1 cup wild rice, uncooked
2 1/2 cups vegetable broth (chicken broth ok)
1/4 teaspoon salt
1 cup sliced mushrooms
1 small onion, chopped
1/4 cup chopped celery
1/4 cup chopped green pepper
2 cloves garlic, minced
1/4 cup butter, melted
1/2 cup slivered almonds, toasted
1/2 cup shredded cheddar cheese
1/4 teaspoon black pepper (or to taste)

Steps:

  • Place rice in a strainer or sieve and rinse with cold water for about 1 minute, scouring rice with fingers; drain.
  • Place rice in a saucepan with the broth and salt; bring to a boil, reduce heat, cover, and cook for 40-45 minutes or until tender and most of liquid is absorbed.
  • If when tender, any liquid remains, drain it.
  • Cook the mushrooms, onion, celery, green pepper, and garlic in butter in a skillet until the onions are tender, about 5 minutes.
  • Mix together the rice, vegetables, and cheese, and spread in a greased 2-quart casserole.
  • Cover the pan and bake at 325F for 35-45 minutes or until the casserole is heated through nicely.
  • Garnish with toasted almonds before serving.

Steps:

  • Heat oven to 350°F. Grease 13x9-inch (3-quart) baking dish. Pour uncooked rice over bottom of greased dish. Sprinkle evenly with seasoning mix packet. Arrange chicken pieces over rice. Spoon celery and mushrooms around chicken.
  • In medium saucepan, combine water and soup; mix well. Bring to a boil. Pour evenly over chicken and vegetables. Sprinkle chicken with paprika. Cover with foil.
  • Bake at 350°F. for 1 hour. Uncover; bake an additional 20 to 30 minutes or until chicken is fork-tender and juices run clear. Let stand 5 minutes before serving.

6 tablespoons unsalted butter, plus more for casserole dish
5 cups water
1 sprig fresh thyme
1 bay leaf 2 tablespoons salt
2 boneless, skinless chicken breasts
1 1/3 cups wild rice
6 tablespoons dark brown sugar
1 cup cranberries, fresh or frozen
2 tablespoons chopped fresh rosemary leaves
1/4 cup bread crumbs
Salt
5 ounces button mushrooms, quartered, (about 2 cups)
1 small onion, chopped
2 1/2 cups heavy cream
1/2 teaspoon ground cinnamon
2 cups shredded Gruyere cheese
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9 by 13-inch casserole dish.
  • In a large saucepan, combine the water, thyme, bay leaf, and salt and bring to a boil over medium heat. Add the chicken and simmer until cooked through, about 15 minutes, depending on thickness of the chicken. Remove the chicken to a cutting board. When cool enough to handle, dice into 1/2-inch cubes and reserve.
  • Return the water to a boil, add the wild rice, and cover. Cook over medium heat until the rice grains split, 40 to 45 minutes. Drain the excess water, transfer the rice to a bowl and set aside.
  • In a small pot, over medium heat, add 2 tablespoons of butter. When the butter is melted add the brown sugar, cranberries, rosemary, bread crumbs, and a pinch of salt. Stir until the sugar is dissolved and the mixture is uniform. Transfer to a bowl and set aside. In a large straight-sided saute pan over medium-high heat, melt 2 tablespoons butter. Add the mushrooms, onions, and a pinch of salt. Saute until the mushrooms are browned, about 5 minutes. Add the heavy cream and the cinnamon, bring to a boil, then reduce the heat and simmer about 2 minutes to thicken slightly. Add the Gruyere and mix to incorporate. Add the rice and chicken to the pot and stir to combine. Season the mixture with salt and pepper, to taste, then transfer it to the prepared casserole dish. Spread the cranberry mixture evenly over the top of the casserole and bake until golden and bubbling, about 15 to 20 minutes. Remove from the oven and serve hot.

1/2 cup diced onion
About 2 cups of butternut squash, cubed
1 cup wild rice (measured when uncooked)
1 lb boneless skinless chicken thighs
1 cup shredded parmesan cheese
1/4 tsp thyme
1/2 tsp sage
Salt and pepper to taste
Olive Oil

Steps:

  • Preheat oven to 350 degrees. Spray an 8x8 baking dish with nonstick cooking spray and set aside.
  • Cook rice according to package directions and set aside.
  • While the rice is cooking, cut the chicken into bite-size pieces. Toss with the thyme, sage, salt and pepper. Heat a tablespoon or two of olive oil in a nonstick skillet over medium heat. Add chicken and cook until done (about 5-7 minutes). Remove from pan and set aside on a paper-towel lined plate.
  • Add the diced onion and butternut squash to the pan with another tablespoon of olive oil. Add a pinch of salt + pepper. Cook about 6-8 minutes, until squash is a little tender - but not fully cooked.
  • Add the chicken, wild rice, and 1/2 cup of parmesan to the squash/onion mixture and stir to combine. Add the entire mixture to prepared dish.
  • Bake for 20 minutes. Add the remaining parmesan cheese to the top of casserole and bake about 5 more minutes, or until cheese is melted.
  • Note: You can easily double this recipe! I made a smaller batch because I'm only feeding Grant + myself, but it doubles well. You can also adjust the cheese amount up or down depending on how much you like cheese!

1/2 cup natural wild rice
Fine sea salt
1 bay leaf
6 tablespoons salted butter, plus more for the baking dish
2 leeks, white and light green parts, diced
3 stalks celery, diced
Freshly ground black pepper
3 tablespoons all-purpose flour
1 1/2 cups whole milk
2/3 cup heavy cream
3/4 cup low-sodium chicken stock
3/4 teaspoon dried thyme (or 1 1/2 teaspoons fresh)
1/4 teaspoon grated nutmeg
2 cups roughly chopped cooked chicken
4 ounces aged Gouda or aged cheddar cheese, grated (about 1 1/2 cups)
2 cups coarsely ground buttery crackers (such as Ritz or Club; about 2 sleeves)
2 tablespoons extra-virgin olive oil

Steps:

  • Put the rice in a fine-mesh sieve and rinse it under cold running water, swishing the rice with your hand until the water runs clear. Transfer the rice to a medium bowl and add water to cover. Pour off any black bits or floating kernels, pour the rice back into the sieve to drain, then put it in a small saucepan. Add 1 1/4 cups water, a pinch of salt and the bay leaf; bring to a simmer. Cover the pan and reduce the heat to low. Cook 25 minutes, or until the rice is tender and the water has evaporated. (If liquid remains after the rice is done, drain it in a sieve.)
  • Meanwhile, preheat the oven to 375 degrees F. Heat the butter in a large high-sided skillet over medium heat. Add the leeks and celery and season with 1/4 teaspoon each salt and pepper. Cook until tender, about 10 minutes.
  • Add the flour to the vegetables and stir until well combined. Pour in the milk and bring to a simmer, whisking to prevent any lumps. Add the cream, chicken stock, thyme, nutmeg and 1/2 teaspoon each salt and pepper. Simmer over low heat until the floury taste dissipates, about 5 minutes.
  • Add the cooked chicken, wild rice (minus the bay leaf) and half of the cheese and heat until the cheese melts.
  • Put the crushed crackers in a heavy plastic bag and add 1/4 teaspoon pepper and the olive oil. Shake to combine and set aside.
  • Rub a 9-by-13-inch baking dish with a thin layer of soft butter. Pour the chicken mixture into the dish and top with the remaining cheese. Bake 25 minutes.
  • Pull the dish from the oven, sprinkle the cracker mixture over the top and bake until the crackers turn golden brown and the mixture bubbles in the center, 15 to 20 more minutes. Serve immediately.

1 red bell pepper, chopped

1 small onion, finely diced
8 ounces sliced fresh mushrooms
½ cup peeled and diced carrot
½ cup chopped celery

⅓ cup all-purpose flour
1 ½ teaspoons salt
¼ teaspoon black pepper
1 (14.5 oz) can chicken broth
1 cup whole milk
4 cups cooked wild rice (prepared with the seasoning packet according to package instructions)
3-4 cups cooked, shredded or diced chicken (I use the meat from a rotisserie chicken)
2 tablespoons chopped fresh parsley ((or 2 teaspoons dried parsley flakes))
1 teaspoon fresh thyme leaves ((or ¼ teaspoon dried thyme))
1 cup Ritz cracker crumbs ((about 20 whole crackers before crushing))

Steps:

  • Preheat oven to 350° F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Melt ⅓ cup butter in a Dutch oven over medium heat. Add the onion and saute until soft, about 4-5 minutes. Add mushrooms, carrot and celery. Cook until vegetables soften, about 5-6 minutes. Add garlic; cook for 1 more minute, stirring constantly. Add the flour, salt and pepper; cook, stirring constantly, for 1 more minute.

My mother made a great chicken and rice casserole using the classic canned cream of mushroom soup. In my take on her recipe, I replace the canned soup with fresh ingredients. The result is a little more nutritious and just as delicious as the one I ate as a kid.

1 tablespoon plus 1 teaspoon olive oil
1 small onion, diced
1 cup sliced cremini or white mushrooms
Kosher salt
1 pound boneless, skinless chicken breasts (about 2), cut into 1/2-inch pieces
1/2 teaspoon garlic powder
3 cups cooked wild rice (see Cook's Note)
1/2 cup sour cream
1 cup shredded cheddar cheese, plus more for sprinkling on top

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the 1 tablespoon olive oil in a large skillet over medium heat and add the onions. Cook, stirring occasionally, for 2 minutes.
  • Add the mushrooms and 1/2 teaspoon salt to the skillet and cook, stirring occasionally, until the mushrooms are tender and the onions are translucent, about 4 minutes. Transfer to a large bowl.
  • Heat the remaining 1 teaspoon oil in the skillet and add the chicken, garlic powder and 1/2 teaspoon salt. Cook, stirring occasionally, until the chicken is cooked through, about 3 minutes. Transfer to the medium bowl. Add the wild rice, sour cream and 1 cup shredded cheese and stir to combine.
  • Transfer the mixture to an 8-by-8-inch baking dish and sprinkle with additional shredded cheese.
  • Bake until bubbly, 20 to 25 minutes. Remove from the oven and serve.

5 cups chicken broth
4 tablespoons unsalted butter
2 large shallots, finely diced
10 ounces cremini mushrooms, bottoms of stems trimmed, and quartered
1 clove garlic, minced
1/2 cup dry sherry
One 8-ounce bag uncooked cultivated wild rice, washed and drained
6 large sprigs fresh thyme, tied into a bundle, plus more for garnish if desired
1 bay leaf
2 teaspoons ground coriander
2 teaspoons kosher salt, plus more to taste
2 teaspoons freshly ground black pepper, plus more to taste
4 small to medium (6 1/2 to 7 1/2 ounces each) boneless, skinless chicken breasts
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
1 small lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the broth in a medium saucepan until simmering.
  • Melt the butter in an oven-safe braiser (or large cast-iron skillet with a lid or 4-quart saute pan with a lid) over medium-high heat. Add the shallots and mushrooms, tossing to coat in the butter, and cook, stirring once or twice, until golden, about 5 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes. Add the sherry, allowing the pan to deglaze. Add the rice and allow it to toast and soak in the flavors of the pan. Add about 4 cups of the hot broth to the pan. Add the thyme and bay leaf. Cover the braiser and place it in the oven to bake until the rice is almost cooked, 1 hour to 1 hour and 15 minutes.
  • Meanwhile, in a small bowl, mix together the coriander, salt and pepper. Brush the chicken with the olive oil, then dust all over with the seasoning. Set aside.
  • Fluff the rice with a fork and check on doneness. It should still have some chew with some grains just starting to pop open. Stir in the cranberries. Add the remaining hot broth to keep the dish brothy. Add the chicken breasts to the braiser, laying them at an angle so that most of the chicken is submerged in the rice. Shingle the lemon slices in between the chicken breasts. Cover and bake for 20 to 25 minutes. Uncover and continue to cook until the chicken registers an internal temperature of 165 degrees F, about another 10 minutes. Top with the parsley or thyme before serving.

2 (8-oz.) cans chopped water chestnuts, drained

½ teaspoon table salt

4 cups (16 oz.) shredded Cheddar cheese, divided
2 cups soft, fresh breadcrumbs

Steps:

  • Preheat oven to 350°F. Bake almonds in a single layer in a shallow pan 4 to 6 minutes or until toasted and fragrant, stirring halfway through.
  • Prepare rice mixes according to package directions.
  • Meanwhile, melt butter in a large skillet over medium heat; add celery and onions. Sauté 10 minutes or until tender. Stir in chicken, next 6 ingredients, rice, and 3 cups cheese. Spoon mixture into a lightly greased 15- x 10-inch baking dish or 2 (11- x 7-inch) baking dishes. Top with breadcrumbs.

  • Leftover idea ** Make chicken soup with leftover chicken. Save chicken stock from above recipe. Add 1/3 cup onion, 1 can corn, 1 1/2 cups noodles. Simmer 10 minutes. Add leftover chicken 1-2 cups, heat thoroughly. Season with parsley, salt and pepper.

2 (3 pound) fryer chickens
water to cover
1 cup dry sherry
1 onion, sliced
½ cup sliced celery
1 ½ teaspoons salt
½ teaspoon curry powder
½ cup butter
1 pound fresh mushrooms
2 (16 ounce) packages long grain and wild rice mix
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream

Steps:

  • Place chicken in a deep pot and cover with water; add sherry, onion, celery, salt, and curry powder. Bring liquid to a boil, cover pot, reduce heat to medium-low, and simmer until chicken is no longer pink near the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Strain broth from chicken mixture into a bowl and transfer chicken to a work surface to cool until easily handled. Pull meat from the bones and cut into bite-size pieces. Discard bones, onion, and celery.
  • Heat butter in a skillet over medium-high heat; saute mushrooms until golden brown, about 10 minutes.
  • Bring reserved chicken broth and wild rice to a boil in a large saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, about 45 minutes. Drain excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine chicken, rice, and about 1/2 of the mushrooms in a 4-quart casserole dish. Mix mushroom soup and sour cream together in a bowl and stir into chicken-rice mixture. Arrange remaining mushrooms in a circle on top of the casserole.
  • Bake in the preheated oven until bubbling, about 1 hour.

  • Cook rice as directed using chicken stock as water.
  • Pull chicken from the bone and chop.

Wild Rice, Chicken of the Woods, and Chicken Casserole (Easy Home Version) image

A simple casserole made with chicken of the woods mushrooms, real wild rice, and chicken.

½ cup breadcrumbs or panko (lightly toasted)
3 tablespoons sunflower seeds (lightly toasted)
Small handful of chopped parsley or similar (optional)
2 cups of leftover chicken
8 ounces young, tender chicken of the woods mushrooms (cut into 1 inch pieces, as you would chicken meat)
2 cups chicken stock or equivalent (like mushroom stock)
¾ cup Chopped onion (1 medium-small onion) ((green garlic makes a good substitute, and is what I actually used here) )
2 large cloves Fresh garlic, finely chopped or pressed, etc
4 ounces lard or unsalted butter + more for drizzling over the top and sweating the mushrooms
1/3 cup all purpose flour or equivalent (for the roux)
1 cup heavy cream (sour cream, or half and half)
1 tablespoon chopped fresh thyme or similar
4 cups cooked wild rice
Kosher salt and fresh ground black pepper (to taste)

Steps:

  • Mix the panko and sunflower seeds with the parsley if using and reserve.
  • Mix the stock and cream. Cook pieces of chicken of the woods in some fat, adding the onions or other alliums after the mushrooms have wilted and the edges of the pan are starting to color.
  • Season with salt and pepper and cook for a few minutes until the onions are translucent, then add the 4 oz of butter, melt, sprinkle over the flour and stir to make a roux. stir in the stock and cream in batches, stirring well after each one to prevent lumps and cook until thickened.
  • In a large mixing bowl (or the cooking pan) mix the wild rice, cooked chicken, thyme, stock and mushroom-allium mixture, taste and double check the seasoning, adjusting and tasting a few times to make sure the seasoning is dead-on, then put into a baking dish, like a 9x11 casserole size, or a 10 inch cast iron skillet.
  • Top with the crumb-seed mixture, criss cross with melted lard or dot with butter and bake for 20-25 minutes at 450F, or until the crust is well browned and the mixture is hot.

½ lb cremini mushrooms

Steps:

  • Combine diced onion and celery with all but last 3 ingredients in slow cooker. Mix well.

  • Stir in frozen peas and cranberries and cook on low another 15-30 minutes.

16 ounces fresh mushrooms, sliced, or two 4 1/2-ounce cans sliced mushrooms, drained (reserve the liquid)
1 small onion, chopped
1/2 cup all-purpose flour
3 cups chicken broth
3 cups half-and-half
4 cooked boneless, skinless chicken breast halves, diced
1 cup toasted slivered almonds, coarsely chopped
1/2 cup sliced pimientos
1/4 cup chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the long-grain and wild rice mixes according to the package directions. Set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch casserole dish.
  • In a large skillet, melt the butter. Add the mushrooms and onions and saute until the onions are translucent. Stir in the flour, cooking for 2 to 3 minutes. Slowly stir the broth (and reserved canned mushroom liquid if using) into the onion mixture, then stir in the half-and-half. Cook until the mixture has thickened, 7 to 10 minutes.
  • Add the chicken, rice, toasted almonds, pimientos, parsley, salt and pepper into the wet mixture. Pour everything into the prepared casserole dish and bake, uncovered, until most of the liquid has been absorbed, 30 to 45 minutes.

Steps:

  • Layer in 9 x 13" baking dish with Bacon.
  • Sprinkle rice over bacon.
  • Sprinkle seasoning package over rice.
  • layer chicken.
  • Mix together and pour over top, Cream of Mushroom, Cream of Chicken, Milk.
  • Bake@ 350 degrees for 1 1/2 to 2 hours.
