So simple, 3ingredients, I created these for my DD's slumber party breakfast. A real kid pleaser, and easy to eat in their hands.

Steps:
- Lay the 3 pancakes on a large microwaveable plate.
- Sprinkle with choc. chips and marshmallows.
- Top with second pancake.
- Heat on med high heat about 45 secs. or until chips and marshmallows are soft.
- You may add more or less chips and marshmallows to your liking.
- Serve with a big glass of cold milk.

- Preheat the griddle. Pulse the graham cracker crumbs into a food processor until they become fine crumbs. In a large mixing bowl combine crumbs, flour, baking powder, cocoa powder, and brown sugar. Whisk together until combined.
- In a separate bowl combine eggs, milk, melted butter, and vanilla. Combine with dry ingredients until mixed well.
- Place a 1/4 cup of the batter onto the griddle. Flip when bubbles start to form at the top. Repeat. Makes about 10 pancakes.

Steps:
- Whisk milk and hot chocolate together in a large bowl until smooth. Add baking mix, eggs, sugar, cocoa, and vanilla extract; whisk until combined.
- Grease a large skillet with cooking spray and set over medium-high heat. Pour in 1/4 cup batter for each pancake. Cook until bubbles form on the top, 2 to 3 minutes. Flip with a spatula and continue cooking until golden brown on the edges, 2 to 3 minutes more. Transfer pancakes to a plate. Repeat with remaining batter.
- Drizzle chocolate syrup over pancakes. Top with whipped cream, marshmallows, and graham cracker crumbs.

S'MORES PANCAKES
Steps:
- Make the pancakes: Mix the flour, baking powder, salt and sugar in a large bowl, then add the milk, egg and butter, stirring to combine and breaking up any large lumps.
- Lightly grease a frying pan, then put it over medium-high heat, giving it a minute or so to warm up. Pour about 1/4-cup pancake batter onto the pan, spreading it out evenly. When a lip forms around the edge of the pancake and little bubbles appear in the batter, flip. Cook both sides until lightly golden.
- Make the s'mores stack: Combine the chocolate chips and butter in a microwave-safe bowl and heat in the microwave in 20-second intervals, stirring in between, until the chocolate has fully melted and formed a sauce.
- Spread chocolate sauce on top of the first pancake, sprinkle with graham cracker bits, then top with another pancake. Spread Marshmallow Fluff on that, sprinkle with graham cracker crumbs, then top with another pancake. Repeat until you've reached the top. Top the entire stack with more crumbled graham crackers, mini marshmallows and drizzle with syrup just before serving.

- In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon. In a second bowl whisk together the buttermilk, milk, eggs, melted butter and vanilla. Add the wet ingredients to the dry ingredients and whisk just until you have a smooth, lump-free batter.
- Melt 1 teaspoon butter in a large non-stick frying pan over medium-high heat. Using a 1-cup ladle, pour the batter into the hot pan. Sprinkle some chocolate chips over the batter. When the pancake is slightly browned on the bottom and you see small bubbles beginning to form on top, flip it with a large spatula. Cook the pancake until the second side is browned. Repeat with the remaining batter. Stack the finished pancakes on a plate and keep covered with a paper towel to retain heat until all the pancakes have been made.
- Set the oven to broil and line a baking sheet with parchment paper. On the baking sheet, stack the pancakes 3 high with a layer of chocolate-hazelnut spread between each pancake. Top each stack with marshmallow cream, graham cracker crumbs and mini marshmallows. Broil until the marshmallows are charred, about 2 minutes. (You can also use a kitchen blowtorch to toast the marshmallows.) Sprinkle with sea salt.
