  • In a large bowl, beat cream cheese until smooth; stir in the olives and onions. Spread over ham slices. Roll up, jelly-roll style, starting with a short side. Chill for at least 1 hour. Just before serving, cut into 1-in. pieces.

After that I couldn't stand it I made a complete pig of myself. They are great! I've make them so much for parties what use to take 2 hours prep time takes 30 minutes.

1/2 lb square shaped deli ham (I use the smoked flavored or honey flavored)
1 (8 ounce) package cream cheese, softened (to make it faster I use the already softened cream cheese that comes in small tubs)
3 green onions, chopped very fine

Steps:

  • Mix cream cheese with onion.
  • Spread on ham slices.
  • Roll up jelly-roll style.
  • Insert tooth picks every inch.
  • Slice every inch.
  • Arrange on a round serving platter in a circle all the way to the center.

2 bunches scallions

Steps:

  • Spread cream cheese over ham slices.
  • Lay 1 scallion on top lengthwise.
  • Roll scallion up in ham slice.
  • Trim off excess scallion.
  • Slice roll-ups into 1/2 to 3/4 inch bits.
  • Serve cut sides up.
  • Suggestion-- These go good packed together in the center of a meat or cheese tray.
  • In the middle of a veggie tray, or devilled eggs.

Two 8-ounce packages cream cheese, softened
4 ounces jarred salsa (hot)
4 green onions, finely sliced
4 large flour tortillas
10 slices bacon, cut into small pieces and cooked till crisp
16 thin slices deli ham

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

There will be no leftovers when you make them, they have a funny way of disappearing fast. This is one of my favorite recipes to make.

  • Wrap one pickle with cheese covered meat slice.

140g plain flour
2 eggs
25g butter , melted plus extra for buttering
350ml semi-skimmed milk
sunflower or vegetable oil , for frying
12 thin slices of ham (125g pack), torn
260g bag spinach , cooked - see tip, below
140g grated cheddar
100ml half-fat crème fraîche
3 spring onions , sliced (optional)
handful dried breadcrumbs

Steps:

  • KIDS the writing in bold is for you ADULTS the rest is for you. FOR THE PANCAKES Tip in the flour, make a well, crack the eggs in dishes - whisk together. Tip the flour into a mixing bowl and make a well in the middle. Crack the eggs into separate dishes, remove any shell, and add to the flour. Tip in the butter, add a little milk and whisk until smooth.
  • Whisk in the rest of the milk. Whisk in the rest of the milk, in a steady stream, until you have a smooth batter that is similar to the consistency of double cream. Now carefully pour the batter into a jug.
  • Wipe the pan with oil and pour in the batter. Using kitchen paper, wipe the pan with a little oil. Place the pan on the stove and heat until hot. Remove from the heat and pour in enough batter to cover the base, swirling it around. Return to the heat for 3 mins until the underside is cooked.
  • Now flip the pancake. Take the pan off the heat and, using a spatula, loosen the pancake. Flip the pancake in the air (or simply turn it over with the spatula) and cook the other side. When cooked, put the pancake to one side, then repeat the procedure to cook 7 more pancakes.
  • FOR THE ROLL-UPS Butter a baking dish, then scatter ham and cheese over pancakes. Heat oven to 200C/180C fan/gas 6. Butter a large baking dish. Now lay a pancake in front of you and scatter over some ham, spinach and cheese (remembering to save 25g of the cheese).
  • Roll up the pancakes and put them into the dish. Carefully roll up the pancakes and put them into the buttered dish. Repeat with all the pancakes.
  • Make the topping. In a small bowl, mix together the crème fraîche with the remaining cheese and spring onions, if you like.
  • Spread the topping, then sprinkle over the breadcrumbs. Spread the topping over the pancakes, sprinkle with breadcrumbs and bake for about 30 mins until bubbling and golden. Serve with a salad or veg.
