ELEGANT SHRIMP PARMESAN
Steps:
- Preheat oven to 400 degrees. Mix bread crumbs, Parmesan cheese, garlic powder and salt in shallow dish. Dip shrimp in eggs, then bread crumb mixture until evenly coated.
- Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook 1/2 of the shrimp, turning once, 6 minutes or until shrimp turn pink. With paper towel, wipe pan clean and repeat with remaining 1 tablespoon olive oil and shrimp.
- Evenly spread 1-1/2 cups Sauce in 13 x 9-inch baking dish; top with shrimp. Pour remaining sauce over shrimp, then top with mozzarella. Bake 7 minutes or until cheese is melted and sauce is bubbling.

SHRIMP PARMIGIANA
Steps:
- In a shallow bowl, combine the flour with 1 tablespoon of the Essence, and 1/2 teaspoon of the salt. In a second bowl, beat the eggs with the water. In another bowl, combine the bread crumbs with the Parmigiana, remaining tablespoon Essence, and remaining 1/2 teaspoon of salt.
- Add enough vegetable oil to come halfway up the sides of a medium pot and heat to 360 degrees F. Preheat the oven to broil.
- Meanwhile, 1 at a time, dredge the shrimp first in the flour, then in the egg wash, and then in the seasoned bread crumbs, tossing to coat evening and shaking to remove any excess. Place on a plate until ready to cook.
- Add the shrimp in batches to the hot oil, turning occasionally, and cook until golden brown and the shrimp float to the top, about 2 minutes. Remove the shrimp with a slotted spoon and drain on paper towels.
- Transfer the shrimp to a lightly greased baking dish. Spoon about 1 3/4 cups of the marinara sauce over the shrimp and sprinkle the mozzarella over the top. Broil until the cheese is melted and bubbly, about 3 minutes.
- Meanwhile, toss the spaghetti with the remaining marinara sauce and warm gently.
- To serve, spoon the spaghetti into a large serving bowl and using a spatula, transfer the shrimp to the top. Garnish with chopped parsley and serve immediately.
- Combine all ingredients thoroughly.
KITTENCAL'S BAKED JUMBO LEMON-GARLIC PARMESAN SHRIMP
You won't find this recipe anywhere else, I developed this using jumbo shrimp and I would strongly advise to use only very large or jumbo for this and leave the tails intact, depending on the size and amount of the shrimp used a small amount of breadcrumb mixture might be left over --- I have listed the cayenne pepper as only optional you may adjust amount to suit heat level or omit, I like to add it in for some heat :)

Steps:
- In a shallow dish combine the breadcrumbs with Parmesan cheese, dried parsley, garlic powder, seasoned salt and black pepper; set aside.
- In a large bowl whisk together melted butter with 2 tablespoons oil, fresh lemon juice and fresh garlic.
- Add in shrimp and toss to coat with the melted butter mixture; allow to sit out at room temperature for about 20 minutes.
- Lighty grease a jelly-roll pan.
- Remove the shrimp from the butter mixture allowing any excess to drip off the shrimp, then lightly coat both sides in the breadcrumb mixture.
- Place the coated shrimp onto the pan but not touching each other.
- Set oven to 425 degrees (set oven to second-lowest rack).
- Bake for about 10 minutes or until the shrimp are cooked through (baking times will vary for size of shrimp).
- Serve with lemon wedges.
JUMBO SHRIMP PARMESAN
Steps:
- Preheat oven to 475. Peel and devein shrimp, leaving tails intact. Mix together olive oil, garlic and salt and pepper in a bowl. Add shrimp and toss lightly to coat. Refrigerate 30 minutes to an hour. In shallow bowl, combine bread crumbs and parmesan cheese. Place each shrimp in bread crumb mixture and turn them to lightly coat both sides.
- Arrange shrimp so that they aren't touching each other in an ungreased 9 x 13 pan. Drizzle with melted butter.
- Place pan on the center rack of oven and bake for 10 minutes or until done. Serve immediately with lemon wedges. Can be made ahead up to and including the breading stage and refrigerated. Then drizzle with butter and bake.

LEMON SPAGHETTI WITH JUMBO SHRIMP

- For the shrimp: In a medium skillet, heat the olive oil over medium-high heat. Sprinkle the shrimp with the salt and pepper, then add to the pan in a single layer and cook until pink and cooked through, about 3 minutes per side. Set aside.
- For the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain the pasta, reserving the pasta water.
- While the pasta is cooking, whisk together the olive oil, Parmesan, lemon zest and juice in a large bowl. Toss the drained pasta with the lemon sauce, the shrimp and some of the reserved pasta water; add 1/4 cup at a time as needed to moisten. Add the salt, pepper and basil and toss. Garnish with the fried capers.
BUTTERFLY SHRIMP PARMIGIANA

- PREHEAT oven to 450 degrees F.
- ARRANGE the shrimp in a single layer in a large oven-safe serving dish. Bake for 10 minutes or until shrimp are thoroughly cooked.
- BOIL 1 1/2 quarts of water for pasta.
- POUR 1/2 jar of sauce into baking dish. Sprinkle 1/4 cup of each type of cheese over sauce. Layer shrimp on top of cheese. Sprinkle 1/4 cup of each type of cheese over shrimp. Bake for 10 more minutes or until cheese is melted.
- ADD angel hair pasta to boiling water and cook according to package directions until noodles are al dente. Drain noodles when done and return to pot. Pour 1/2 jar of sauce and 1/2 cup of each type of cheese into pot and toss with pasta. Return pot to low heat, stirring occasionally for 2 to 3 minutes or until pasta and sauce are hot.
- SCOOP noodles with sauce onto serving dishes. Top pasta with shrimp and additional sauce.

This is an easy and light main dish recipe with just a few ingredient and takes just minutes to serve. This must have come from a low fat library cookbook. Serve with rice or pasta. I would like just a fresh green salad.
