This is the best pork chop marinade I've ever tasted. I starting throwing things together in a bowl and I'm so glad I wrote it down...try this! Flavor is best when pork is grilled.

2 large pork chops
¼ cup extra-virgin olive oil
3 tablespoons dark brown sugar
2 tablespoons lemon juice
2 tablespoons spicy brown mustard
4 cloves garlic, chopped
2 teaspoons dried thyme
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 teaspoon white wine vinegar
1 teaspoon mesquite-flavored seasoning
½ teaspoon dried parsley flakes
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book.
  • Whisk olive oil, brown sugar, lemon juice, mustard, garlic, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl and pour into a large resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

2 pounds boneless pork chops
¼ cup balsamic vinegar
¼ cup low-sodium soy sauce
¼ cup olive oil
1 tablespoon worcestershire sauce
1 tablespoon dijon mustard
1 tablespoon honey
1 teaspoon Italian seasoning
¼ teaspoon black pepper

Steps:

  • In a small bowl, whisk together balsamic vinegar, low-sodium soy sauce, olive oil, Worcestershire sauce, dijon mustard, honey, Italian seasoning and black pepper.
  • Place the pork chops in a large zipper bag and pour the marinade over the pork chops.
  • Marinate for at least 1 hour, or up to 8 hours.
  • Remove the bag of marinating pork chops from the refrigerator. Let them come up to room temperature for 30 minutes before cooking the pork chops.
  • Preheat a grill over medium-high heat.
  • Use tongs to remove the pork chops from the marinade and place them on the grill.
  • Grill the pork chops for 5 minutes per side, per inch of thickness. For example, the two inch thick pork chops that you see pictured in this post were grilled for 10 minutes per side.
  • Remove the pork chops from the grill when the internal temperature reaches 140°F on an instant-read thermometer. The internal temperature will rise at least 5 degrees as the pork chops rest.
  • Rest the pork chops for 5-10 minutes before serving.

A wonderful cooler weather meal, pork chops and applesauce go so good together! Marinating the pork chops in milk make them very juicy and tender. To save time prepare the applesauce ahead of time and serve it at room temperature. Plan ahead the chops have to marinate in milk and salt for 1-4 hours.

2 -3 cups milk
2 teaspoons salt
8 pork chops (about 1/2-inch thick, with or without bone)
4 cups fresh breadcrumbs
1 -2 tablespoon minced fresh garlic or 1 teaspoon garlic powder
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme (rubbed between fingers to release flavors)
1 teaspoon seasoning salt (can use table salt)
black pepper
1/4 cup oil
1/4 cup butter (more as needed) or 1/4 cup margarine (more as needed)
3 lbs apples (McIntosh or Gala apples are good fore this)
1/4 cup water
1/4 cup sugar (or to taste)
1 tablespoon cider vinegar
1/4 teaspoon allspice
1 pinch cinnamon (optional)

Steps:

  • In a dish mix together milk and 2 teaspoons salt (make sure that the salt is dissolved).
  • Add in pork chops.
  • Cover and refrigerate for 1 hour or up to 4 hours (turning once within the hour).
  • To make the applesauce: (this can be done a day ahead) peel, core and chop the apples.
  • Place into a saucepan and add in the remaining ingredients; bring to a simmer, stirring occasionally.
  • Reduce heat to medium-low and simmer covered, stirring occasionally until apples are very soft and falling apart (this should take about 15-20 minutes, adjusting the sugar to taste).
  • Mash the apples with a fork; set aside.
  • For the pork chops: in a bowl mix together bread crumbs, garlic, rosemary, thyme and 1 teaspoon seasoning salt or white salt and pepper.
  • Lift the pork chops from the milk one at a time (shake off any excess milk).
  • Dredge in the pork chops, lightly, patting down with hands to adhere the crumbs to the chops.
  • Arrange onto a plate or tray.
  • Heat oil and butter in a skillet.
  • Sauté the pork chops (without crowding in the pan) until golden brown, adding more butter to the pan if needed.
  • Serve the pork chops with applesauce.
  • Delicious!

This recipe came from my sister-in-law Denise who is an awesome cook, mother and wife! Originally we were using it only for pork but last night I had boneless, skinless chicken breasts thawed and thought, "why not?" The brown sugar flavor really came through with the chicken. I'm guessing it would also be great with venison. I often double the marinade for plenty to boil and pour over the grilled meat.

2 tablespoons brown sugar
1 teaspoon ground ginger
1 teaspoon ground pepper
2 tablespoons vegetable oil

1/2 cup soy sauce (I use low sodium )

Steps:

  • Mix all ingredients together. Marinade 4 Pork Chops or 3-4 Boneless, skinless chicken breasts for 1-2 hours, then grill.
  • Boil any leftover marinade for at least 5 minutes and pour over grilled meat.
