastic omelet filling the next day.

2 tablespoons extra-virgin olive oil
Kosher salt and pepper
1 pound asparagus, tough stems trimmed, stalks sliced 1/4-inch-thick on a slight bias (leave tips whole)
4 tablespoons unsalted butter
1 tablespoon fresh lemon juice, plus wedges for serving
2 tablespoons drained capers
1/2 cup thawed frozen peas
1/4 cup coarsely chopped parsley, plus more for garnish

Steps:

  • Heat oven to 450 degrees. Rub salmon all over with 1 tablespoon oil and season with salt and pepper. Arrange skin side-down on a rimmed baking sheet and roast until medium, 8 to 10 minutes.
  • While the salmon roasts, prepare the asparagus: In a large skillet, heat the remaining 1 tablespoon oil over medium-high. Add asparagus, season with salt and pepper and cook, stirring occasionally, until crisp-tender, about 3 minutes. Transfer asparagus to a plate.
  • Reduce heat to medium and add butter to skillet. Cook, stirring, until foam subsides and butter is deep golden brown, 2 to 3 minutes. (Be careful not to burn). Turn off heat and stir in lemon juice, capers, peas, parsley and cooked asparagus. Season with salt and pepper.
  • Divide vegetables among plates. Top with salmon and spoon over any remaining pan sauce. Garnish with parsley and serve with lemon wedges.

Steps:

  • Heat oven to 425°F Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 minutes
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked.
  • Scatter over the basil leaves and serve everything scooped straight from the dish.
