These amazing cookies are addictive! I created this recipe using a combination of two different recipes when I was craving something chocolaty, fudgey and flour free. You will never believe that they are gluten free!

2 1/4 cups confectioners' sugar
1/4 teaspoon salt
1 cup cocoa powder
3 large egg whites
2 teaspoons gluten-free vanilla extract
1 cup peanut butter
2 tablespoons softened butter
1/2 cup powdered sugar
3/4 cup light brown sugar
1 teaspoon gluten-free vanilla extract

Steps:

  • Cookies: Preheat the oven to 350°F Lightly grease two baking sheets.
  • Stir all of the ingredients together until smooth. Scrape the bottom and sides of the bowl, and stir again till smooth. It will be a soft, batter-like dough.
  • Drop batter onto the prepared baking sheets using a teaspoon, then lightly flatten using the back of a spoon sprayed with cooking spray. Bake the cookies for 6-8 minutes. They should spread, become somewhat shiny, and develop faintly crackly tops.
  • Remove the cookies from the oven, and allow them to cool right on the pan.
  • Filling: Mix the butter and peanut butter until smooth.
  • Add the sugars and vanilla. Beat until smooth.
  • Form balls with aproximetly one tablespoon batter each.
  • Flatten each ball, then place between two cookies to form a sandwich.

Claire Robinson's cookies only use a few ingredients but the last one, sea salt, is key as it gives them their addictive salty finish. Since the cookies are flourless, they're very tender, so let them cool awhile on the pan before moving them.

1 cup natural peanut butter
1 cup sugar
1 teaspoon pure vanilla extract
1 large egg, lightly beaten
Coarse sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.
  • In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  • Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

1 cup butter flavor shortening
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
3 eggs
3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup creamy peanut butter
3 cups confectioners' sugar
1 teaspoon vanilla extract
5 -6 tablespoons milk

Steps:

  • In a mixing bowl, cream the shortening, peanut butter and sugars. Add vanilla. Add eggs, one at a time, beating well after each addition.
  • Combine flour, baking soda and salt; add to creamed mixture.
  • Shape into 1-inch balls and place 2 inches apart on ungreased baking sheets. Flatten to 3/8 inch thickenss with a fork.
  • Bake at 375 for 7-8 minutes or until golden. Cool on wire racks.
  • In a mixing bowl, beat filling ingreadients until smooth.
  • Spread on half of the cookies and top each with another cookie.

These pb sandwich cookies are very yummy and so easy to make. For a softer cookie, bake on a "lighter" colored pan as opposed to a dark baking pan. This recipe comes from a December Family Circle magazine from a few years back.

1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter, room temp
1 cup granulated sugar
1 large egg
3/4 cup peanut butter
1/4 cup confectioners' sugar
1 cup semi-sweet chocolate chips
4 teaspoons vegetable oil

Steps:

  • Pre-heat oven to 350.
  • In large bowl, beat butter, peanut butter, sugar and egg until smooth.
  • In a medium bowl, stir together flour, baking soda and salt; add to peanut butter mixture and beat on low.
  • Take one rounded teaspoon of dough and roll into a 1-inch ball. Place 2 inches apart on an ungreased baking sheet.
  • Bake for 10 minutes until puffed (do not over bake). Let stand 2 minutes on cookie sheet and then transfer to cookie rack to cool.
  • Filling: For the filling, mix together the peanut butter and confectioners' sugar. Spread 1/2 of the cookies with 1 rounded teaspoon filling on flat side of cookies. Top with remaining cookies to form a sandwich cookie.
  • Refrigerate for 30 minutes, or until firm.
  • In a microwave safe bowl, microwave chocolate chips and oil for 1 minute at 100% power; stir until melted.
  • Dip cookied half-way into chocolate; let excess drain off.
  • Place cookies on waxed papered sheets and dizzle with remaining chocolate.
  • Refrigerate to set.
  • ENJOY!

6 ounces all-purpose flour
2 ounces cake flour
1/2 teaspoon baking soda
1/4 teaspoon salt
6 ounces unsalted butter, completely softened at room temperature
3/4 cup smooth peanut butter
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/2 cups confectioners' sugar
3 ounces unsalted butter, softened at room temperature
3/4 cup smooth peanut butter
3 tablespoons heavy cream
1/4 cup coarsely chopped roasted unsalted peanuts
1/4 cup coarsely chopped semisweet chocolate or 1/4 cup miniature semisweet chocolate chips

Steps:

  • To make the cookies: Heat the oven to 350°F
  • Line two baking sheets with parchment. In a medium bowl, sift together the two flours, baking soda and salt.
  • In the bowl of an electric mixer, cream the butter, peanut butter and sugars with the paddle attachment until light and fluffy. Add the vanilla and egg; continue creaming until smooth and fluffy, about 3 minutes with an electric mixer (longer by hand). Stir in the flour mixture by hand just until it's incorporated; don't over mix or the cookies will be tough. Drop heaping tablespoonfuls of batter, spaced about 2-inches apart, onto the lined baking sheets. With floured fingers, flatten each dab of batter into a 2-inch round.
  • Bake until the cookies are puffed and golden, 12- 14 minutes, rotating the baking sheets if needed for even baking. Transfer the cookies to a rack to cool.
  • While the cookies cool, make the filling: In a small bowl, cream the confectioners' sugar, butter and peanut butter until smooth. Add the heavy cream; continue creaming until smooth and fluffy. Stir in the chopped peanuts and chocolate.
  • To assemble: Transfer the cooled cookies to a work surface, flipping half of them over. With an offset spatula or a butter knife, spread a scant teaspoon of filling onto each turned-over cookie. Set another wafer on top of each filled cookie, pressing gently to spread the filling. Store sealed at room temperature or in the refrigerator.
