1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
¼ cup butter, melted
12 ounces mild Cheddar cheese, shredded
½ cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
  • Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

1 pound bulk sausage
1/2 cup chopped onion
1/4 cup chopped green pepper
1 can cream of chicken soup, undiluted
1/2 cup water
1/2 cup French fried onions, crumbled

Steps:

  • 1 Preheat oven to 350u00b0F. Spray a 2-quart baking dish with nonstick cooking spray and set aside.
  • 2 Cook noodles according to package directions; drain well and set aside.
  • 3 Crumble sausage into a large skillet, and add chopped onion and green peppers. Cook over medium heat until meat is browned and vegetables are tender. Drain off any excess fat.
  • 4 In a large bowl, combine meat and vegetables with soup, water, and cooked noodles.

Really you can add in anything you want to this, but I prefer sausage meat, frozen peas are also good to add in. Make certain to put a cookie sheet under the baking dish in case of spills, the casserole dish will be very full, or you can bake it in a larger casserole dish. This is delicious even made without the sausage meat added in, but for a main meal I suggest to add in the cooked sausage. You will love this!

6 -7 Italian sausages, casings removed
4 cups uncooked macaroni noodles
1/2 cup butter or 1/2 cup margarine
black pepper
1/2 teaspoon garlic powder (or to taste)
1/2 cup flour
2 cups milk
2 cups whipping cream
1/3 cup grated parmesan cheese
1 (600 g) package cheddar cheese, grated (use old or extra old, reserve 1 cup for the top of the casserole, I use a 600 gram package Black Dia)
1 cup Cheese Whiz, cheese spread
1 cup grated parmesan cheese

Steps:

  • Remove the sausage meat from the casings and brown in a skillet; set aside.
  • Cook the pasta in boiling salted water (do not cook completely, cook only until VERY firm-tender, as the pasta will cook further in the oven) drain, but DO NOT rinse.
  • Place the drained macaroni back in the pot and add in the cooked sausage meat, mix to combine with a wooden spoon; set aside while preparing the cheese sauce.
  • In a heavy bottom saucepan, melt the butter or margarine.
  • Add in flour, black pepper and garlic powder; whisk for 5 minutes or until thick.
  • Slowly add in the milk and whipping cream; whisk continuously for about 6-8 minutes until bubbly and thickened.
  • Turn off the heat and add in grated cheddar cheese, Cheese Whiz and Parmeasn cheese; stir with a wooden spoon until all the cheeses have melted and the mixture is smooth (this should take about 3 minutes).
  • Pour the cheese sauce over the pasta/sausage meat mixture; stir well with a wooden spoon.
  • At this point season with salt if desired.
  • Transfer the mixture into a buttered 13 x 9-inch baking dish or a larger casserole dish.
  • Sprinkle with 1 cup grated cheddar cheese, then sprinkle with 1 cup Parmesan cheese.
  • Set oven to 350 degree.
  • If you are baking it in a 13x9-inch baking dish it will be very full, so place the casserole onto a cookie sheet to catch any spills.
  • Bake uncovered for about 30-35 minutes, or until hot and bubbly.
  • Let sit for 15 minutes or longer before serving.
  • Delicious!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, combine the sausage, onion, celery and green bell pepper and saute for 5 minutes. Drain any excess fat.
  • Stir the dry rice in with the sausage and vegetables, then add the water and the soup mix. Transfer this mixture to a lightly greased 2 quart casserole dish and top with the almonds.

Steps:

  • Preheat oven at 350°.

3 tbsp rapeseed oil
1 large onion , finely sliced
1 celery stick , finely sliced
1 tbsp tomato purée
400g can chopped tomatoes
1 tbsp dark brown soft sugar
2 tsp Dijon mustard
2 thyme sprigs
2 carrots , cut into thick slices
pack of good-quality sausages
chopped parsley , to serve (optional)
4 large eggs (about 100ml when cracked into a jug)
140g plain flour
200ml whole milk
rapeseed oil , for the tin

Steps:

  • Heat 2 tbsp oil in a large flameproof casserole. Fry the onion for 8-10 mins over a low heat so it starts to soften and caramelise. Add the celery and cook for a further 5-10 mins until softened. Add the tomato purée and cook for 2 mins, then add the tomatoes, sugar, mustard, thyme, carrots and 400ml water, and bring to the boil. Cook, uncovered, over a low heat for 15 mins. Meanwhile, fry the sausages in the remaining oil until they are browned all over, add them to the pan, cover with a lid and cook for 10 mins.
  • To make the batter, crack the eggs into a bowl or jug, then add the flour and whisk together until smooth. Gradually add the milk and carry on whisking until the mixture is lump-free. Season. Pour the batter into a jug, cover and chill for at least 30 mins and up to 24 hrs.
  • While the casserole is cooking, or when you're ready to serve your Sunday lunch, heat oven to 230C/210C fan/gas 8. Drizzle a little rapeseed oil into a 30cm frying pan with an ovenproof handle and put it in the oven for 5 mins. Pour the batter into the pan, put it back in the oven and cook for 25 mins. Check the Yorkshire pudding. It should have a good dark brown colour at the edges and feel firm and dry. If it's ready, take it out and keep warm. To serve, spoon the sausage casserole into the Yorkshire, and scatter over the parsley, if you like.

  • Cook pasta according to package directions. 1 onion, chopped
500 g sausages (I like the country style beef sausages)
410 g diced tomatoes, canned with juice
2 teaspoons paprika
2 tablespoons barbecue sauce
1/4 cup water
2 tablespoons flour (if needed, to thicken)

Steps:

  • Heat oil in a frypan and cook the onion. Add the onion to a saucepan or oven proof casserole dish.
  • Brown sausages in frypan. Slice the sausages and add to onion.
  • Add the can of tomatoes, paprika, barbeque sauce and water.
  • Simmer over medium heat until sausages are cooked through - about 5 - 10 minutes. If sauce does not thicken by itself, add the flour.
  • Alternatively after step 3 place into casserole dish and bake in oven until hot.
  • Serve with mashed potatoes, pasta or crusty bread.

1 pound smoked beef sausage, cut into bite-size pieces

2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste

salt and ground black pepper to taste
