- Heat oil in deep 10- to 12-inch skillet over medium heat.
- Cook chicken, bacon, 1/4 cup of the onion and the garlic in oil 2 minutes, stirring occasionally.
- Add pasta and chicken broth; heat to boiling. Cover and cook 10 to 15 minutes, stirring occasionally, until pasta is tender.
- Stir in 1/4 cup of the barbecue sauce and the cheese. Continue cooking 1 minute to melt cheese.
- Serve topped with remaining 1/4 cup onion, 1/4 cup barbecue sauce drizzled over top, and cilantro.

- In a large saucepan over medium heat add 2 TBS olive oil.
- Add the onion and saute for a few minutes until transparent, stirring occasionally.
- Add the red pepper and saute for a minute or two, stirring 1 or 2 times.
- Add the minced garlic and saute until lightly golden.
- Add the chicken pieces and brown. Turning to brown on each side but don't cook the chicken thoroughly (that will happen while cooking the penne).

- Set Instant Pot to Saute Less for 7 minutes.
- Add a dab of margarine or butter to the pot.
- Add the lean ground beef to pot.
- Crumble the ground beef well as it cooks.
- Once the Instant Pot turns off add the chicken broth and water to the pot.
- Add the egg noodles to the pot and gently spread them out until they are submerged in the liquid.
- Pour the cream of mushroom soup on top, followed by the salt, pepper, garlic powder and onion powder.

- Add cold water and chicken broth.
- Turn the heat to high and set the timer for 10 minutes.
- After most of the water has been absorbed (about nine minutes) add cream of chicken soup, cream of celery soup, shredded chicken, corn and peas, milk, cream cheese, garlic salt, and onion powder.
- Turn heat down, cook and stir for a few minutes until everything is combined and heated through.

- Season chicken with ½ teaspoon salt and ½ teaspoon pepper. Heat 2 tablespoons oil over medium-high heat in a large Dutch oven/soup pot. Once hot, add the chicken and sear until golden, about 2 minutes per side. Remove chicken to a plate but leave the drippings.
- Melt 2 tablespoons butter with 1 tablespoon olive oil over medium heat in the drippings. Once melted, increase heat to medium-high and add onions, carrots and celery; sauté for 4 minutes scaping up the golden bits on the bottom of the pot.
- Add garlic and sauté for 30 seconds. Sprinkle in the flour then cook, stirring constantly for 2 minutes (it will be thick); don't let flour stick to the bottom of the pot or it will burn later. You can add additional oil if needed.
- Add chicken back to the pot along with chicken broth, bouillon, all seasonings, ½ teaspoon salt, and bay leaves. Cover the soup and bring to a simmer over high heat, then reduce and simmer, covered, for 12-15 minutes or until chicken is tender enough to shred, stirring occasionally so the bottom doesn't burn and replacing the lid.
- Remove tender chicken to a cutting board and shred when cool enough to handle. Meanwhile, whisk cornstarch with half and half until smooth in a small bowl or liquid measuring cup then stir into the pot. Add the noodles and bring to a boil; simmer until noodles are al dente, approximately 5 minutes (don't overcook noodles!).
- Reduce heat to low and stir in Parmesan until smooth followed by shredded chicken. Taste and season with additional salt and pepper if desired. Stir in additional broth or half and half if desired for a less "chunky" soup.
