EASY TURKEY TACO SOUP
Easy soup to make using ingredients that I always have on hand. My husband loves this stuff. He likes to put a big spoonful of leftover mashed potatoes in the bowl and cover it with the soup. I like it served with corn chips and grated cheese. For a spicier soup, add a few diced jalapenos.

- Heat a large pot over medium-high heat and stir in the ground turkey and onion. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add the mixed vegetables, tomatoes with green chiles, ranch beans, chicken broth, taco seasoning, and ranch dressing mix. Bring to a boil, then reduce heat and simmer on low for 20 minutes.

- Place all broth ingredients in a large stockpot; cover and bring to a boil. Reduce heat; simmer 25 minutes. Strain broth; discard bones and vegetables. Cool; skim fat. Cover and simmer until vegetables are tender, 15-20 minutes. Add turkey; heat through.

- Combine ground turkey, onion, celery, and garlic in a large saucepan over medium heat. Saute until turkey is cooked through and browned, 5 to 7 minutes. Drain fat from the saucepan.
- Add chicken broth, fire-roasted tomatoes, tomato paste, Worcestershire sauce, thyme, oregano, bay leaf, salt, and pepper. Reduce heat to medium-low, cover, and cook for about 10 minutes.
- Stir in frozen vegetables and rice and simmer until vegetables are tender, about 10 minutes. Remove bay leaf and serve.

- Heat nonstick skillet over medium high-heat.
- Crumble and cook turkey until no longer pink, about 5 minutes; drain.
- Meanwhile, in a large stock pot, mix remaining ingredients and heat well.
- Add cooked turkey, reduce heat and simmer at least 30 minutes (Note: Flavors intensify the longer the simmering time).
- Spoon into individual serving bowls and top with cheese.

I came up with this recipe by simply wanting a yummy, healthy soup with what I had in my fridge... added a little of this and that... and now I make it all the time!

Steps:
- Chop up all vegetables.
- Saute ground turkey in the pot sprayed with Pam.
- Spice turkey with season salt, pepper, cumin, garlic, and a little chili powder. Begin to brown.
- Add vegetables and saute for 2 - 3 minutes.
- Add can of green chiles and saute another 2 - 3 minutes.
- Add 4 cups of chicken stock and 4 cups of water, and bouillon, and bring to a boil.
- Once boiling, add rice.
- Add a little more seasonings if desired.
- Bring back to a boil, and then simmer for approximately 20 minutes or until the rice is tender.
- Remove from heat and enjoy!

- Heat the oil in a large pan, add the onion and fry for 5 minutes or so, stirring every now and then until it starts to soften.
- To make the soup, add the red pepper, ground coriander, chilli and rice and stir round the pan for about a minute. Pour in the hot stock, stir in the turkey and chickpeas and season well. Bring to the boil, cover and simmer for 8-10 minutes, until the vegetables and rice are tender. Stir in the coriander or parsley and it's ready. (The soup may now be cooled and frozen for up to 1 month.)
