1/4 red onion, thinly sliced
1 bunch cilantro, leaves picked
1 cup crumbled Cotija or feta cheese (about 4 ounces)
1/2 cup buttermilk
Juice of 1 lime, plus wedges for serving
2 red jalapeño peppers, halved, seeded and thinly sliced
Kosher salt
12 cups chopped mixed salad greens (such as romaine and watercress)
3 cups shredded rotisserie chicken breast (skin removed)
2 cups chopped peeled jicama
1/2 cup thinly sliced radishes
4 corn tortillas, warmed

Steps:

  • Put the red onion in a small bowl and cover with cold water; set aside at least 15 minutes. Meanwhile, make the dressing: Combine half each of the cilantro and cheese in a food processor or blender; add the buttermilk, lime juice and about one-quarter of the sliced jalapenos and puree. Season with salt.
  • Toss the salad greens with the remaining cilantro and half of the dressing in a large bowl. Drain the red onion and squeeze dry. Serve the salad topped with the onion, chicken, jicama, radishes and the remaining sliced jalapenos, cheese and dressing. Serve with tortillas and lime wedges.

  • Arrange romaine on a serving plate. Top romaine with jicama. Juice 1 lime into a small bowl, add cilantro and cumin. Whisk in extra-virgin olive oil in a slow stream. Pour dressing over salad and season with salt and pepper.

1 lb jicama, peeled and sliced in 1/8 inch lengthwise slices
12 cherry tomatoes
2 ripe avocados, peeled, pitted and sliced (don't do this until just before serving)
12 black olives
1 lime, peeled and finely chopped
5 tablespoons fresh lime juice
1 tablespoon oranges or 1 tablespoon lime marmalade
1 teaspoon lime zest
1/2 teaspoon salt
1 dash hot pepper sauce (peri-peri is good)
5 tablespoons olive oil (virgin or lite)

Steps:

  • Dressing: Mix all the dressing ingredients except oil.
  • Slowly pour in the oil whisking constantly until the ingredients are incorporated Line 6 plates with the lettuce.
  • Arrange the jicama and tomatoes on the lettuce (you can do up to this step 2 hours in advance and refrigerate). Just before serving prepare the avocados.

1 cup quinoa, rinsed and drained
¼ teaspoon salt
1 large jicama, peeled and diced
1 cup sweetened shredded coconut
1 cup diced pineapple
¾ cup golden raisins
¾ cup diced sweet onion
2 limes, zested and juiced
¼ cup chopped fresh cilantro
½ jalapeno pepper, chopped
salt and ground black pepper to taste

Steps:

  • Bring water and quinoa to a boil in a saucepan. Stir 1/4 teaspoon salt into the water and return water to a rolling boil. Reduce heat to low, cover the saucepan, and cook until the moisture is absorbed completely, about 15 minutes. Remove pan from heat and let pan sit covered for 5 minutes more.
