- Preheat oven to 425 degrees F and line a baking sheet with parchment paper or a silicone mat.
- Rice the cauliflower by coring the head and then cutting it into florets. Then place it in the bowl of a food processor and pulse until it is the texture of rice. (If your cauliflower seems excessively moist, squeeze the riced cauliflower in a paper towel to help remove moisture.)
- In a large bowl, mix the riced cauliflower, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, egg, garlic, basil, parsley, salt, and pepper until combined and holds together.
- Place the cauliflower mixture onto your prepared baking sheet. Spread it out into a rectangle that's about 9-inches x 7-inches and 1/4-inch thick.
- Bake for 10-12 minutes. Remove from oven and top with 3/4 cup shredded mozzarella cheese and return to oven to continue baking until the cheese is melted and starting to brown.
- Cool about 10 minutes and cut into 'breadsticks'. Garnish with fresh herbs and more Parmesan cheese. Serve with your favorite red sauce and enjoy!

- Place the riced cauliflower in a microwave safe bowl. Microwave on high for 10 minutes (or steam on the stove), until softened. Set aside to cool.
- Meanwhile, preheat oven to 425 degrees F (218 degrees C). Line a baking sheet with parchment paper.
- While the cauliflower is cooling, pulse the hemp seeds in a food processor, until smooth.
- Add the eggs, garlic, sea salt and black pepper. Process again until smooth.
- When the cauliflower is cool enough to handle, transfer it to a tea towel and squeeze tightly several times to drain as much water as possible. You should get close to a cup of moisture out.
- Add the drained riced cauliflower to the food processor. Process until smooth.
- Transfer the "dough" onto the lined baking sheet. Spread into a rectangle, about 1/3 inch thick. (Mine turned out to be 12x8 in (31x20 cm), but the size will vary depending on the size of your cauliflower head - the thickness is the important part.)
- Bake for 13-18 minutes, until the top is firm and starting to get golden.
- Brush the top with melted butter. Sprinkle shredded mozzarella on top, then bake for 5-10 more minutes, until the cheese is melted. If desired, you can place under the broiler to brown the cheese.
- Cool slightly, then cut lengthwise in half, and then cross-wise into 1-inch wide strips, to form 24 breadstick shaped rectangles total.

Steps:
- Chop the cauliflower into chunks and place into microwave for about 8 minutes or until soft. It is easier to work with if you then let it cool a bit.
- Preheat oven to 450.
- Place the cauliflower and garlic into a food processor and blend, drizzle in olive oil and continue blending until cauliflower is the texture of mashed potatoes.
- In a large bowl, stir together cauliflower, eggs, 1/2 cup cheese, onion powder, salt and pepper.
- Spray a baking pan, 11.5" x 7", with oil and pat mixture into pan. It should be abour 1/2 inch thick.
- Bake at 450 degrees for 25 minutes or until the top starts to brown.
- Add remaining cheese to the top and melt.
- Cool slightly, then cut and serve.

- Preheat oven to 425 F degrees. Prepare 2 pizza dishes or a large baking sheet with parchment paper.
- Make sure your cauliflower is roughly chopped in florets. Add the florets to your food processor and pulse until cauliflower resembles rice.
- Place the cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. Let the cauliflower cool just until there's no more steam coming from it. Place the microwaved cauliflower in a large bowl and add the eggs, 2 cups of mozzarella, oregano, garlic, salt and pepper. Mix everything together.
- Separate the mixture in two and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks.

- Preheat oven to 375 degrees F. Rinse cauliflower, remove outer leaves and separate into florets with a paring knife. Place cauliflower florets in a food processor and process until "rice" texture. Some coarse chunks are fine.
- Place in an ovenproof baking dish (I used Pyrex pie dish) and bake for 20 mins. Remove cooked cauliflower from the oven and transfer to a bowl lined with a tea/linen towel. Let the cauliflower cool down a bit until it is safe to touch, about 15 minutes.
- Fold the towel holding by the ends and squeeze the liquid out of the cauliflower "ball" as hard as you can. Be patient and do this a few times until barely any liquid comes out. I squeezed out 1 cup of liquid.
- Increase oven T to 450 degrees F. Transfer cauliflower to a mixing bowl along with egg whites, 1/2 cup cheese, herb seasoning, black pepper, pinch of salt and mix to combine.
