AGUA FRESCA DE MELON (CANTALOUPE)
Refreshing and cooling Agua De Melón! This light fruit drink is very popular throughout Mexico and specially during the hot summer months.

Steps:
- Peel the cantaloupe and remove the seeds using a spoon.
- Cut into large chunks.
- Optional, reserve a few slices of melon and cut into small cubes to garnish your drinks with.
- In a blender, blend half of the cantaloupe with 2 cups of the water, the lime juice (if using any) and half the sugar at high speed until smooth.
- Transfer the juice into a jar and repeat process with the other half of the cantaloupe.
- Refrigerate for 1 hour or longer. Fill a glass with ice, pour in the agua fresca, garnish with a chunk of cantaloupe, or a mint sprig, and serve.

- Blend together the watermelon or cantaloupe with 1 1/2 cups of the water, the lime juice and the sugar at high speed until smooth. Strain through a medium strainer into a large pitcher or bowl. Stir in the remaining water. Refrigerate for 1 hour or longer. Fill a glass with ice, pour in the agua fresca, garnish with a mint sprig, and serve.

- Peel, seed, and coarsely chop melon.
- Place 2 cups melon in a blender, add enough water to cover melon, and blend well. Strain, reserving liquid.
- Place liquid in a 2-qt pitcher and discard solids.
- Repeat procedure with remaining cantaloupe.
- Add lime juice and sugar to pitcher and stir well. Serve over ice.

- Add the following to a blender: bite size cantaloupe, sweetened condensed milk, evaporated milk and water. Blend on high speed for about 45 seconds to one minute. Since there is a large volume of liquid that is blended with the cantaloupe, you may need to split the ingredients in half and blend in two batches.
- Use a fine mesh strainer to strain the cantaloupe pulp that did not full blend. Discard the excess pulp that cannot be strained. Once you make this recipe as often as I do, you will notice that the ripest cantaloupes will leave very little excess pulp after straining.
- Once you are ready to serve the drink, add plenty of ice and garnish with mint, blueberries or cantaloupe. Store the remaining agua fresca in the refrigerator. Mix the beverage with a large spoon before serving again. I hope that you enjoy this Agua de Melon as much as I do. Although it is simple, it is a classic Mexican agua fresca.
