PICO DE GALLO -- A MEXICAN FRUIT SALAD



Pico De Gallo -- a Mexican Fruit Salad image

I spend 7 hours today serving this delicious salad at a fiesta fundraiser at my daughter's school here in California. Pico de Gallo is usually known as a type of salsa, but in this case, it is a popular fruit salad spiced with a red chili powder that is popular in Mexico. Sounds odd, but it's a delicious and addictive combination. You dice the fresh fruits into chunk size pieces and mix them together in any combination you like. Today, we combined watermelon, mango, pineapple, cucumber and jicama. I will list popular fruits and veggies that can go in it and you can customize your mix.

1/2 cantaloupe
1 apple
1 cucumber
1 jicama
1/2 honeydew
2 oranges
2 mangoes
1/2 pineapple, diced
4 cups watermelon
6 lemons
pico de gallo powdered seasoning, to taste (a brand found in Latin foods section)

Steps:

  • Wash all fruit and/or vegetables (the ones you prefer), peel and dice into chunk size pieces.
  • Place in a large bowl and mix with clean hands to distribute evenly.
  • Cut the lemons into wedges and place in a serving dish.
  • To serve, place 2 cups of the fruit mixture into an individual serving bowl, squeeze some lemon juice on top and then sprinkle with the "Pico de Gallo" seasoning.
  • Enjoy!

  • Whisk the juice of 2 limes, 2 tablespoons each olive oil and finely chopped cilantro and shallot, 1 teaspoon each hot sauce and honey, and 1/4 teaspoon each ground cumin and kosher salt in a large bowl. Toss with 1 bunch chopped watercress, 2 cups cubed pineapple, 1 small jicama (peeled and cut into matchsticks) and 1 thinly sliced red jalapeno; season with salt.

1 pound peeled jicama
1 rinsed cucumber (12 oz.)
1 pound peeled and cored fresh pineappple
1 lime
1/2 teaspoon cayenne
1/2 teaspoon paprika or ground ancho chile

Steps:

  • Cut jicama, cucumber, and pineapple into sticks or slices about 2 inches long and 1/2 inch thick. Arrange on a platter. Squeeze lime over vegetables and fruit.
  • In a small bowl, mix cayenne, paprika (or ground dried ancho chile), and salt. Sprinkle half the mixture over vegetables and fruit. Offer lime wedges and remaining chile salt to add to taste.

This jicama fruit salad is also known as "pico de gallo" in Mexico. Not to be confused with the other pico de gallo, which is a savory salsa. This salad is very refreshing and very forgiving. Any fruits can be added but the original vegetable in this salad is always jicama.

1 orange, sectioned and diced

  • Combine jicama, mangos, orange, and cucumber in a bowl. Add lime juice and sprinkle with chili-lime seasoning. Toss to coat.

This is a really great cucumber salad that's light and flavorful and makes a great starter! Tastes fine as it is, but can be salted and peppered to taste, if desired. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.

½ lemon, juiced

1 small red and/or yellow bell pepper, cut into thin strips

1 cup fresh lime juice
2 sprigs cilantro, chopped
1 teaspoon sea salt
