This recipe has been in my husbands family for many years. His mom shared the recipe with me before she passed, and it has been one of my favorites ever since. Our entire family loves this recipe. This recipe is also in my cookbook. Has been a proven winner when ever we have company and I make & serve this. Hope you like it...

Number Of Ingredients 8

4-6 large cucumbers, peeled & sliced thinly
2 bunch green onions, chopped (i use the food processor)
2 lb sour cream (4 cups)
1/4-1/2 tsp granulated garlic powder
1/2 c sugar or splenda
1 tsp dill ( more if desired)
1 Tbsp dried chive, or use 2-3 tablespoons fresh
dash of black or white pepper if desired

Steps:

  • 1. Blend sour cream, garlic powder, sugar or splenda, dill, chive, black pepper & chopped green onions together until well mixed. Then add cucumber slices, and stir to mix. Refrigerate at least 2 hours before serving. Garnish with chopped chive or green onion tops.

Cucumber, partially peeled, cut into thick rounds and seeds removed
Carrots, peeled, cut lengthwise (I used baby carrots)
Top the Tater, or Sour Cream and Chives, or Ranch Dressing

Steps:

  • Prepare cucumber by peeling whole, or peel stripes.
  • Cut into thick rounds, remove seeds (I used an apple corer but a spoon works fine)
  • Cut carrots into small pieces
  • Spoon filling into hole in cuke, add carrot garnish

1 -2 tablespoon finely chopped fresh chives
salt & pepper, to taste

Steps:

  • Peel cucumbers and slice them paper thin (or as thinly as possible), and drain if watery.
  • In a medium bowl, mix together the sour cream and chives. Add cucumber slices and stir gently to coat.
  • Season to taste with salt (go easy on the salt) and pepper.
  • Serve immediately, or cover and chill for up to one day.

4 cucumbers
1 clove garlic
1 teaspoon sugar
1/4 teaspoon salt
1/4 cup of good vinegar (not red)
3/4 cup of real sour cream

Steps:

  • Peel cucumbers and slice very, very thin.
  • Put in mixing bowl.
  • Peel and chop clove of garlic, add to cucumber slices.
  • Add Salt, and sugar to cucumber slices.
  • Mix in sour cream and vinegar and toss well, I use my hands, till cucumbers slices and sour cream are all frothy and foamy.
  • Place in serving dish and sprinkle a little paprika on top for decoration, and serve well chilled.

This recipe is from Kraft Foods originally. It is nice way to use extra cucumbers. For adults this appetizer is one to have with a bunch of other stuff as a filler and needs to be seasoned with salt and pepper. If you have kids it is a great way to get kids to eat their veggies when you make sailboats. Make sure to seed the "boats" and omit salt and pepper. Use a toothpick as the pole of the sail if you'd like and thin pieces of carrot as sails. Fast and easy and can be made ahead. Enjoy! ChefDLH

  • Mix remaining carrots with cream cheese;

These are very good. They have become a staple at our house for Thanksgiving. I got the recipe from another site and made a few changes. They are quite easy and require no kneading. I have not included the overnight refrigeration time in the instructions.

1 cup sour cream (I use low fat)
1 teaspoon salt
1/2 cup white sugar
1/2 cup butter
2 (2 1/2 ounce) packages active dry yeast
2 eggs
4 cups all-purpose flour
1/3 cup finely chopped fresh chives
1/2 cup warm water (110F)
1 egg
2 tablespoons milk

Steps:

  • In a saucepan heat sour cream until very hot.
  • Add salt, sugar, and butter.
  • Stir till butter is melted.
  • Cool until lukewarm.
  • In a large bowl dissolve yeast in warm water.
  • Mix in sour cream mixture, eggs, flour and chives.
  • Cover and refrigerate overnight.
  • Divide dough into 4 parts.
  • Knead and roll each part into circle.
  • Cut into 8 pieces.
  • Roll up from flat end to point. (crescent roll style).
  • Place on greased baking sheet.
  • Brush with egg beaten with 2 tbsp milk.
  • Allow to rise until double in size.
  • Bake at 375F 15 minute.
