Nonstick cooking spray, for the pie plate
15 shortbread cookies
1/2 cup toasted pecans
1/2 cup sweetened flaked coconut
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/4 teaspoon kosher salt
1 1/2 cups finely diced or grated fresh pineapple
1/2 cup granulated sugar
2 tablespoons cornstarch
Juice of 1 lime
One 8-ounce package cream cheese, at room temperature
3/4 cup sweetened coconut cream
2 teaspoons lime zest
1 teaspoon rum extract
2 large eggs
2 cups heavy cream
1/4 cup confectioners' sugar
1/2 cup sweetened flaked coconut

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 9-inch pie plate with nonstick cooking spray.
  • In the bowl of a food processor, grind the cookies and pecans into a fine crumb. Add the coconut, butter and salt and pulse a few more times to combine. Dump the mixture into the prepared pie plate and press the mixture evenly up the sides and along the bottom. Bake until lightly browned, 10 to 12 minutes. Transfer to a wire rack until slightly cooled. Leave the oven on.
  • For the fresh pineapple layer: Add the pineapple and granulated sugar to a saucepan. In a small bowl, stir together the cornstarch and lime juice, then add the mixture to the saucepan with the pineapple. Bring to a boil over medium-high heat, whisking until combined. Continue cooking and whisking until the mixture starts to thicken, about a minute. Transfer to a bowl and allow to cool slightly.
  • For the creamy coconut layer: In the bowl of a stand mixer or in a large bowl with an electric mixer, beat the cream cheese until very smooth. Add the coconut cream, zest and rum extract and beat until combined and smooth. Beat in the eggs one at a time.
  • Spread the pineapple mixture into the cooled crust. Pour the cream cheese mixture on top of the pineapple mixture. Bake until the filling is set, 40 to 50 minutes. Tent the edges of the crust with aluminum foil if the crust gets too dark. Remove to a wire rack and let cool to room temperature, then cover and refrigerate for at least 4 hours and up to overnight.
  • For the topping: When ready to serve, whip together the heavy cream and confectioners' sugar in a large bowl to soft peaks. Spread the topping onto the chilled pie. Decorate the top of the pie with the coconut.

PINA COLADA KEY LIME PIE

8 ounces graham crumbs
3 tablespoons melted butter
2 tablespoons honey
1/4 cup brown sugar
16 ounces heavy whipping cream, very cold
2 tablespoons confectioners' sugar
2 teaspoons pure vanilla extract
1 (14-ounce) can sweetened condensed milk
1/4 cup fresh diced pineapple (about the size of a pea), juice drained
1/4 cup shredded coconut, toasted
4 ounces Key lime juice (not Persian lime or lemon)
1/4 cup coconut chips, toasted, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Combine the graham crumbs, butter, honey, and brown sugar in a bowl. Do not over mix as it will make the crust tough.
  • Evenly spread the mixture on the bottom and up the sides of an ungreased 9-inch pie tin or glass pie dish. Bake for 8 to 10 minutes. Remove from the oven, place on a cooling rack, and let rest.
  • For the filling: Combine the cold whipping cream, confectioners' sugar, and vanilla and whip, using a hand mixer or stand mixer, until peaks form.
  • Combine the sweetened condensed milk, diced pineapple, shredded coconut, and 4 ounces of the whipped cream mixture in a 6-quart mixing bowl and whisk well. (Place the balance of the whipped cream mixture in the fridge to keep it stiff.) Once well incorporated, slowly add the Key lime juice in intervals, do not add all at once. The juice will have a chemical reaction with the cream, causing it to thicken. Do not over mix as it will break down the mixture, causing it to become runny. The mixture will begin to thicken (you want it thick).
  • Once the crust has cooled, spoon the pie filling into the center of the crust and spread evenly towards the edges with a pastry knife or the spoon. Place into the fridge for 2 hours to completely set up.
  • Fill a pastry bag 1/2 way and squeeze dollops of the remaining whipped cream around the border of the cooled pie. Sprinkle coconut chips on top of the whipped cream border. Make a pot of coffee, cut the pie into your desired portion size, and sit down and enjoy!

1 can (10 ounces) frozen nonalcoholic pina colada mix, thawed
3/4 cup sweetened condensed milk
1/2 cup sweetened shredded coconut
1/2 cup macadamia nuts, chopped
1 can (8 ounces) crushed pineapple, well drained
2 graham cracker crusts (9 inches)
Maraschino cherries, optional

Steps:

  • In a large bowl, combine first three ingredients until smooth. Fold in pineapple, coconut and nuts. Divide and pour mixture into prepared crusts. Refrigerate, covered, until firm, at least 4 hours. If desired, serve with additional whipped topping and cherries.

1/4 cup unsweetened coconut, shredded
2 tablespoons panko breadcrumbs
1 1/2 tablespoons macadamia nuts, chopped finely
1 teaspoon sea salt, divided
2 teaspoons black pepper, freshly cracked
1/4 cup light coconut milk
1 tablespoon soy sauce
2 (6 ounce) mahi mahi fillets or 2 (6 ounce) other firm white fish
1 tablespoon olive oil
1 1/4 cups pineapple, chopped
1/2 cup red onion, minced
1/4 cup scallion, minced
2 tablespoons cilantro, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 tablespoons lime juice
2 tablespoons unsweetened coconut, shredded

Steps:

  • Preheat oven to 400 degrees.
  • Combine all the salsa ingredients in a large bowl. Set aside.
  • Combine shredded coconut with the panko, macadamia nuts and 3/4 tsp sea salt in a shallow bowl. Combine the coconut milk and soy sauce in another shallow dish. Sprinkle fish on both sides with the remaining 1/4 tsp salt and black pepper. Dip one side of the fish into the milk mixture and then dredge the dipped side into the panko/coconut mixture.
  • Heat oil in a large nonstick skillet over medium-high heat. Add fish, crust side down, to pan and cook 3 minutes.
  • Transfer fish, crust side up, to an 8×8-inch baking or casserole pan. Bake for 10 minutes or until fish flakes easily.
  • Serve with the salsa.

1/2 teaspoon baking powder
1/4 teaspoon salt

1/2 cup powdered sugar
2 -3 teaspoons reserved pineapple juice

Steps:

  • Heat oven to 350*. Grease bottom and sides of 8x8 or 9x9 inch square pan with shortening.
  • Drain pineapple well, reserving 3 teaspoons juice for Pineapple Glaze.
  • Mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press in pan. Bake 10 minutes.
  • Beat eggs in medium bowl with wire whisk until blended. Stir in pineapple and remaining ingredients except Pineapple Glaze. Spread over partially baked crust.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 1 hour.
  • Make Pineapple Glaze by mixing the powdered sugar and reserved pineapple juice until smooth and thin enough to drizzle. Drizzle glaze over bars.

1 cup sugar
1 cup packed brown sugar
1/2 teaspoon vanilla extract
2 large eggs, room temperature
1 cup chopped pecans
4 cups all-purpose flour

2 teaspoons baking powder
1 can (8 ounces) crushed pineapple, undrained
1/2 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Beat in pineapple. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in pecans and coconut. , Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until edges are lightly browned, 10-12 minutes. Remove from pans to wire racks to cool.
