1 head butter lettuce
1 tablespoon mayonnaise
1 tablespoon sour cream or 1 tablespoon plain yogurt
1 teaspoon white wine vinegar
1/2 teaspoon lemon zest
salt & freshly ground black pepper
4 slices bread
2 tablespoons unsalted butter
2 tablespoons olive oil
2 medium garlic cloves, crushed
fresh chives, chopped (for garnish)
parmesan cheese, grated (for garnish)

Steps:

  • Cut the lettuce into quarters, making sure the leaves stay attached at the bottom and form a wedge; wash lettuce well and spin dry.
  • Return lettuce to refrigerator to chill, at least 20 minutes.
  • Whisk together mayonnaise, sour cream or yogurt, white wine vinegar, and lemon zest; season with salt and pepper, cover, and refrigerate until ready to serve.
  • Cut the crusts off the bread.
  • Heat a large skillet over medium heat, add butter, oil, garlic, and cook about 1 minute; add bread slices and cook 1 to 2 minutes on each side until golden brown.
  • Blot toast on paper towels and cover to keep warm.
  • Place lettuce wedges in a bowl and toss with dressing.
  • To serve, place a warm garlic toast on a serving plate, top with a lettuce wedge; garnish with chopped chives and Parmesan cheese.

2 tablespoons extra-virgin olive oil, plus more for grill
1/3 cup buttermilk
3 tablespoons mayonnaise
2 teaspoons white-wine vinegar
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped fresh chives
4 slices crusty bread
1 garlic clove, peeled
2 heads butter lettuce, such as Bibb or Boston, halved
Extra-virgin olive oil
Coarse salt and ground pepper

Steps:

  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. In a small bowl, whisk together buttermilk, mayonnaise, and vinegar. Stir in basil and chives; season with salt and pepper. (To store, refrigerate in an airtight container, up to 3 days.)
  • Brush both sides of bread with oil and grill, flipping once, until toasted, 3 minutes. Rub with garlic, season with salt, and cut into cubes.
  • Grill lettuce, cut side down, until charred in spots, about 3 minutes. Serve warm, topped with dressing and croutons.

2 heads butter lettuce, gently torn
1 1/2 cups walnuts, glazed (homemade or store bought)
1 apple, quartered, cored and slided thinly (Fuji or Honeycrisp)
1 cup pomegranate seeds
1/4 cup tarragon leaf, fresh (choose another fresh herb if not available)
1/2 cup blue cheese, crumbled
kosher salt
pepper (do I have to say fresh ground?)
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon shallot, finely chopped (red or other onion can be subbed)
1 1/2 tablespoons Dijon mustard
1/3 cup canola oil (if you prefer another, use it)
kosher salt
black pepper

Steps:

  • Vinaigrette: Whisk first 4 ingredients in a medium bowl. Gradually whisk in the oil. Season with salt and pepper.
  • Salad: Place lettuce in a large bowl.

1/2 pound Bibb lettuce (about 4 heads) or Boston lettuce (about 1 head)
1 garlic clove
1/2 stick (1/4 cup) unsalted butter
4 teaspoons fresh lemon juice

Steps:

  • Separate lettuce leaves and put in a large bowl. Halve garlic and in a small heavy skillet heat with butter over moderate heat, stirring occasionally, until garlic is golden and butter has a slight nutty aroma, about 3 minutes. Remove skillet from heat and discard garlic. Add lemon juice and salt and pepper to taste, swirling skillet to incorporate (butter will foam).
  • Pour warm dressing over lettuce and toss to coat. Serve salad immediately.

1 large fennel bulb, halved, cored, and very thinly sliced
3 heads butter lettuce or 3 heads boston lettuce, torn into pieces
1/4 cup fresh tarragon leaves, torn into pieces
4 scallions, white and green parts, chopped
3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
7 tablespoons extra virgin olive oil
pecorino romano cheese, shaved (optional)

Steps:

  • In a large bowl add the fennel, lettuce, tarragon and scallion. Set aside.
  • Add lemon juice, mustard, salt, and pepper to a small bowl and whisk together.
  • While whisking constantly, slowly add the oil. When well combined pour the vinaigrette over the salad and toss to coat. Top with the Pecorino if desired and serve immediately.

Chicken, Potato and Butter Lettuce With Light Ricotta Dressing image

This recipe is based on a Martha Stewart recipe, but with a few adaptations. The dressing actually called for 3 tbs lemon juice , not lime juice and 5 garlic cloves, but I'm not a big garlic fan. I also use part skim requeson, which is very similar to ricotta. When I can't find cherry tomatoes, I just add wedges of Roma tomatoes.

1 garlic clove
1 bay leaf
4 boneless skinless chicken breasts
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt
6 tablespoons part-skim ricotta cheese
2 tablespoons olive oil
1/2 cup loosely packed dill leaves, coarsely chopped
ground pepper
3/4 lb new potato
1 head butter lettuce, leaves torn in half
1/2 pint cherry tomatoes, halved

Steps:

  • Fill a large pot with enough water to cover chicken. Add garlic and bay leaf and bring to a boil. Place chicken in pot and gently simmer until cooke through, 15-20 minutes. Remove chicken and garlic and cool. Reserve cooking liquid.
  • Meanwhile, place potatoes in a pot and cover with cold water. Cook 20 minutes or until tender. Drain and cut potatoes in half. Set aside.
  • To make dressing: Place garlic in food processor container. Pulse a few times. Add 2 tbs cooking liquid and lime juice, salt and ricotta. Pulse to combine. With machine running, add the olive oil a little at a time until mixture is emulsified. Stir in dill and season with pepper.
  • Slice chicken breasts in strips. Divide chicken, lettuce leaves, potatoes, and tomatoes among serving plates.Drizzle with dressing and serve immediately with remaining dressing on the side.
